I have just discovered your blog and I am loving your food, especially your breakfasts. I’m not a vegan and didn’t realise how easily vegan food could be made. this page is like the best present ever! I feel like its christmas and can’t wait to try it all. I thought no one in the world loved chocolate and peanut butter as much as me. and now there is someone and someone who does it healthy! Which is always my struggle since I am also a fitness fanatic. Ok. I’ve just stumbled across your blog and am now severely annoyed that I’m only just finding it and haven’t been trying all these delicious recipes for ages. I think that some of these may prove to be real winners for me on my early run days – which is awesome for me as I need something before a run and have struggled to find stuff that works. Now I just have to decide what to start with! I see some very yummy days coming up though that’s for sure :)

Hey Rachel,
I’m so glad you found me :) . I can’t really recommend a diet plan for you, since I don’t know anything about your specific situation… and I’m also not qualified as a nutritionist or anything. But most of my recipes can be easily modified to fit a low-calorie lifestyle. Just use the optional applesauce in place of oil in my recipes, and try stevia in place of sugar.

Hi
I adore your blog, it has lots of tempting and perfectly healthy recipes, and lots and lots of chocolate and peanut butter!
I’m a fairly new vegan since moving to America but when I visited home recently (my beautiful Australia) I found eating vegan quite a challenge, especially at restaurants. Do you have any advice on veganizing meals at not so vegan-minded restaurants?

Sadly, I wouldn’t have tried it in a MB… I just don’t think it’s powerful enough. If you can find it, I highly recommend buying the Artisana. It’s expensive, but a little really does go a long way (when you think about the fact that a candy bar is like a dollar, but you eat it in a single sitting!)

Oh, and I use regular rolled oats for the boatmeal (either Quaker or Old Wessex organic. I don’t use quick oats for this recipe).

Hey Katie,
I tried this recipe i found on the web the other day (can’t remember where i found it though) and thought i should share it with you.
Its for a chocolate avocado mousse recipe

1 Avocado
1/4 cup of cacao powder
Agave nectar or honey to taste (i used 1/4 cup, but i like it sweet)
1 tsp of vanilla

Blend it all together until it is very smooth and creamy, put in the fridge to chill and enjoy the richest chocolatey mousse ever.
Next time i’m going to add some hazelnut butter, so it will taste like a nuttella mousse…oh i am soo excited.

this is fantastic. The only thing I miss from my non vegan days are the desserts. Can I make a really random suggestion/comment??? Okay I’m going to whether you want it or not- I’m good at unsolicited advice lately. Anyway, I come to this page, and I get excited about the pictures, so I try to click them.. but they aren’t links to what I think they should be.. :( Ex: I am going to make some oatmeal pancakes for breakfast, yumm! So I clicked the picture of the delish-looking pancakes.. which just took me to another picture of the pancakes. Still delish-looking, but I was hoping it would take me the same place as the hyperlinked text below.
Not sure if it’s possible to link the picture too?? That’s my suggestion. Either way, I’m making these pancakes for breakfast, and I’m excited! :)

Wow, what a great idea! You can tell how un-tech-saavy I am; I never even thought of this!
Honestly, my recipe page frustrates me to no end… I have hundreds (thousands?) of recipes and this page feels SO unorganized. But I’m at a loss for how to better-organize it. And my most-recent recipes aren’t even on here yet! :-?
In any case, I’ll make a note to someday (when I have a free moment lol) change the photos to links!

I think your organisation is perfect! :) everyone can find what they want very easily ,I guess (even if I can’t believe these are all of your recepies if you make a new blog entry every day.. ;)

Just another suggestion: Maybe you could also group them by purposes like wedding *g*, holidays and so on….

Recently I was looking for some vegan party snacks (especially fingerfood) that are as healthy as possible and especially sugar-free ( I can’t prepare a batch of muffins without eating some – too many- of them …) and easily to transport on a bicycle (so facy creamy cakes don’t work unfortunately..). Do you have any suggestions?
Would be cool if you had an idea :) .

If ou look through my dessert recipes, many of them can be sugar-free :) . There really are a ton of options, so it’s hard for me to list specifics for you. But perhaps the fudge babies? Your daughter (and your family) is in my thoughts and prayers. I have a friend who fully recovered from Leukemia, and he says the biggest things that helped him were staying positive, smiling, and having a lot of loving support. Your daughter obviously has the loving support!

Okay, so I am completely obsessed with your array of yummy desserts! I am not vegan, but I am pescetarian. I used to eat meat, and the only thing I miss is BBQ sauce. I know that sounds weird but I love it so much! Unfortunately, now I don’t know what to eat it on! Does anyone have an idea?

