Four Ingredient Ice Cream

Smooth.

Creamy.

Sweet, drippy ice cream, cascading into a delicious pool of vanilla.

Yes, it’s winter. But I can’t keep this dreamy recipe to myself for the next four months. And actually, I really like eating ice cream in the winter.

One of my favorite memories is of a Christmas my family spent with relatives in Italy. The weather was bitter cold and rainy, and yet we knew it’d be a sin to leave without sampling the famed Italian gelato. Therefore—decked in hats, scarves, and heavy coats—we sat in a little gelateria, clumsily using gloved hands to spoon the rich, creamy dessert into our mouths. I’ve never tasted ice cream as delectable as on that blustery December day.

Perhaps this memory is what prompted me to pull out my ice cream maker a few days ago, in the ugliest weather we’ve experienced so far this year. The frustrating thing about ice cream makers is that you can really only make one batch per day, since the base needs to be completely frozen for optimum performance.

And I am not a patient person! If a recipe experiment doesn’t come out perfectly the first time, I immediately want to try again. My first attempt at making a healthy ice cream was awful. Loosely following a recipe from The New York Times, I mixed cornstarch in with my almond milk. The result was not an ice cream; it was a paste! In my second attempt, I reduced the amount of cornstarch, but it was still pasty. So, on day three, I omitted the cornstarch altogether…

Perfect!!

Feel free to customize this basic recipe any way you want! Add cocoa powder for healthy chocolate ice cream, berries for a sherbet, or even crushed candy canes and peppermint extract for a Christmas treat.

Four Ingredient Ice Cream

  • 2 cups milk of choice or nondairy creamer or coconut milk (see note below)
  • 1/4 cup sweetener of choice: such as pure maple syrup, brown sugar, or xylitol for sugar-free
  • pinch stevia or 1 extra tbsp sugar
  • 1/8 tsp salt
  • 1 and 1/2 tsp pure vanilla extract
  • optional ingredients for whatever flavor you desire

Mix all ingredients (except optional ingredients, if they are chunky) in a dish. If you have an ice-cream maker: simply transfer to your ice cream maker and watch the magic! (I have a Cuisinart, and it took 12-14 minutes to turn the liquid into ice cream. Warning: Make sure your ice cream maker’s base is completely frozen before use, or it will NOT work!!) You can eat it straight from the machine, or freeze a few hours for firmer texture. Homemade ice cream is best the day it’s made, but you can technically thaw it out and it will keep for a few weeks. **A word about the milk: If you use only almond milk, the texture is more foam-y (in a good way, if that makes sense!) than creamy. If you use only nondairy creamer or full-fat canned coconut milk, the texture is more like ice cream. If not serving right away, be sure to thaw a little if your freezer is super-cold. Also, I’d probably stay away from fat-free milks, such as ricemilk.

If you are using all almond milk and still want it creamier, you can freeze the ice cream and then re-blend it in a Vita-Mix for Vita-mix ice cream. The end result is incredibly creamy, without the fat and calories of using the coconut milk or creamer.

Mine’s always been mint-chocolate chip. But plain chocolate is a close second. Coconut’s good, too! And cookie dough, peanut butter, cookies-n-cream… probably the only flavors I’m not big on are sorbets or sherbets.

    bluebell – which is made in Texas – is AMAZING! They have a Christmas Cookies ice cream flavor. It is fabulous. I really enjoy the old school Homemade Vanilla thought. Yum!

      Blue Bell is the BEST! I feel sorry for the rest of the country that can’t get it! 🙂 Our favorite it Butter Crunch, with Butterfinger-type candy all in it. We also just tried the Red Velvet Cake. It’s yummy, too!

        Gosh, is there any place in the U.S. that doesn’t get Blue Bell? I grew up in Texas and was disappointed when I moved to the Carolinas, but it’s been here about 10 years now. Also, my parents in Phoenix are able to get it.

        Not that it matters. I recently bought an ice cream maker to avoid the junk like carageenan and artificial sweeteners. This recipe is perfect! It’s so easy and delicious. To me, it tastes like Dairy Queen’s soft serve and who knows what’s in that stuff! I also mixed in some fresh strawberries that I had puréed and frozen, and that was also amazing!

        This one’s a keeper! 🙂

    mmmm ice cream in december! I love vanilla bean, with specks of real vanilla. With apple pie of course. Ice cream is big for me in the summer but I practically forget about it in the winter!

    I also like eating ice cream no matter the weather. Mint chocolate chip is a favorite, but I also really like pistachio. There aren’t too many flavors I don’t like. 🙂

    I fell in love with mint oreo and then it was discontinued. I was broken-hearted because it was SO fantastic!

    You can’t beat regular vanilla with fresh raspberries over the top in the summer. I’m also a fan of caramel cashew frozen custard.

