    My mom gave me this website, amazing! I can’t wait to try some of your recipes. My 4 year old daughter just recently got diagnosed with Celiac so I have been on a mission to find GOOD gluten free recipes and I am so happy that you actually have some GOOD gluten free recipes! Yay!! 🙂

    I adore your blog! I just found it a few weeks ago, and literally try a recipe almost everyday! Im obsesssssed! Although I was wondering about your choice for coconut oil, VS canola. The coconut I purchased at Whole Foods contains 63% of your daily sat. fat in one teaspoon. While canola only contains 5 %. I am not looking to loose weight, simply maintain. But I was just curious on your view point, and thoughts on the oil. Thanks!

      Hi Calley,
      Saturated fat from coconut has actually been proven to act differently than saturated fat from animals. There’s a lot of research out there, so just google “coconut saturated fat” to find a plethora of info :).

    Your recipes look delicious, but I am diabetic. A big misconception about diabetics is that it is the amount of CARBS that we count, not so much the sugar. Yes we also use sugar sub. But most of us are only allowed 30 g of carbs per meal and 15g of carbs. Per snack. If I play around with your recipes and come up with how to modify any of them, I will let you know….or ask your audience if they can help. Great concept, though. I love anything in the world that is pumpkin and gingerbread, so I may try to modify the pumpkin bread in a bowl first. Also, we need to team all of our carbs. With protein. String cheese sticks and peanut butter are my best friends when it comes to that. Keep up the good work, your recipes look fantasti. Ps, if you use this as a FAQ, please keep my email anonymous.       I would totally agree with the comment above – I am old-fashioned in some ways, and love cookbooks. I have bought a few vegan cookbooks, but would definitely buy yours!

    Katie–We had a family dinner and I got to make dessert… Due to food allergies it had to be Egg, Dairy, Soy and Gluten Free. I am so glad that I stumbled across your page on Pinterest! Needless to say we had Chocolate Chip Cookie Dough, Mint Brownie Balls and then I experimented a little. That didn’t work out exactly as planned, but… Raspberry Chocolate dip (that was way to stickey) that ended up as the filling for a baked pear! A huge hit and everyone was impressed with non-fruit options for dessert! Thanks for your inspiration!!!!

Thank you for making things that really and truly are healthy for you AND taste AMAZING at the same time…putting to rest that healthy food doesn’t have to taste bad. I LOVE seeing a persons face of amazement when I tell them what is in something of yours I’ve made (after they’ve eaten it of course!) One request, would you try to come up with the Pecan Pie flavored Lara bar? It is my favorite and I’d love to be able to make them myself, I’m just not that daring the try it. Thanks again!!

My son recently went gluten free at 4 yrs old, not to mention dairy, soy, yeast, tomato, etc etc free… Making lunches for him to bring to school has been a research project in itself. I had a 1 minute “bread” recipe from another site that used almond flour and worked well, but now that we’re not allowed to bring nuts to school…

    In steps a recipe for a single serve muffin! I’ve been using it (GF version) for school “bake days” where the kids bake and eat something together (like muffins, and obviously he can’t share 🙁 ), and out of desperation one night I used applesauce instead of pumpkin, omitted the sweetener and vanilla and… surprise! After a toasting, passable bread! Single serving size! Star-shaped thanks to my awesome silicon star mold! I was on the verge of tears of relief.

    Anyways, the point is, thank you. Every discovery like this puts us several steps ahead in making faster, healthier, more versatile and variable lunches for a kid that just wants to fit in.

    Hi, I just ate my first Better-finger Bar. It cured my sugar craving immediately! Even though I don’t feel it tastes anything like a Butterfinger, I do feel it stands on its own as a really yummy treat. I’ll be serving it to friends this week and I know it’ll be a hit.

    Hi Katie, I was wondering if you could recommend bake ware. I’ve looked on amazon and read reviews of anchor hocking and pyrex that say the newly made glassware of these 2 companies can and do explode at times…i have found one 8×8 stainless steel pan that I will probably get.

    Just wondering if you have any suggestions. Love love love your blog and recipes and noticed you use very small pans and small recipes (which I like) but I just don’t have the right size pans 🙁
    I looked to see if you had any ads of bake ware but didn’t see any.

    Recipe Question from cookbook: Red velvet fudge pie- it calls for 1/2 cup plus 1 TBS cacao or cocoa powder. I have made it twice. It is not even remotely close to being “red velvet” color. Both times it’s all brown/chocolate color. Is this a typo in the recipe or is the picture altered somehow?

      Hi, it’s definitely not a typo and turns out that color when I make it. The photographed pie was made in a different state by the photographer, so both of us can confirm the color is correct. Not sure what could be happening to yours. Sorry I can’t be more helpful!

