love the organization!!!!
OMG, this page is seriously SUPER DUPER AWESOME … I’ll be living off this page from this day onwards
Hi Katie
I have just discovered your blog and I am loving your food, especially your breakfasts. I’m not a vegan and didn’t realise how easily vegan food could be made. I thought you might like a veganed up version of my peanut butter and banana porridge (Thats what we call oatmeal in NZ). Thank you so much for your awesome recipes!
SO organized, how long did this take you!? :0
You are so cute! I love all of your recipe titles…I can see a cookbook forming already!
Just found you through Heather Eats Almond Butter, because I am so intrigued by all of the blended grains and puddings…I can’t wait to try some of them!
Yay for a recipe page!
What a cute blog girl! I love your recipes!
Hello Katie, can u possibly send me your chocolate cake recipe, the one that was made by video with your daughter. I saved it for making for my grand daughters birthday cake , but it was deleted by mistake . I would be most great full ,Thank you . Mary
mary,
I think you’re mistaking my blog with someone else’s. I’ve not done a video post on chocolate cake. I hope you find what you’re looking for. Good luck!!
this page is like the best present ever! I feel like its christmas and can’t wait to try it all. I thought no one in the world loved chocolate and peanut butter as much as me. and now there is someone and someone who does it healthy! Which is always my struggle since I am also a fitness fanatic. Now is there a chocolate chip banana bread recipie on here somewhere???
Thanks Sarah!! It’s so fun to hear from a fellow pb-and-chocoholic!
Sadly, no chocolate chip banana bread recipe… but maybe try the “banana bread in a bowl” recipe with chocolate chips thrown in!
http://chocolatecoveredkatie.com/2007/10/15/abc-another-breakfast-creation/
And I’ll have to work on the chocolate chip bread, because now I want some too!
Katie! Ahem! You never posted the mushroom stroganoff recipe! And if your archives are correct (which, I, erm, assume them to be since they are archives and organized by a computer :p) you said on Oct. 29 2008 (a long time ago) that you would post it in your next post. Either I have yet to find it or you never did??
Here ya go! http://chocolatecoveredkatie.com/2011/02/03/high-protein-mushroom-stroganoff/
I have some recipe requests. Not sure if you’ve made any of these, but: banana bread, rice crispy treats, pizza, homemade veggie corn dogs, brocoli cheese soup, gingerbread men cookies, and danish.
Other than my raw gingerbread men, I don’t think I’ve done any of those… so I’ll have to try for you!
I want to try your gingerbread butter or raw gingerbread men!
hi! i just ran across your blog and have now bookmarked it – spending my night digging through to catch up! just wanted to say how much i appreciate the recipes as well as health and body perspective as posted elsewhere.
Aw Sarah, I’m so glad you found me!
Ok. I’ve just stumbled across your blog and am now severely annoyed that I’m only just finding it and haven’t been trying all these delicious recipes for ages. I think that some of these may prove to be real winners for me on my early run days – which is awesome for me as I need something before a run and have struggled to find stuff that works. Now I just have to decide what to start with! I see some very yummy days coming up though that’s for sure
Thanks for such a sweet comment! I’m so glad you found my blog. It’s always nice to know other running foodies!
HI KATIE!(:
I really love your recipes♥
After spending hours on the net, i finally found what i wanted to see(:
I’m on a diet now, so is there any diet plan i could follow from here to loose weight???(:
Thanks!
God bless!(:
Hey Rachel,
. I can’t really recommend a diet plan for you, since I don’t know anything about your specific situation… and I’m also not qualified as a nutritionist or anything. But most of my recipes can be easily modified to fit a low-calorie lifestyle. Just use the optional applesauce in place of oil in my recipes, and try stevia in place of sugar.
I’m so glad you found me
Oh, okay!I will!^^
Thanks a million!:D
Hi
I adore your blog, it has lots of tempting and perfectly healthy recipes, and lots and lots of chocolate and peanut butter!