    Then again… never met an ice cream I haven’t really liked. 🙂

    thank you thank you thank you!!! my boyfriend just got me a cuisinart ice cream maker, but all of the recipes in the recipe book are super fattening and I have been wanted to try a lighter version! this is JUST what I was looking for! you could not have had better timing 🙂

        Brilliant! I loved your post about ice cream and it got me thinking. I’ve had family asking what they can get me for Christmas and I’m running out of ideas so your post was wonderful and gave me a great idea, the cuisinart ice cream maker! How fun would that be to make ice cream with the kids? We are dairy free so I’m thinking we could make ice cream cheaper than we can buy it. Would you agree? Also, just read the comment about using the vita-mix for ice cream and I already have one of those, can you tell me how the texture is in the vitamix vs the ice cream maker? Do you freeze the leftovers and if so, do they turn out ok consistency wise? Thanks so much for your help.

        I love pralines and cream from Baskin Robbins but it is full of milk so I don’t get to have it much anymore.

          Hmmm… I’ve actually not re-frozen the vita-mix one.
          The texture really does depend, though, on what milks you use. I’d recommend ones with a higher fat content… unless you want the spongey texture, which some people like too!

    I absolutely love gelato! My favorite flavors have been gelato: amaretto chocolate chip, amarena black cherry, nutella swirl, and sea salt caramel. If only I could emulate them at home! What model of Cuisinart do you have? I have wanted an ice cream maker but did not know which brand is best.

    Ohh I was having such an ice cream craving last night so I had some So Delicious Coconut Milk ice cream.. but I’d wish I’d had a homemade one! Turning it into a peppermint one sounds fab– chocolate with peppermint perhaps?? But my all time favorite ice cream flavor is jamoca almond fudge- I grew up ordering it at Baskin Robbins and it kind of stuck!

    Katie, try making fro yo!

    I just take a big container of Whole Soy unsweetened yogurt, add about 3-4 tbs of Stevia baking blend (it has gums in it that help the texture once frozen. Amazing.) and then whatever extracts I want. I’ve done vanilla, peppermint and pumpkin so far! I loooove it. It’s rich and creamy and tangy. You could easily use a different sweetener or just use the sweetened Whole Soy and not add any extra. Both are so good and so easy.

    I’ve used the Wildwood unsweetened, too, but Whole Soy is my favorite!

    When I make ice cream, I use arrowroot powder and a mix of coconut milk and almond milk. One of my ice cream recipe books (yes, I have more than one!) calls for arrowroot and it works very well with no chalky taste like you can get with other starches. I think it’s Vegan Scoop that I have that calls for arrowroot. Awesome book!

    Vice Cream is the other book I have and that’s more nut based ice creams. I make cashew ice cream like they do in Vice Cream. I blend two cups of raw cashews with two cups of water in my vitamix. Add extracts and sweetener to taste and then process in my ice cream machine once the base mix is chilled. Katie, TRY THIS. It makes the most creamy, rich ice cream ever! 😀

    I love chocolate chip cookie dough soft serve ice-cream! & I have a question, did you use the sweetened almond milk or unsweetened? I usually get the Unsweetened Vanilla Blue Diamond. (& I just made-up some homemade chocolate ice-cream Monday using leftover chocolate pudding so I’m with ya on the winter ice-cream cravings!)

    Can’t wait to try this now, everybody has so many good ideas!

And then everyone laughs at me! as if they never licked a screen! Well, since they dont read CCK, they probably have no reason to 🙂 Ok, so here is the current scenario. I just finished Shakespeare’s Julius Caesar for 10th grade literature ( not that you care) and am in the middle of a book report on this EXTREMELY boring dude.     Lecithin is magic in ice cream (or homemade chocolate), it makes everything creamy and also gives a slightly thicker consistency. I love it!

    Just curious about your choice of almond milk. I always drank the Blue Diamond 40 calorie unsweetened milk but my fiance bought me Silk unsweetened almond milk and I noticed it had 5 less calories per cup so I’ve been buying that lately. What’s your opinion? I saw you suggested using Blue Diamond instead of Silk in the ice cream recipe (which I will also be making soon!) I have a Cuisinart ice cream maker, also, and tried making a coconut ice cream in the summer and it never came together even though my insert was completely solid. Excited to try yours!

    Can you imagine how good this would be if you used Silk’s “Nog” flavor and added candied (or uncandied…) pecans! Yummy yummy!

        I just bought some So Delicious nog and it’s DEFINITELY getting used with this recipe…I’m thinking like 1/2 nog 1/2 full fat coconut milk, and maybe almonds or maple sugar candy (!!) spun in at the end. I still haven’t actually tasted the nog yet so I don’t know how much sweetener I’ll need to add.

    I love all flavors!!! The only exception is probably nut-infested flavors…. especially those containing pistachios or walnuts. I’ll have them on occasion, but it’s not a top pic
    My absolute favorite is Baskin Robins 31 Flavors Daiqurie ices (original, watermelon, and raspberry). Other than that, I love cookie dough, peanut butter kinds, brownie or chocolate kinds, cookie crumb kinds, coffee, caramel and toffee….. the list goes on and on!
    Do you like pistachio ice cream??? I only like it in spamoni.

    Making nondairy ice cream AND making it in a blender rather than an ice cream maker (which is me)…is definitely an art rather than a science I’ve found. So many kinds of milks/mylks, sugars, i.e. maple, white, agave, etc…and so it’s so hard to get it to the right consistency and texture…bravo to you for keeping on with the experiments. And yes, I would have ruled out cornstarch too! Can’t believe the NYT used that?