I really like NuNaturals stevia, but I haven’t tried Truvia.

Oh, and for bbq sauce, this is my favorite: http://chocolatecoveredkatie.com/2011/01/25/cauliflower-chicken-nuggets/
But other ideas include: beans, tofu, roasted veggies, mixing it with salad greens or using it in place of dressing on salad, or even mixing it with rice! :)

Just FYI — unless I missed it (a very likely possibility, haha), it looks like your Soy-Free Vegan Cream recipe isn’t linked to here. I’m about to make your Strawberry Shortcake Pancakes (yum!!) I just bought & couldn’t find it.

Hi, Kate! I’m a teenager who just discovered she has a long list of food allergies. My allergies include; milk, soy, wheat, rice, peanuts, corn, beef, and I’m sure I’m forgetting something. I already knew about your website, but quickly came back when I heard of my food allergies. This is so helpful! It’s nice to know I won’t have to give up sweets! Having to give up certain foods can sometimes lead you to actually EXPAND the amount of foods you eat because you have to get creative. I know I eat so much more variety now than I ever did before I stopped eating meat/fish/dairy! :)

Hey! I’m in loooove with your website! I’ve just recently become super health-conscious and love experimenting with recipes. I’ve never been good at following recipes, but I usually use several recipes at once as references and your recipes have been at the front of all my desserts lately. I’ve stumbled on a problem, though. I’m trying to make a flourless chocolate cake using sweet potato. I haven’t been able to find any recipe of this type, either. I came up with a recipe using about a cup of sweet potato puree, 3 eggs, half a banana, a handful of oats, copious amounts of cocoa powder (6 Tbs?…) and about 1/3C honey/molasses, as well as a bit of baking powder&soda. Its not quite sweet enough. Do you have any suggestions other than more honey/molasses/sugar? (I actually ran out of sugar about a month ago and have just been finding other ways to cope without buying more haha)

Idea: set aside a tab or list of recipes by ingredient. Example: All sorts of recipes using coconut butter. There are several ingredients that you use so frequently! I finally caved and ordered coconut butter. It came today and I’m surfing around to carefully select which recipe I’ll try first. Love your stuff. Which coconut butter recipe should I start with?

Hi Katie,

Firstly, I love your website! Thank you so much for sharing your recipes with all of us, including those of us in Australia! I have recently had a little boy and made the decision to cut out sugar and gluten so I have the energy to keep up with the little fella! Fortunately I have a sweet tooth! I say fortunately because your recipes have allowed me to contine to enjoy and satisy my sweet cravings without the guilt or decline in energy levels. Now I would like to share one of my favorite recipes with you!

Better for you Pancakes (Serves 2)
1 cup Traditional Oats
3/4 cup Fat-free Cottage Cheese
pinch of cinnamon
2 eggs
Combine in a food processor or blender, panfry, then top with your favorite fresh fruit and a dash (behave) of maple syrup!

So delicious! I hope you enjoy them as much as I do!

I am always hungry at night lol

About 2 hours after dinner, I start getting hungry for a nighttime snack. Usually I’ll have one of my dessert recipes. Or, a Mountain Mint Wild Bar and some fruit or maybe a cookie dough larabar and some fruit. And maybe some almond milk too. There’s usually chocolate involved :) .

Katie your blog has opened my eyes to a beautiful world of chocolatey goodness. I was just wondering if you could posibly make a vegan, healthy pumpkin pie. Hey Alan!

It’s so funny you’d mention snickerdoodles, because I JUST made some today!! I haven’t posted the recipe yet, but I’ll write it out quickly here. If you try them, I’d love to know what you think!

Skinny Snickerdoodles

(Makes 20-26 cookies)

3/4 cup ww pastry flour (or white?)
1/4 tsp baking powder
level 1/4 tsp salt
1/4 tsp cream of tarter
1/4 tsp plus 1/8 tsp baking soda (level)
1/4 cup white sugar (or sucanat?)
1/2 tsp pure vanilla extract
1 and 1/2 tablespoons nondairy milk of choice
1/4 cup vegan butter substitute, such as Earth Balance

Preheat oven to 350F. Combine dry ingredients and mix very well. In a separate bowl, melt the vegan butter, then stir in vanilla and milk. Pour dry into wet and mix again. Form balls. You can opt to cook them as-is, but for true snickerdoodles, roll each ball in a mixture of cinnamon and sugar (either equal parts cinnamon-to-sugar OR two parts sugar to one part cinnamon, depending on how cinnamon-y you want your cookies). If you want soft cookies, you will need to get the balls very cold before cooking them. (So roll the balls, cover in the cinnamon-sugar, then fridge until cold.) Cook for 10-12 minutes. They’ll look underdone when you take them out, but that’s ok. Allow to cool before trying to move them from the cookie sheet. Store in a plastic container.