I’m a fairly new vegan since moving to America but when I visited home recently (my beautiful Australia) I found eating vegan quite a challenge, especially at restaurants. Do you have any advice on veganizing meals at not so vegan-minded restaurants?
Thanks and please please keep posting your yummy goodness!:)
Hi Michelle!
I have an awesome friend, Bianca (from a blog called Vegan Crunk), who once wrote an awesome guest post for me about eating out: http://chocolatecoveredkatie.com/2010/08/31/dining-out-vegan-style/
And thanks for the kind words!
Thanks, that post has some really good ideas, especially about asking Chefs to make alterations and checking ahead of time.
You rock!
OKAY KATIE!^^THANKS!I WILL!^^
I love the updated page! Well done Katie
Love the new recipe page, Katie! So easy to navigate!
Thanks, Laura! Oh my word, it’s so hard to keep everything organized when there are so many recipes and they all seem to fit into many different categories
.
Which is exactly why mine aren’t better organized. LOL!
Awe! This WHOLE page is making my life complete!!!! I love the organization!
I love you…. hahahaha
I love your recipes!! What kind of oats do you use for the baked oatmeal cakes?? Also I attempted to make coconut butter and failed miserably!! I have a magic bullet, any tips??
Sadly, I wouldn’t have tried it in a MB… I just don’t think it’s powerful enough. If you can find it, I highly recommend buying the Artisana. It’s expensive, but a little really does go a long way (when you think about the fact that a candy bar is like a dollar, but you eat it in a single sitting!)
Oh, and I use regular rolled oats for the boatmeal (either Quaker or Old Wessex organic. I don’t use quick oats for this recipe).
Love,
Katie
Hey Katie,
I tried this recipe i found on the web the other day (can’t remember where i found it though) and thought i should share it with you.
Its for a chocolate avocado mousse recipe
1 Avocado
1/4 cup of cacao powder
Agave nectar or honey to taste (i used 1/4 cup, but i like it sweet)
1 tsp of vanilla
Blend it all together until it is very smooth and creamy, put in the fridge to chill and enjoy the richest chocolatey mousse ever.
Next time i’m going to add some hazelnut butter, so it will taste like a nuttella mousse…oh i am soo excited.
Thanks, Jamie! I love your idea to add hazelnut. I don’t think there could be anything better than nutella mousse!
Hi Katie,
this is fantastic. The only thing I miss from my non vegan days are the desserts. I love to bake and find it really hard to find nice/DELICIOUS vegan treats for me and the family, who are not yet vegan. I am so excited I am going to spend hours sifting through your recipies. I can’t wait to get started.
Thank you so much for being here and saving my sweet tooth.
Yours in gratitude,
Sarah
Aww thanks for such a sweet comment, Sarah!!!
Can I make a really random suggestion/comment??? Okay I’m going to whether you want it or not- I’m good at unsolicited advice lately. Anyway, I come to this page, and I get excited about the pictures, so I try to click them.. but they aren’t links to what I think they should be..
Ex: I am going to make some oatmeal pancakes for breakfast, yumm! So I clicked the picture of the delish-looking pancakes.. which just took me to another picture of the pancakes. Still delish-looking, but I was hoping it would take me the same place as the hyperlinked text below.
Not sure if it’s possible to link the picture too?? That’s my suggestion. Either way, I’m making these pancakes for breakfast, and I’m excited!
Wow, what a great idea! You can tell how un-tech-saavy I am; I never even thought of this!
Honestly, my recipe page frustrates me to no end… I have hundreds (thousands?) of recipes and this page feels SO unorganized. But I’m at a loss for how to better-organize it. And my most-recent recipes aren’t even on here yet!
In any case, I’ll make a note to someday (when I have a free moment lol) change the photos to links!
Hi Katie!
I think your organisation is perfect!
everyone can find what they want very easily ,I guess (even if I can’t believe these are all of your recepies if you make a new blog entry every day..
Just another suggestion: Maybe you could also group them by purposes like wedding *g*, holidays and so on….