    Well it used to be cookies and cream, but I can’t have it anymore (stupid gluten!) Now I’m more likely to just stick to fro-yo in which case I love peanut butter, mint, or just plain vanilla. Although they had pumpkin recently and it was awesome!

    I will eat ice cream even if it’s cold and snowing (as long as I have my electric blanket!).
    My favorite flavor is mint chocolate chip, but as long as it doesn’t have blueberries, pineapple, or coffee- I’m good. Add a brownie to the bowl of ice cream…oh yum!

    we have an old fashioned (but with motor) White Mountain ice cream machine. You fill the metal container, pour ice and rock salt around it, plug it in and let it churn til frozen. Do you think your recipe would work in it the same way? No pre-freezing of anything is required and I soooo miss ice cream!

    For me, it would have to be…hm…okay, honestly, I’ll eat anything you place in front of me (unless it’s cockroaches, or rats, or something out of the norm (although, I did eat bear meat once; tasted like pork).

    Have you tried making ice cream with frozen bananas as the base? I guess you would have to like bananas for the recipe to be worthwhile, but it is healthy and delicious! I sometimes add peanut butter.

    We’ve had good success with rice milk, although it does come out more like sorbet than ice cream, and we’ve had many many compliments on how yummy it was!

    We can ONLY use rice milk as our littlest one is allergic every single other kind of milk….even flax seed milk! Makes life very challenging but I’m up for it!

    I just finished making this ice cream – SO. GOOD. But I found mine to taste alot more coconutty than vanilla (I just used a regular tin of coconut milk). It still tasted GLORIOUS, but maybe upping the vanilla extract a bit more might achieve a more basic vanilla ice cream.

        I’m pretty sure the only nondairy creamers I’ve seen where I live are in those tiny little portable packets, and even then I have to travel to a remote location to get them :/ Still think I’ll try though, haha.

    ok inspired by you, i just dumped a few cups of SSo Delicious Coconut nog into the ice cream maker and let it run, and wow. Literally just the nog, I didn’t think I needed to add anything because the sweeteners and the thickeners are already in the formula. Yeah, it’s 35 degrees out and I’m facefirst in a bowl of this stuff.

    I have lots of ideas for customizing this basic recipe…Mint chip with peppermint extract and some dark chocolate; pumpkin pie with some pureed pumpkin, cinnamon, nutmeg, and ginger; coffee; chocolate almond with almond extra and dark chocolate. Also I might make one of your delicious cookie recipes to crumble over the plain vanilla. Oh yummmm 🙂

    I would customize this so many ways! Adding little pieces of vegan cookie dough bites would be amazing, or chocolate-peanut butter with banana. And maybe some instant coffee with mint and chocolate chips… mocha mint chip… mmmmm. And also a pumpkin spice ice cream! YES. The possibilities are endless. 🙂

    Mmmmm Ice cream!! There are soooo many flavor combinations it is hard to narrow it down! However I have been on an almond and coconut kick lately, so I would probably make “Almond Joy” ice cream. I would add coconut and almond extract, cocoa powder and chocolate pieces, maybe some almond butter for richness and a sprinkle of unsweetened coconut!! MMMM!

    Another option since I just made a TON of pralines for christmas gifts I might add some butter extract and some candied pecans and make Pecan praline or butter pecan ice cream … MMM! Ok now I want ice cream for breakfast!! 😉

    Oh goodness, I’ve been dreaming about this recipe since you posted! I would love to win an ice cream maker so I could test it out :o) To personalize, I would keep it simple by adding some vegan chocolate chip cookie dough balls, and maybe a little drizzle of melted peanut butter.

    1.) Use Silk holiday mint chocolate milk, add to it crushed peppermint pieces, peppermint extract, and swirl it with dark chocolate almond butter
    2.) Classic vanilla almond milk + cinnamon, add to it YOUR pieces of raw gingerbread men and coconut whipped cream!
    3.) Puree raspberries and add to ice cream made with chocolate soy/almond milk, add in cocoa nibs, and swirl with dark chocolate almond butter/artisana
    Hows that for customization 😉

    To personalize this recipe, I would love to make little cookie dough chunks and mix them in. Not super original, but I’ve never loved another type of ice cream nearly as much as I love cookie dough ice cream! Orrr maybe I’d figure out a way to give it a little cake batter taste…Yum!

    I’m into peanut butter ANYTHING these days, so I’d make caramel-peanut butter ice cream. And last night I made a sweet potato smoothie that I think would make fabulous ice cream. I haven’t tried working with flavored Stevia yet but I want to give that a shot as well… I’ve been wanting an ice cream maker for a long time!

    I would customize this by adding 1/2 cup pumpkin puree and a bit of pumpkin pie spice for some fall-flavored ice cream. I also think it would be interesting to try adding 2 tbl of chia seeds; I’ve never seen somebody do that before.

    I like to get crazy with ice cream concoctions. If I had a SUHWEET cuisinart ice cream maker right this moment – I would be all about christmas flavors.

    Creamy Peppermint Candy = a little peppermint extract, peppermint candy bits, and dark chocolate pieces (+beet juice for red color)

    Gingerbread Snap = + a few tablespoons molasses, cinnamon, and of course gluten-free gingerbread cookie crumbles.