Would sugar cookies be the same, just without the cinnamon and cream of tarter?

Thanks for leaving a comment! I am always too verbose for twitter lol :) .

You can use cookie cutters on any of the larabar-type recipes (like the pb cookie dough cookies). You could probably also do the snickerdoodles into cookie cutters, but I’d fridge the dough after cutting them, because they’re softer if they’re cold before being put in the oven.
Same with the dough for the pumpkin-stuffed cookies (minus the pumpkin part)… I *think* it’d work with cookie cutters, but I’ve never tried it.
Oh, and the graham crackers can be cut into shapes too. Hope that helps!

Hi Katie!

Thought I’d let you know that I included some of your gingerbread PB and pumpkin PB in the holiday gift baskets I made for my friends — they adored both! I also included a butter recipe of my own — caramel apple peanut butter. I believe I blended up…1 cup of homemade PB, 1/2 cup unsweetened applesauce, a splash of vanilla, a LOT of cinnamon (maybe a tbsp?), 1/2 tsp red food coloring, and around 1/4 cup of honey. Although I’m sure it would taste fine with agave instead of honey, or even without sweetener. You should try it out sometime! :)

Hi Katie,
Since I found your blog two weeks ago, I have been making the 1-Minute choc cake everyday and have recently started baking the Not-Guilty choc chip cookies. They are out of this world! I love that you use whole grains, a bit of healthy fat and minimal sugar in your recipes. That is just the way I like my desserts! I also have a little baby, and am really excited that there are healthy desserts we can make together when she gets older. Yes, we will be making your desserts for years to come!

A couple questions for you: 1) You seem to use spelt flour in a lot of your recipes. Is there a reason you opt for that particular flour? Can I sub with ww pastry flour or oat flour? 2) I am planning to make your sugar cookies next. How did you make the frosting for those cookies? Also, do you have any good recipes for healthy cream cheese frosting (for cinnamon rolls)?

Hi Denise!

I like spelt flour because it has a light texture for a whole-grain flour. But yes, you usually can sub with a different flour. Depending on the recipe, you’ll get a different taste, but texture-wise it won’t be a problem.

Hi!!
It depends what you want to use the blender for… honestly, I use my Magic Bullet more than the Vita-Mix! I love the MB because it’s single-serving and because it’s so easy to clean (just pop the cup in the dishwasher). It’s only $49, and if you print off a coupon for BedBathBeyond, you can get 20% off as well :) .
Other than that, I also use my Cuisinart food processor a lot. It’s 7 years old and still works really well!

I love how they have so many healthy twists to them, yet there are still SO delicious. I have to admit, I’m a little disappointed that there isn’t a section for low-carb desserts for those of us who are either on Atkins or are diabetic (the two diets are pretty much identical). I also have a thin mint cookie dough ball recipe I haven’t posted yet. I like them uncooked, but you can try flattening them and cooking. Maybe you could use oat flour or Arrowhead Mills gf mix?

Thin Mint Cookie Dough Balls

(Makes 20-28, depending on how big you roll them)

3/4 cup whole wheat pastry flour (maybe try oat flour or a gf mix? I haven’t tried it, though)
6 T plus 1 tsp cocoa powder
just under 1/4 tsp salt
1/4 tsp baking soda
1/4 cup plus 2 T sugar (or xylitol)
3 T maple syrup (or agave)
1/2 tsp pure vanilla extract
1/4 cup canola or coconut oil (You can get away with 3 T and adding a little almond milk)
1/4 tsp pure peppermint extract

I have only tried one of your recipes so far, but am excited to try the rest. I have found out that I am sensitive to wheat, so your gluten-free ideas sound great. I am also trying to lose weight, so your recipes will help me have some dessert. I do have a couple of questions. Is there a difference between coconut butter and coconut oil (which is in solid form in the store)? Also, do you think brown rice flour could be a substitute for the spelt flour?

I don’t think you can sub brown rice flour 1-for-1 for spelt, because it lacks gluten (a binder). I don’t know much about gf baking, but I do know they advise you to mix up flours and add xantham gum… Sorry I can’t be more helpful!