Recently I was looking for some vegan party snacks (especially fingerfood) that are as healthy as possible and especially sugar-free ( I can’t prepare a batch of muffins without eating some – too many- of them …) and easily to transport on a bicycle (so facy creamy cakes don’t work unfortunately..). Do you have any suggestions?
.
Would be cool if you had an idea
Thanks and keep posting
Janine
Hey Janine!
. There really are a ton of options, so it’s hard for me to list specifics for you. But perhaps the fudge babies? Or I know another girl who bike rides likes the oatmeal cakes here: http://chocolatecoveredkatie.com/chocolate-covered-recipes/all-things-oatmeal/oatmeal-cake-flavors/
If ou look through my dessert recipes, many of them can be sugar-free
Thanks for the great recipes, my friend Gloria brings in some of the stuff she makes from your recipes and they are so yummy thanks both of you
.
I also have my girlfriend going to make some of your recipes
Greetings! I LOVE YOUR BLOG. I have tried many things. I keep sending people your way via facebook and such. Keep it up!
Wow, Carrie, this MADE my day!!! Thank you so much! I appreciate that more than I can even tell you
.
Have you used coconut crystals as a sweetener? Tastes very similar to brown sugar or sucanat but healthy, low glycemic value.
Nope, never tried em!
I made your brownie recipe last night and am excited to try the blueberry pie pancakes, thanks for all the recipes. Our daughter is being treated for ALL leukemia, so we have really made eating healthy a priority
Your daughter (and your family) is in my thoughts and prayers. I have a friend who fully recovered from Leukemia, and he says the biggest things that helped him were staying positive, smiling, and having a lot of loving support. Your daughter obviously has the loving support!
Thank you for the prayers, we made the blueberry pie pancakes last night and the kids said they were the best pancakes ever! Ahh…so many good foods, so little time LOL
Have a very Blessed day.
Awww that made me smile so much!
Okay, so I am completely obsessed with your array of yummy desserts! I am not vegan, but I am pescetarian. I used to eat meat, and the only thing I miss is BBQ sauce. I know that sounds weird but I love it so much! Unfortunately, now I don’t know what to eat it on! Does anyone have an idea?
Also have you tried using truvia as a sweetener?
I really like NuNaturals stevia, but I haven’t tried Truvia.
Oh, and for bbq sauce, this is my favorite: http://chocolatecoveredkatie.com/2011/01/25/cauliflower-chicken-nuggets/
But other ideas include: beans, tofu, roasted veggies, mixing it with salad greens or using it in place of dressing on salad, or even mixing it with rice!
Just FYI — unless I missed it (a very likely possibility, haha), it looks like your Soy-Free Vegan Cream recipe isn’t linked to here. I’m about to make your Strawberry Shortcake Pancakes (yum!!) I just bought & couldn’t find it.
On a side note, your blog is freaking awesome!! I began w/ your Chocolate-Chip Blondies and have made a ton of your recipes since, and they have all been crazy delicious! I’m so happy to have found a healthy vegan dessert site — thanks!
Aww thanks so much for your sweet comment, Caroline!! And thanks for letting me know about the cream; you’re right that I skipped it! I’ll make a note to fix it today
.
**Ignore the random “I just bought” in the middle of my sentence. Editing mistake, whoops!
I love your baked oatmeal for one because it’s so customizable and you can keep around for an easy, healthy breakfast!
i’ve been hunting for new recipes lately and feel SOO lucky to have stumbled upon this blog. i absolutely can’t wait to bake away
Awww yay!!! I’m so happy you found me!
I love love love your blog, Katie. I view recipe after recipe, only imagining when I can go home from work to try something new. I’ve tried some your creations on my food blog and have only received great feedback.
I am dying for cinnamon rolls. I don’t think I’ve eaten any in at least 5 years. Do you have a recipe for those?
I’m working on a recipe for yeast-less ones… but I need a few more test runs
.
Hi, Kate! I’m a teenager who just discovered she has a long list of food allergies. My allergies include; milk, soy, wheat, rice, peanuts, corn, beef, and I’m sure I’m forgetting something. I already knew about your website, but quickly came back when I heard of my food allergies. This is so helpful! It’s nice to know I won’t have to give up sweets! I’ve found a lot of great recipes that cater to my restrictions! Thank you so much!