    But let’s be honest, the possibilities are ENDLESS. Hot cocoa ice cream, pretzel chocolate peanut butter, sweet pistachio, yum yum YUM.

    I love chocolate ice cream, there is nothing like a rich smooth chocolate on the tougue. I would add some almonds and coconut to make a almond joy type ice cream. I love ice cream all year round.
    It is an easy dessert but, I gave my daughter my ice cream maker…..so winning a new one would be heavenly!!!

    Icecream is the one thing that I love but have always wondered if there was a simpler way to make it & make it a little healthier…you’ve come to the rescue!     As someone who is gluten, dairy, and cane sugar intolerant, I would adore making my own ice cream! One of my favorite mixtures of flavors is banana and peanut butter. Banana is so naturally sweet but adding a bit of extra honey doesn’t hurt. 🙂

    There’s so much I would love to try – for starters, Kaya ice-cream. Kaya’s an amazing coconut jam we eat a lot of back home, and can be easily made. And I’d combine it with my favourite recipes of yours – lightly blending in your brownie bites/ larabars would make this amazing 🙂

    Oh my gosh, this ice cream maker is on my Christmas wish list! We just tried an easy 3 ingredient recipe at my cousins house (they got one for their wedding, which is why I added it to my wish list)! Sweetened condensed milk, half and half, and vanilla. Of course to make it 4 ingredients you’d add something in like Oreo’s! Healthy goes out the window though, lol!

    Yay for an awesome non-dairy ice cream recipe! Giving up ice cream was the hardest part of going dairy-free for me. I keep trying to convince my friends and family that non-dairy alternatives can be just as good, and I think this may be the key to doing so! I’m a Louisiana girl so pecans toasted in brown sugar are a favorite mix-in (a la pralines!) but I can never say no to cookie dough (easy PB cookie recipe, I’m looking at you!)

I would customise my ice cream by adding leftover broken up christmas pudding into a brandy ice cream base, or maybe a deconstructed mince pie one with ingredients such as- mincemeat (I think you’ll know what this is given you’ve lived in Britain?), maybe some mince pie crust and marzipan swirled in…. or pumpkin and cranberry?! I’d love to be able to make the variety of flavours that exist for dairy ice creams but sadly not for the extremely limited range of vegan ones we have over here ;(

    Side note: For those without an ice cream maker (like myself), you can freeze bananas and turn them into ice cream! First, slice the bananas, then freeze them in tupperware. After they are frozen solid, place them in a food processor. They will start out chunky but will eventually turn into a nice, fluffy banana mixture that you can add anything to!

    Flavor combos with this are needless customizing and tweaking recipes is my favorite thing to do..

    White Chocolate Raspberry (fresh) or Coconut Raspberry (fresh) is one of my favorite flavor combos..
    Smash the raspberries really well and mix them in with the base and freeze.. delicious!

    Or maybe a spicy chocolate adding a little bit of chipotle and cayenne pepper powder to the ice cream with a dark chocolate base.. make a cream cheese topping of some sort.. I’m drooling!!!

Also, the gluten free chocolate chip cookies I make for her crumble easy and then she doesn’t know what to do with all the pieces.     So, to customize, when it comes to icecream, like any icecream, I can be a peanut butter freak and just want to add copious amounts on top, swirled in, frozen in chunks and crumbled on top, and even just on the spoon so I’ll get a little each bite. However, because of this, ice cream treats can sometimes rack up the calories (even though pb is delicious source of fat and protein ;)) so to make this addiction of mine a little bit healthier, I would keep the original recipe and modify it by adding about 3-4 TBSP peanut butter powder (like PB2) to the mix before putting it in the machine. Then, while its churning, I would put in crushed peanut butter puffins (to give it some texture) and mini chocolate chips (because adding chocolate always makes everything better). I would call it Peanut butter pie ice cream 🙂

    So many entries! I hope this one counts! I think I would use a vanilla pod instead of vanilla extract, and add a bit of cinnamon. I think I would also see if I could blend that delicious vegan cream into the recipe somehow to make it even creamier. It may seem simple, but vanilla and cinnamon are two of my favourite flavours! Also, there is a flavour in Italian gelato that I tried called ‘milk’ flavour. It seems odd but it was an intense milky dream. If there was some way I could achieve that kind of flavour without using the actual milk, I would definitely do that too.

    A pumpkin-pie flavoured ice-cream for the holidays I think would also go down a treat! I’d love to try that! <3

    I think I would have to add some of my old trusted favorites to the base of this recipe: chocolate and strawberries infused with peppermint! It’s indulgent, sweet, and refreshing all at the same time!

I’ll buy it even if I don’t win, mostly to make vegan frozen yogurt, because I obsess over dairy frozen yogurt which is sold everywhere but vegan fro yo is nowhere to be found! So I can make gallons of it at home and save money and animals! I just love ice cream or fro yo plain, so the only way I would change your recipe would be to leave out the vanilla to let the other natural flavors really shine through! But the sprinkles look awesome with the vanilla, so I think I’d have to try your original recipe too!

