haha I cannot imagine that there can be so many uses for the word “chocolate.”
BTW Thanks for this amazing site! I’m currently enjoying…obsessing about all your recipes. Although I’ve never been much of a cook, your site is making me cook so many healthy things! Plus, I love the raw recipes and am more open to vegan foods now! 🙂 So hopefully I will be healthier as I have really bad culinary skills (i’m impatient- currently working on it) and acid relux 🙁
Please don’t ever stop blogging!

Aww thanks, Kit! And LOL I am so impatient too! That’s one of the main reasons my recipes usually don’t have a ton of ingredients or take a ton of prep work… I don’t like to cook. I just like to eat! 😉

I love your blog!!! I have shared it with a number of friends who are lactos intolerant or have issues with gluten. I just love to eat. My only question is…do I have to eat “other stuff” or can I subsist on “Chocolate Covered” Yumminess alone? Keep up the good work!

Katie…..I have a challenge for you……to create a recipe for a creamy fruitsicle! I have been working on it for months and cannot seem to get that same creaminess as the store bought type. My fave is So Delicious dairy free Creamy Orange. It’s made with coconut milk….and it is so creamy and tasty. I just can’t figure out how to replicate that same consistency. Any fruit flavor would be delightful…..like mango, pineapple, raspberry…..yum!
Chocolate-Covered Katie says
Hmmm… I can try! Maybe with coconut milk (the canned, full-fat type) blended with fruit?
Or, there’s a recipe in “How it all vegan” that uses soft tofu.

First of all I love your blog…and yes I think you are a cutie pie just like everyone else.
Your banana-split chocolate butter reminded me of when I was a child and my mother would

Hi Katie – just wanted to say thank you from down under. I am a committed cook and love to treat my friends and family to all sorts of yummy foods. My biggest problem is getting my fussy nine year old to eat healthily. I have started to slowly make some of your slices etc using sweeteners such as dates and she loves them!!! I can happily send her to school with a chocolate snack that I know if full of goodness and not full of additives and sugars. My only problem now is not eating them before she gets them in her lunchbox!!! Looking forward to trying your savoury recipes to take for my own lunch at work. Thanks for such a great site.

I would just like to say that you are my new inspiration. I am a culinary/ nutrition student, and the day that I realized that I could make a cheesecake out of tofu, my life turned around and I became intent on learning how to substitute all sorts of unhealthy foods for healthy foods. The other day, I stumbled upon your website, and ever since then I have been using your recipes to experiment and change the way that I cook even more. Thank you for sharing with the world how to cook and bake with beans, tofu, fruit, etc. and helping me realize how easy it is to make healthy, delicious, “unhealthy” food (such as cookies, brownies, milkshakes, everything!) , and being my new inspiration. =]

Just want you to know that even my kids really, really like all of your recipes that I have tried so far. I have tried at least a dozen and they get excited if I mention where I got a new recipe. By the way, while driving around town they saw a billboard for Katie Couric (Katie printed in large) and they called out, “hey it’s chocolate covered katie!” It was kind of funny since they don’t know what you look like, they assumed that it was you. Hi CCK! I am pretty new here, and don’t want to overstep or anything, but I notice there is no latke recipe, and I believe there most deffinately should be.
In case you didn’t know, a latke is just a potato pancake, but they are served on Hannukkah as a very traditional part of it with apple sauce or sour cream on the side. They are verryy common on Hanukkah for Jews (like me), and are super insanely delish. But they are realllyyy unhealthy!, and almost always not vegan! 🙁 So, this is just for a suggestion for the holiday season recipes you are whipping up in your kitchen right now, because I can’t be the only girl who needs some super yummy vegan potato pancakes in her life, and if anyone can make it happen, you are that girl! 🙂 Thanks for posting delish healthyu vegan recipes that make me look like a good cook 😉 You are amazing! 😀

Could you please add the other nondessert to non-dessert recipes? You have lots of nondessert recipes that are still not in there, and are hard to find! I looove your Chinese spaghetti squash but its so hard to find because it’s not in nondessert along with sleepy sweet potatoes! It would really mean a lot if you went through your website and placed the nondessert recipes in this category! Thanks! 🙂

How do you make your macaroni and cheese? I don’t like any of the fake cheeses I’ve tried. My kids like the macaroni I make but I don’t.
Thanks!
P.S. We are addicted to your Deep Dish Cookie Pie. We just call it bean pie for short and my kids request it constantly. I increase the recipe (three cans of beans), spread it into a cake pan and cut them into squares for the kids school lunches. We all agree that they are best when warm, though. (But no school lunch is complete without some sort of cookie!)

Hello, Katie. I am big on counting calories & gave up brownies, among other good stuff, years & years ago. I recently tried to find Internet inspiration for using my diet hot chocolate mix in recipes, & of course all signs pointed me to your site. This is absolutely incredible – a true slice of happiness for a dessert-deprived dieter! Until now, I would just have (literally) a sliver of pecan pie on occasion, & speaking of, I’d love to see what you could do to make THAT healthier. I am a big fan of simple ingredients and easy, easy directions, & this site is the holy grail for that as well. Looking forward to following your posts, Miss Genius Chef!

I’ve only recently found the “chocolatecoveredkatie” website & ordered your new cookbook. I gave up processed food for lent and hope to make it a lifestyle. I’ve already made many of your recipes with great success. I’ve made several without telling my teenage boys that they were “healthy”. They scarfed them all down.
Thank you so much for working so hard to use your gifts & talents to help others ! You are truly making a difference!! Keep up the great work 🙂