Hi Bethany!! I am so glad you found me… and good luck in your new lifestyle. Having to give up certain foods can sometimes lead you to actually EXPAND the amount of foods you eat because you have to get creative. I know I eat so much more variety now than I ever did before I stopped eating meat/fish/dairy!
Hey! I’m in loooove with your website! I’ve just recently become super health-conscious and love experimenting with recipes. I’ve never been good at following recipes, but I usually use several recipes at once as references and your recipes have been at the front of all my desserts lately. I’ve stumbled on a problem, though. I’m trying to make a flourless chocolate cake using sweet potato. I haven’t been able to find any recipe of this type, either. I came up with a recipe using about a cup of sweet potato puree, 3 eggs, half a banana, a handful of oats, copious amounts of cocoa powder (6 Tbs?…) and about 1/3C honey/molasses, as well as a bit of baking powder&soda. Its not quite sweet enough. Do you have any suggestions other than more honey/molasses/sugar? (I actually ran out of sugar about a month ago and have just been finding other ways to cope without buying more haha)
Thank you!
Aww thanks so much, Kate!
.
I really don’t have any advice… I never know how something will turn out until I experiment. Edible experiments are fun
Looks great. You have revamped your blog a couple of times. Both times have made it much easier to find recipes. Thanks.
Yes, I keep trying my best to make it easier to navigate! Every time I get a better idea, I try it out. I still feel like it could be easier for y’all… the thinking cap is still on
.
georgous new page katie!!
Hi Katie!
I just found your blog today when I was searching for a banana pancake recipe for one…sooo delicious! I was very happy to discover that you’re also vegan! I began eating vegetarian recently (about 7 months ago) and I’m always searching for yummy new recipes! Thanks for all of the great recipes!
Oh I am so glad you found me! Chocolate hugs, Paige!!
Katie!
Idea: set aside a tab or list of recipes by ingredient. Example: All sorts of recipes using coconut butter. There are several ingredients that you use so frequently! I finally caved and ordered coconut butter. It came today and I’m surfing around to carefully select which recipe I’ll try first. Love your stuff. Which coconut butter recipe should I start with?
Kate
Way ahead of you
. At the end of every post, there are tags (right before the comments). Here’s the coconut butter tag: http://chocolatecoveredkatie.com/tag/coconut-butter/
My favorite is the raw chocolate fudge cake
of theres a recipe that involves flower i was wondering if i could just use oat bran? somehow i lost my flour :/
hi! question: which pancakes are in the picture for the pancakes link? i drool every time i visit and bought whole wheat flour just to make some!
Hi Mandee
.
.
Those are the blueberry pie pancakes (with cheesecake sauce). Both are linked under the pancake link
Katie, do you have any recipes that feature plums?
I don’t
. But I have my Peach Breakfast Cobbler that would work perfectly with plums instead!
I am so happy to have found your blog!
I’m so happy you found me too!! Chocolate hugs!
This recipe page is freaking awesome! Love that it’s so organized!
Can you do mine for me? Ha ha ha!
LOL I wish someone would do mine, too! Oh to be like Samantha on Bewitched…
Hi Katie,
Firstly, I love your website! Thank you so much for sharing your recipes with all of us, including those of us in Australia! I have recently had a little boy and made the decision to cut out sugar and gluten so I have the energy to keep up with the little fella! Fortunately I have a sweet tooth! I say fortunately because your recipes have allowed me to contine to enjoy and satisy my sweet cravings without the guilt or decline in energy levels. Now I would like to share one of my favorite recipes with you!
Better for you Pancakes (Serves 2)
1 cup Traditional Oats
3/4 cup Fat-free Cottage Cheese
pinch of cinnamon
2 eggs
Combine in a food processor or blender, panfry, then top with your favorite fresh fruit and a dash (behave) of maple syrup!