We are a dairy free family and the store bought dairy free ice cream is very limited in flavor selection especially since we avoid soy as well and it’s very expensive as well.     I was just telling my Husband how nice it would be to have our own Ice Cream Maker. We both have dairy allergie and other ones too. So have our own way to make ice cream would be GREAT!!!! We live in a town that has some dairy free frozen treats but because it a small town the prices are VERY VERY high to buy them.

    We ever were taking about how we coudl make dif. kind of ice cream. We talked about “safe” Choc. Chip, Coffee, Mint, GF cookie dough, and we had so many ideas.

    We would LOVE LOVE LOVE to be the win of this maker and it would make a great christmas, gift for us… as money is limited becuase of holidays and our up coming first baby coming soon!

    I love the idea of using coconut milk for this! I can’t wait to try it with home-made peppermint bark chips! I like to make the bark with a ganache in the center of the two layers of white chocolate and crushed candy canes. Softer on the teeth and a great creamy surprise…. yum 😉
    I layer Melted white chocolate on top of wax-paper lined baking sheet, sprinkle crushed candy canes and chill.
    Then, melt semi-sweet nestles chips over double boiler and add liquor of your choice (I like Kahlua or peppermint schnaps) and some heavy cream (or dairy-free substitute of your choice) to make ganache. Pour over the chilled white chocolate layer and re-place into fridge.
    Finally, I repeat white chocolate layer (more crushed candy canes) and chill till set. Break up into pieces and add to Ice-cream!!!!

When I was younger, my dad and I used to always get “baseball-chip” ice cream from Baskin Robbins when it was in season and it had berries and nuts. So delicious!     Cinnamon Roll — I’d mix a hint of my homemade caramel sauce, cinnamon, vegan butter, stevia, and a smidge of molasses into the batter.
    Oatmeal Raisin Cookie — A combination of rolled oats, coconut oil, raisins, and a splash of each vanilla and cinnamon. (And maybe vegan chocolate chips!)
    Red Velvet — I would whip up your red velvet pancake mix and either throw it into the mixer or crumple it on top along with a waterfall of vegan chocolate syrup!

    I would add PB2 powdered peanut butter. It comes in regular and chocolate. Just add 1-2 Tbsp dry powder. It helps to make it creamy. Which helps if you don’t have a fancy blender. plus 1 serving is only 45 cals as opposed to regular pb which is 200.

    Since I am a chef, it’s hard to just narrow down one specific flavor I like, but because of the holidays I think I would make some festive variations to serve. I am thinking gingerbread ice cream would be nice, or maybe blood orange and ginger, or how about pear spice, or even maybe chocolate peppermint patty. All delicious, maybe time for an ice cream social. My ice cream mixer from the 70’s died this summer when I was making concord grape ice cream. Was very bummed.     I would make home-made sprinkles! Basically you take any icing recipe, put more confectioner’s sugar in to make it thicker and pipe it out on wax paper into thin strips. Let it dry for 24 hours, and chop it up. Viola, you have sprinkles!

    I think I want to do a PB version by combining PB with confectioner’s sugar and piping it out, drying, a chopping it up. I haven’t tried it yet but I will if I can make ice cream to put it on~

I’d like to try your recipe with some frozen peaches to see how that would work with an ice cream maker. The fruit sorbets I make are good but not as creamy as ice cream.     I like a banana ice cream I make with bananas through the Champion juicer (soft serve style) then raw chocolate sauce and fresh cherries from the market. It’s like Cherry Garcia but I call it Cherry “Rawcia”. 🙂 Chocolate chip mint is always my default ice cream too…although Moosetracks is also incredible!

    I wish I had an ice cream maker! It gets so tiring using the old plastic bags inside a gallon bucket full of ice method… last batch the bucket opened just before the ice cream was done… water EVERYWHERE! Anyways, my customization would be to add a 1:2 mixture of carob:pb2 powder (I love that stuff, so versatile, and carob, though its only chocolates hippie cousin, tastes wonderful with peanut butter) to the milk as a base flavor. Than I’d add some homemade dark chocolate chips (using your artisana recipe, with hershey’s special dark). For the final touch, a melted banana swirl..

    Now I’m drooling….yum.

    My mum used to make an amazing Kulfi – an Indian ice-cream flavoured with cardamom and pistachio. It is rich but not over-sweet with a really delicate mixture of flavours – delicious!

    It is usually made with condensed milk but using coconut milk in your recipe would give just the right amount of richness I think.

    1) Add speculoos or biscoff spread to the mix. Crush some speculoos or biscoff cookies for a topping, too!

    2) Add some PB2 (either chocolate flavor or regular peanut butter flavor) to the mix, and then throw in some roasted peanuts, almonds, or pecans. Maybe all three along with some ghiradelli semi-sweet chocolate chips 😀

    Hmmm, I think that I would change the recipe by simply adding a few T of cocoa in place of a little sweetener and maybe roasting some roughly chopped almonds/hazelnuts in Agave and throwing them into the mix?? How does this sound??
    On a separate note..
    I’ve actually been craving ice cream lately, as well ((though it’s been pouring with twin for days here!! Still, what else is a girl to do, when “trapped” inside by the weather, and with nothing but almond, coconut and oat milks, and fun add-ins and flavours, just asking to be used??)) ;);) .