A friend just posted a link to you on FB and I’m excited! I’ve been a vegan for awhile and love to share and be health!! My favorite vegan recipe website modernmanna.org has a yummy vegan French toast recipe (I add cinnamon to mine):

French Toast
1 cup soy or rice milk
1 cup cashews
3/4 cup dates
2 tablespoons egg replacer
1/2 teaspoon sea salt
1 teaspoon vanilla

In a blender combine milk, cashews, and dates. Blend until smooth. While still blending add the rest of ingredients. Pour into a pie or cake pan. Dip bread on both sides and brown in a lightly oiled skillet. Top with pure maple syrup or your favorite fruit topping. Extra batter may be refrigerated and used later.

So my family isn’t really that big into eating healthy. My dad is the king of fried foods, mom is the queen of candy and soda. But I think I am going to try one of your dips or desserts for a family members birthday party this weekend and see how it goes over. I won’t be able to tell them it is healthy!! Hi, I’m sure you’re just inundated with comments and questions all day so I won’t be offended or anything if you don’t ever get to this question.. I’m a mostly-vegan with annoying stomach issues so I can’t do (a lot) of gluten or (a lot) of sugar or fructose or sugar alcohols… yeah, tons of fun. I found these great bars, Nugo Slim, that are sooo close to perfect. Except (1) I’d like to step away from relying on whey protein and (2) they’re kind of light as in I eat one and they’re fun and all but don’t really hit the spot. Like Crunch bars.

So I was thinking, who better to make a vegan delicious version than you? The soy crisps they use are fun, but maybe if they also had something with tooth like almond meal or oats or..? So they’re more a 200 calorie 20g protein “meal snack” or breakfast (in a diet that is 5 small meals a day) and cheaper per serving would be great too, of course.

Katie your website has just lit up my life. I’ve sworn off sugar, white flour, chips, excessive refined oils (but not nuts and seeds) for a year, as a present to my husband for valentine’s day. I was wondering, it seems like most of your dessert recipes call for a food processor. Are there any that don’t need one or that I can use a blender for instead?

Many of them don’t need a food processor! Or you can use a Magic Bullet for many of them :) .
But if it specifically says food processor, I can’t vouch for the use of a blender. (And in the chickpea cookie dough dips, I would definitely caution against a blender because it’ll crowd the blender and the top beans won’t blend at all… maybe try it in batches if you must use a blender?)

Katie, I love your recipes and are using many of them. I would like to say though, that canola oil is really a bad choice. By the time it reaches the plastic bottle made with BPA and gets to the grocery stores it is rancid. I think you would be interested in reading about the health value of coconut oil and safflower oil. Thank you for giving us your forum for healthy options.

I actually do use coconut oil almost exclusively when I’m baking (and olive oil is a favorite for cooking). But I try to give options for others, based on what they might have. I definitely stress the awesomeness of coconut oil every chance I get, though ;) .

Hi, Katie. I just found your site through a link on Pinterest. I really appreciate your kindness in sharing all these wonderful discoveries with the world. I am a Mom of 3 gorgeous Princesses, Jasmine (6), Ariel (4) and Bella (2). My husband and I are transitioning our family to a vegetarian diet (I am a veg, he is getting there). With 3 little ones, a husband who works away and a homeschooling my older 2, I am super-busy. But I’ve made efforts to cut back and elminate sugar and white carbs for them, too. Sadly, because of my lack of time to make old recipes healtheier, we just haven’t had sweets around and fell prey to purchased cookies and candy on occassion. NO MORE! Now that I’ve found your site, I have a wonderful resource for tested recipes that are good for my family, and I am so excited.
I made your original fudge babies last night. Everyone gobbled them up and asked for more, including my husband and visiting sister. She politely declined, as a dieter, until I said they had no sugar. The rest is history, and so are the fudge babies. You just saved me tons of time and money trying to reinvent the wheel. I’m glad you are taking the hard work out of people like myself. I appreciate the recipes! I have been recovering from cancer, and people say that weight gain does not happen during this time, but I’m proof it does. I have slowed down sooo much, that I feel that every ounce of food I eat goes to fat. It is nice when you can just get a ready made recipe right there for you. May God bless you for your work!

Hi Katie! First of all, THANK YOU!! For this awesome blog, for taking the time to make & test all these recipes, for the inspiration, and for sharing it all with us! My entire family has loved literally every recipe I’ve made from here, and all our guests as well – most of whom aren’t into eating “healthy”. They can’t tell the difference! SO YUM! You’ve gotten my little girl (& husband!) to eat *healthy* food – and enjoy it!
Second, I was wondering – is it possible to mention how much each recipe yields? Or are we to assume that all recipes are made for one (or for small quantities)? It’s possible that you list this somewhere for each one, and I’m just missing it. It would be really helpful to have an idea before starting each recipe – ie in terms of planning/possibly doubling, etc. Thank you!