So delicious! I hope you enjoy them as much as I do!
Cheers,
Jess
Aww thanks so much for sharing, Jess! Your sweet comment made me smile so much
.
All of these sound delicious. Can’t wait to try. My kids of course are always wanting dessert and this will make it easier to give them a healthy treat without guilt. Thanks for helping us eat healthier while still enjoying our faves.
Aw you are so welcome!!
I have a question for you: What do you eat at night (if you get hungry)? I get hungry every night and need some good ideas that are both healthy and won’t keep me up, do you have any ideas?
I am always hungry at night lol
About 2 hours after dinner, I start getting hungry for a nighttime snack. Usually I’ll have one of my dessert recipes. Or, a Mountain Mint Wild Bar and some fruit or maybe a cookie dough larabar and some fruit. And maybe some almond milk too. There’s usually chocolate involved
.
All of those sound delicious!! Thank you
I wonder how your ultimate chocolate fudge pie would be if, you combine that recipe with the “Honey I Shrunk the Reese’s” page. I think I am going to give it a whirl tomorrow. Thank you for the inspiration!! I love your site!
Ooh I like your thinking. Chocolate-peanut-butter pie has been on my “to make” list for a long time. There are so many variations of that pie I want to try (chocolate-mint being first)!
I discovered this site yesterday and have already made four of your recipes – all so good and filling, and I can’t wait to make them for my family and friends. Have you published a cook book? ‘Cause I could see it being a real success… Thanks for sharing your talent!
Aww, thanks for such a sweet comment! I have actually *just* started on a cookbook!
Katie your blog has opened my eyes to a beautiful world of chocolatey goodness. I was just wondering if you could posibly make a vegan, healthy pumpkin pie. I love pumpkin pie and all your other pumpkin recipies have been winners! So I was thinking a pumpkin pie would be a great addition to the big box of recipies.
I have a chocolate-pumpkin-pie recipe that I still need to post! Actually, I did post it for a reader already, here: http://chocolatecoveredkatie.com/2011/09/06/the-ultimate-chocolate-fudge-pie/comment-page-2/#comment-141586
I have NEVER liked cooking or baking or anything that involves food. Since stumbling upon this website I have found myself in the kitchen trying out new recipes every chance I get! I love it and thank you so much for allowing me to find the fun in food!
Aww thanks, Brittany!
I actually am exactly like you… I don’t like to cook! But I like to eat, which is why I try to make all my recipes really quick and easy.
I love your pictures. What camera do you have?
Nikon D5000, but I edit them ALL in photoshop
.
Hi Katie,
I just wanted to ask if you had a healthy, vegan version of a cheesecake, it’s my favorite but I don’t want the bad things in it.
Please let me know if you do
I have a raw cheesecake: http://chocolatecoveredkatie.com/2010/03/05/30-seconds-to-raw-cheesecake/
It is delicious, but it doesn’t taste like NY-style cheesecake. I also have a tester recipe up that needs a little work but is a start: http://chocolatecoveredkatie.com/peanut-butter-cookie-dough-bread/vegan-cheesecake/
If you try the second one (or a variation of it) out, I’d love to hear your thoughts, as I’m really trying to figure out how to make a cheesecake that tastes like traditional NY Cheesecake. Like you, I adore cheesecake and want to find a vegan and healthy version that actually tastes GOOD!
wow! thanks katie, you’re the best! i’m gonna try this over the weekend and i’ll definitely let you know
Hi i am baking my own boxed sugar free cake mix what would be a good sub for the three eggs and 1/2c of oil besides egg whites for the eggs?
Hi Katie,
I have a question. I make tons and tons of your recipes, and I just started a blog (like, LITERALLY today). I’m sure that my posts will be about baked good sometimes. If I make one of your recipes, is it okay to include it in a post as long as I credit you and link to your site? I’ll take my own photos.
Let me know! Thanks
I do ask that people not copy my actual recipe into their post, but link back instead. (I just saw your post, and the way you have it is perfect!) I don’t care if people use my photos, though. I just need to keep the actual recipe on my site in case I want to take it down later to put in the book.