    Well, i have a very special and different thing i would do with your ice cream-
    Here in northern California mushroom hunting is VERY popular at this time of year. There are so many different types of mushrooms to eat because they all have there own unique flavor:) i have a few faves. One of them is called a “candy cap” mushroom and for those who dont like mushroom, well you would never know you were eating one. They Taste JUST like maple syrup when dried. My local ice cream shop makes mushroom ice cream and is is crazy good! Due to being lactose intolerant its hard for me to eat it with out stomach aches. Thats why i love your recipe!! 🙂 and i would love an ice cream maker too! 😉

    Geez girl! You are popular! Understandably though. =) I don’t know if I’ve seen this on your blog yet or not, but I know you like Coconut Milk so I thought I’d share this recipe. I got a can of Thai Kitchen Light Coconut Milk. I froze it in a tupperware overnight. The next day, I microwaved it for like 45 seconds so it would come loose from the container. I tossed in in my food processor with maybe a half a cup of water and a few tablespoons of stevia, plus a teaspoon of vanilla. It took a few minutes for it to break down, but eventually, it was ice cream consistency. It was delicious. Like a creamy, sweet, coconut ice cream. It would’ve been great with chocolate, but I went minimal. A whole can of light coconut milk was just 240 calories total. And all I added was stevia and vanilla. It sure beats ice cream as far as fat and the junk that comes with traditional ice cream. If you haven’t tried it (and I think you probably have) it’s great!

    Instead of vanilla, almaretto with berries as toppings…or cinnamon with baked apples to vanilla flavor. It is even simple to make sorbets with fruit juice ice and sugar but I like a creamy non dairy base like coconut milk or almond milk…i like the textures rather than rich ice cream.     YEAH! I can get on here today! I am a blending queen lately and my 6 year old son just asked me when I was going to get an ice cream maker. I seriously use my ninja at least 2 to 3 times a day for smoothies, milkshakes, soups, dips, baking your awesome desserts 🙂 M son, Ayden, enjoys all the cold stuff I make with my blender, so I know he would love an ice cream maker. He actually has a Dip n Dots maker on his Christmas list. 🙂 Anyways, my FAVORITE ICE CREAM IS CHOCOLATE CHIP COOKIE DOUGH! I think a great ice cream to try to create would be a gingerbread ice cream for the Holidays. I LOVE chuncks of cookies so baking up some vegan gingerbread cookies and chopping them up and adding them to some ice cream would be GREAT!

    I love making ice cream! I did a lot of experimenting this summer because I lived on a farm and had access to raw cow and goat milk to make amazing ice cream. My favorites were lavender vanilla ice cream, basil ice cream and also earl grey ice cream. With the lavender and earl grey, I would steep the lavender while I heated the milk, or steep the tea bags while I steeped the milk. AMAZING! So delicious and fresh tasting and not too sweet!

    I would replace half of the vanilla extract with banana extract and add peanut butter. After it came through the machine, I would add dark chocolate flakes and crushed vegan whole wheat pretzels (I love salted ice cream!). Salted dark chocolate, peanut butter, and banana flavors?     what i’d change for this ice cream is to freeze some bananas, whizz them up in a blender- obviously pour coconut milk in as well to make it creeamy…then add carob and almond butter cups + carob brownie chunks..heaven….

    I’m from Ohio, so I have to put in a cheer for Buckeye ice cream. Add a few Tbsp of peanut butter to the recipe, and melt some high quality dark chocolate and drizzle it into your ice cream for the last few minutes of mixing time. Makes a smooth, chocolaty chunk that’s to die for!

My favorite ice cream at Christmas time is peppermint stick, and I’d love to try making my own with almond milk!     I would put a ton of cinnamon and maybe nutmeg in the ice cream, and because I chunks of things in my ice cream I would also put in chocolate chip oatmeal cookie dough pieces.

    Also, these days I am really into black tea flavors (if you ever need a new way to eat oatmeal, try infusing the water/milk with your favorite black tea before adding the oatmeal. chai oatmeal! earl grey oatmeal!) I think I would try infusing the milk (will it work the same if it is heated and then allowed to cool or would the heating somehow change the chemical makeup?) with an English breakfast tea bag.

    I would customize it with Chocolate and Wasabi!!! I know it sounds like a weird combo but I had an epiphany the other day while mixing together two of my favorite homemade trail mixes 🙂 The chocolate+spicy combo really works!!

    My favorite type of ice cream would have to be….Mint (maybe w/Dark Chocolate chips)!
    But for 2nd, it’s a tie between green tea and red bean….maybe that’s why i usually eat them together hehe~

    Will definitely try this with the Dutch hagelslag. It’s basically just sprinkles but they have some variations such as chocolate shavings and the dark chocolate (puur as it is called here in Holland) shavings/sprinkles are fantastic. It is so cheap over here too, I am packing my bags for the US tomorrow with so much chocolate it’s ridiculous. Pick me for the ice cream maker!

    I was experimenting around with making low-calorie ice cream and I sort of…blended your idea with another one I’d heard of…and I want to post the recipe to my own not-very-popular recipe blog (weight watchers friendly recipes), but not w/out permission. Basically, I used almond milk, sliced bananas into the little dishes of almond milk, and froze it with sliced bananas in the milk…then blended THAT instead of just frozen milk? So it was creamier without the coconut milk.