    Not sure if this is where this question needs to be posted. I apologize ahead of time! I made a chocolate dessert and found my granddaughters (ages 5&7) LOVE them. Trouble is I can’t remember which recipe it is. It came out quite solid, thin, and almost crisp. Totally chocolate with an oil/chocolate “frosting”? I think it’s the one where I had to press down hard after baking. It froze very well. Sounds like the perfect recipe, doesn’t it? Does anyone recognize which of Katie’s recipes it is???

Here’s a new idea for you that grew out from my love of your black bean and blond brownies. This week I turned the blond brownies into 1] Cranberry, raisin, orange brownies, 2] Oatmeal, raisin, cinnamon and chocolate chips, 3] Molasses not-crinkles, and 4] Very spicy Gingerbread-ish.     Hi Katie, let me start by saying I love your recipes and your Instagram account. I have now tried twice to make your Blueberry Cake Muffin bread to no success. The first time I screwed up and used baking soda instead of baking powder. It wasn’t bad, but not a cake texture for sure and the color was weird? I tried again this afternoon, and this time it was worse? Very doughy, and again a weird texture. Neither came out anywhere near the color of your photo? I don’t know what I’m missing or if something in the recipe is off? I did not use spelt flour nor Bob’s, but a very good gluten free brand I’ve baked with many times before? HELP?????

      Definitely use baking powder if it calls for baking powder. The two aren’t interchangeable. I’ve made the recipe with baking powder and it definitely works that way.

    Your blog is great. There is just one other I follow. I am into making larabars and good for you organic with chocolate pieces or chocolate base. A man from Australia said you can make chocolate with dry milk powder, coco and coco butter, vanilla and icing sugar (makes a huge chocolate bar). I know icing sugar is a no no for your blog yet the ingredient can be changed to maple syrup, honey, stevia. This taste like Belgian chocolate. I add dried fruit, crystalized ginger, raisens and nuts to my chocolate. You can make a dark version of this also.

    Hello Katie–I recently made your Red Velvet Fudge Pie (without a crust) using unsweetened cocoa powder. It turned out much darker than photo in cookbook, almost as dark as the crust in photo. I liked it but everyone else objected to seeds from the raspberries. I used food processor but the seeds did not get chopped up. Do you think I could substitute an equal amount of banana or peaches for the raspberries next time?

      What about using the banana mug cake recipe and subbing 1 tbsp molasses for the banana, then adding a little powdered ginger and maybe a dash of nutmeg?

    Hello, Katie,
    I tried your recipe for the spaghetti squash on the convection setting on my oven, it turned out a bit brownish, I wasn’t sure if you had any tips for cooking with convection ovens. The moisture in the center of the squash didn’t seem to want to evaporate I left it longer, but finally had to take it out in order not to burn it. My parchment paper didn’t fare any better. It became dark brown and brittle.

    I also like to bake using flax, hemp, and chia seeds with pizza, bread, and cookies. Just wanted to know if you had baked using any of these combinations in your pancakes or other baked goodies.

    Hi Katie,
    I just made your Healthy Sugar Cookies. I followed the recipe exactly.
    The only problem is that when it came time to take them off of a cookie sheet, some of them stuck to it. Would you recommend spraying the cookie sheet with Pam or an oil product? I’d like to make them again.

    I was writing the recipe down for the Oatmeal fudge bars and at the end it said to “sprinkle remaining oat crumbles on top then press down” in the ingredients above and directions I don’t see anything about making oat crumbles for the top? Am I missing something?

    Thanks for the creative vegan recipes. I just wanted to post a comment about the site. I noticed if browsing the cake recipes for eg. you can only go to the next page using the “next” button rather than page 1,2 etc.and then you have no idea which page you are on because it is not indicated. Then in order to go back to the list it’s necessary to go back up and open recipes again and choose cakes and start all over. Thank you for looking into this as it is laborious.

    The recipe for cauliflower mac and cheese calls for 1 cup uncooked macaroni (8 oz) or 1/2 box
    When I weigh one cup of macaroni, it weighs 4 oz. One box is 16 oz so 1/2 box would be 8 oz.. I think the recipe should call for two cups macaroni???

    Well, I tried to find a “Contact Us” on your website but was unsuccessful, so here goes: I love all the KETO RECIPES from the weekly emails I’ve signed up for but they’re getting lost in the other 250+ emails I get each day (yeah, they shared my email, darn them!). But yours I really want! So I have a suggestion for you: in your subject, add [Chocolate Covered Katie] as a prefix to the actual subject, like so: “[Chocolate Covered Katie] Keto Cake – The BEST Chocolate Recipe!” or “[CCK] Keto Cake – The BEST Chocolate Recipe!” or something my email client can pick out and flag for me. PLEASE PLEASE PLEASE – I’m sure others are having the same issue. [FYI to any others who use a smart email client: you can search the email header for “Chocolate Covered Katie”, that works too but having [CCK] in the subject line makes searching and alphabetizing much better.]

      Hi Deb! I wish we could do that – hopefully when we switch to a new email service, we will be able to! Right now, we are still using Feedburner, so it takes the automatic title of the blog post, and there’s no way to customize it for the email. We are looking to change soon though.