    I was planning to credit your blog along with the whole “frozen banana ice cream” idea in my post. Is that ok? Because freezing the almond milk was totally your idea, but I noticed you said that it was “foamy” if you used almond milk so…voila…add banana!

      I never believed it was any healthier or less healthy than any other sugar (white, brown, corn syrup, etc). Sugar is sugar is sugar… to be honest, I don’t really like things sweet and so I barely use any sweeteners anyway. I’d rather have things creamy, rich, and of course chocolatey!

    So, I forgot to half the rest of the ingredients (I only had 1 cup of non-dairy vanilla almond milk left), and by following the recipe normally with table syrup (fake maple syrup, basically), it ended with a caramel sugar-y flavor! It was great! 🙂

      If you’re using something strong, you only need a little. But if you’re using anything more than a couple tbsp, maybe reduce the milk by that amount?

    Yum! This is officially the third recipe of yours I have made. I made it with Blue Diamond Original Almond Milk in my Cuisinart Ice Cream maker, and it was awesome! Yes, I’d say it was kind of foamy, or like whipped ice, but MAN is it good! And for the calories, you can’t beat it!

    I found your blog in January, and that was one-month in to a big weight loss venture I am on, and now I’ve lost 70 pounds. 🙂 Thanks, dear, for your great recipes and great help!

    P.S. – I’m an Army wife living in Japan, so I love that you use ingredients that I can (mostly) find even in a very un-Vegan country!

      I actually used to live in Japan… I’m surprised you can even find the Blue Diamond almond milk now. I remember visiting when I lived in China. Feel comforted in knowing at least Japan is more vegan-friendly than China ;).

    Mmm, very simple recipe! I used goats milk (I’m allergic to coconut, and didn’t want to experiment with something I’ve never tried (non-dairy creamer)), more brown sugar than called for, no stevia, and extra vanilla.
    THEN I mixed in 2 packages of Swiss Miss Hot Chocolate powder, and threw it in my mixer. I patiently cranked it for about 40 minutes, and when it was juuuust thick enough, I slowly added about 3 tablespoon fulls of smooth creamy peanut butter, a little bit at a time, so I would have soft chunks of it spread throughout.
    It was still a little soft for my liking, so I’ve put it in the freezer to freeze up a little more before eating it…. I’ll stir it with a spoon before I go to bed, and again when I wake up, to make sure it doesn’t turn into a rock, and try it tomorrow evening. The taste testing I did was veeeery good! (I’m a BIG fan of chocolate and peanut butter combined.) So hopefully it’ll be even better when it solidified! 🙂
    I’ll try making something with almond milk next!! 😀

I’ve had many dietary restrictions recently because of health reasons…dairy being one of those and chocolate and coconut and gluten, soy, rice…just about everything and whatever a suitable substitute would be for that “everything” is no longer allowed. I thought National Ice Cream month would pass without at least one honorary scoop of one of my favorite desserts until I discovered your recipe. I used brown sugar and actually added 1 tsp of tapioca starch with Silk almond milk (and 2 Tbs of granulated sugar instead of Stevia…I’m not afraid of sugar because I need to gain a lot of weight lol). It turned out amazing! I’m thankful for bloggers such as yourself. I know I’m not the only one struggling to make diet changes because of health reasons, and there are many of us who owe you and others like you a “thank you” for helping us make this challenging lifestyle adjustment. So, thank you for creating and maintaining such beautiful blog!

I just bought my first ice cream maker (Cuisinart) and I was so excited to try out this recipe- my favorite flavor is good old fashioned vanilla (with sprinkles of course) I made the recipe above with unsweetened almond milk and brown sugar- it was very sweet! I might half the brown sugar next time. I was wondering if you think that adding xantham gum or cornstarch would help thicken and stabilize the texture a little more so it’s not as “icy”? It’s still delicious as it is, but might try to experiment next time..

    Hey, yeah, we have been making ice cream ourselves because we do not use sugar, agave, dairy or artificial ingredients of any kind. We sweeten things with Stevia and/or Xylitol. Anyway, ours is more like more like “ice milk” which disappoints my husband, so prompted by you, we will try freezing the canister before making it again! Thanks so much!

    i loveee your blog… i am a gluten free vegan and i gave up sugar last year due to my energy levels but i love dessert, I love having company and i am obsessed with showing people (particularly my boyfriend!! hehe!) that healthy food can be delicious too! A really easy way to make this icecream if you don’t have have an icecream maker is the “shake” method…. put the icecream ingredients inside a small ziplock bag after you have mixed them all together (make sure you fasten tight!), then put that big into a larger ziplock bag that is approx. half full of icecubes and 1/2 cup of coarse salt (fine grain will work too its just course works better)… close that ziplock up and shake for five minutes ( i like to hold the ziplock bag in a teatowel…. it’s a good little workout!)… then VOILA you have icecream… you can also put it in the freezer after that if you want it to be harder, or keep shaking! …. also i tried this method with 40 calorie coconut milk and it was TO DIE FOR… so there you go. Thanks again for sharing your oh-so-delicious! Keep it up girl and thanks again!!! have a choca-licious day!!!! <3

    I got an ice cream maker (it’s green!) for mother’s day with the hopes of making allergy friendly ice cream for our family. We used So Delicious coconut milk creamer and it worked beautifully! Since we were planning to put it on pear crisp, I added some cinnamon. We can’t wait to try other flavors! I have a feeling we will be eating lots of ice cream this summer!     I made this last week using full fat coconut milk, cocoa powder, and xylitol since I am on the ACD…it was heavenly. It was so creamy and satisfying it was like having old fashioned chocolate frozen custard. I only needed about 1/4 cup to “get the monkey” off my back. It freezes very well but make sure you add a layer of plastic wrap to inhibit ice crystals. This quantity will last me at least a month so no worries about calories. Bless you!!!

    Have you had trouble with the coconut milk forming a layer on the frozen container because you pour it into a cold container? I have an electric ice cream maker that uses ice and rock salt and haven’t had the issue with a layer of frozen coconut milk forming on the inside of the metal container because the container isn’t as cold when you pour in the milk.

    The calorie info for the almond milk version isn’t adding up right for me. I’m getting about 68 cals for the 85g serving. Are you forgetting the calories for the vanilla extract? That does add about 55 cals to the whole batch. I never used to think vanilla extract used to have cals either so I was thinking maybe you made the same mistake?

    Made this the other day as the first recipe for my Kitchen Aid Ice Cream Attachment we received for Christmas. We used skim milk and brown sugar. The ice cream was really good, but soft like soft serve. It was a little too soft for us, so we froze it for a bit. It turned out really well after that. It was a bit airy, but I liked the texture, not as thick and creamy as real ice cream though. I’ll definitely try this recipe again with a different kind of milk. Perhaps almond milk since that’s what I have on hand now. 🙂

    I want to know why you suggested a nondairy creamer is it a health issue or will it affect the ice cream flavor in some way? You said to use 2 cups milk of choice so basically you can still add in dairy right? I want to use a dairy creamer because most nondairy creamer doesn’t have a wide variety of flavors added to their creamer, for example, the brand International Delight carries flavors like Peppermint Mocha & Pumpkin Pie Spice. I want to incorporate these dairy creamer because it got all these flavors & I want to use that to flavor my ice cream instead of having to add in more flavors using extracts & other ingredients. Would you recommend me doing that if so how much of the creamer should I adjust it to since it will be a flavored dairy creamer like Peppermint Mocha I don’t want it to be overwhelming or too little.

    I just have a question about transferring to an ice cream maker. When I transferred over after mixing (I used almond milk and stevia), the mixture just got stuck to the sides of the freezer bowl.     I can’t wait to try this! I have an ice cream maker on my wedding registry. I hope to be spoon deep in homemade ice cream soon! Lately I have been searching for vegan sprinkles, what brand do you use? So far, every jimmy or nonpareil sprinkle I have found is coated in confectioner’s glaze which is from my research isn’t vegan (shellac from beetle secretions). I would greatly appreciate finding some vegan sprinkles and my cupcakes and cookies would too! 🙂

    Another fast way to make it into ice cream if you don’t have an ice cream maker, which is a fun science experiment too and especially fun if you have kids:
    Put the mixture in a small ziplock back. Fill a big ziplock bag halfway up with ice cubes about 1/2 cup salt. Put the small, sealed ziplock bag into the big one, put in a pair of gloves and shake shake shake for about 5 minutes or so. Boom, ice cream has been made! 🙂

    I created an add-in to ice cream: chop a banana into 1/4 inch bits, sprinkle cocoa over it and mix with your knife until all of the banana pieces are coated. Scrape the whole thing into your soft serve ice cream and stir until it’s swirled well.

Coffee ice cream is good—I made a Mississippi mud pie with coffee ice cream for my birthday this year. Neopolitan is fun to eat, too. I’ve always hated sherbet (why make dessert fruity???).

    Hi! The recipe looks great but I’m not clear on how/when/where the mixture freezes into ice cream without an ice cream maker. Does your cuisinart have a freezing mechanism? Or do you blend for 12-14 mins and then freeze and reblend after frozen?

    Would 1% dairy milk or skim work with this? Also, what model ice cream maker do you have? I’ve been looking for a reliable, inexpensive one to kickstart making some healthier creamy treats!

    Thank you for this recipe– I made this last week for myself, my kids and our babysitter, and the verdict was: so delicious!! I used coconut milk, brown sugar, salt, and vanilla extract. I would like to make it for our family and guests, so my question is, can I double the recipe? Straight double (2 cans coconut milk, 1/2 cup brown sugar, 1/4 tsp salt, etc.)? I’m not a cook, and I’m a little taste impaired, so please don’t tell me to do it to taste–thank you!!

    I am trying to make ice cream with flaxseed milk (due to many dietary/medical issues). I do not have an ice cream maker. I thought you mentioned that you can make these recipes without an ice cream maker but did not see the directions. Am I missing them somewhere? Thank you very much.

    I tried this in a small 4 qt ice cream maker that I just purchased. I was so disappointed when it was just liquid after about an hour. It has the bucket that I had left overnight in the freezer. Is that the kind of machine you have? I wonder why it doesn’t work for me and if I should just take the machine back. Any thoughts?