Oh, also, I couldn’t comment on your site because I don’t have a google or wp account, but here was my comment:
Awww your post put a huge smile on my face! I’m so excited you liked the pancakes!
Good luck with your new blog!!!
Yay! Thank you!
Hi Katie. Love your site and all the luscious looking recipes. Printed many off hoping to get around to making them. I’m just curious, I know this is a “chocolate” site and there is nothing better than eating chocolate every single day, but I’m wondering what you eat for your mealtimes? Your desserts are so healthy, I’m wondering what type of foods you eat on a regular basis. Can you share sometime? thanks.
Hi Kathy!
Here’s a link to some of my non-dessert recipes: http://chocolatecoveredkatie.com/chocolate-covered-recipes/non-dessert-recipes/
I am a low carb guy and really appreciate what you do!
Aww thanks, Tim!
I have recently found your website through Pinterest. I must say that your recipes sound delicious and I can’t wait to try some of them. Keep up the great work and I look forward to the next recipe in my in-box.
I’m so glad you found me!
Where have you been all my life! Im in serious trouble cause I want to make one of your recipes every day! They are such a great healthy alternative and so simple with so few ingredients…I also enjoy all the humor! Entertaining and inspiring….I will be enjoying your page for as long as we both shall live! lol
Awww thanks, Sarah!!
I love your blog! You’ve inspired me to go vegan (again). I was vegan for 1 year and then I returned to Germany ( I am German…) and it turned out to be really difficult as everyone had an opinion about what I would eat. I felt very insecure. Well, now I decided WHAT EVER! I am going to turn vegan. It’s my life, I can do what ever I want.
Have a great day!
Hello,
I love your blog, SO many of these things look absolutely fabulous and I’ve even tried a few. I love that you make most of them healthy! Clearly I realize this blog is based in chocolate but I was wondering if you could do a snicker doodle cookie. I see you have a snicker doodle pancake and blondies and why not just round it off with actual cookies! Thank you so much for all your time.
-Alan
Also meant to mention sugar cookies. I know your adversion to sugar but I think sugar cookies are different than adding sugar to recipes. Just my opion
Hey Alan!
It’s so funny you’d mention snickerdoodles, because I JUST made some today!! I haven’t posted the recipe yet, but I’ll write it out quickly here. If you try them, I’d love to know what you think!
Skinny Snickerdoodles
(Makes 20-26 cookies)
3/4 cup ww pastry flour (or white?)
1/4 tsp baking powder
level 1/4 tsp salt
1/4 tsp cream of tarter
1/4 tsp plus 1/8 tsp baking soda (level)
1/4 cup white sugar (or sucanat?)
1/2 tsp pure vanilla extract
1 and 1/2 tablespoons nondairy milk of choice
1/4 cup vegan butter substitute, such as Earth Balance
Preheat oven to 350F. Combine dry ingredients and mix very well. In a separate bowl, melt the vegan butter, then stir in vanilla and milk. Pour dry into wet and mix again. Form balls. You can opt to cook them as-is, but for true snickerdoodles, roll each ball in a mixture of cinnamon and sugar (either equal parts cinnamon-to-sugar OR two parts sugar to one part cinnamon, depending on how cinnamon-y you want your cookies). If you want soft cookies, you will need to get the balls very cold before cooking them. (So roll the balls, cover in the cinnamon-sugar, then fridge until cold.) Cook for 10-12 minutes. They’ll look underdone when you take them out, but that’s ok. Allow to cool before trying to move them from the cookie sheet. Store in a plastic container.
Would sugar cookies be the same, just without the cinnamon and cream of tarter?
Oh my, I just tried your melted banana idea in my oatmeal! I love banana’s and never would have thought about melting one but it was AMAZING! Thanks for the great idea!
Just tryed the one minute chocolate cake =) YUMMY!! was size of a mug and very satisfying indeed. Dont be fooled by the quanity lol i thought i would have still been hungry afterwards but nope no way im too full =D big points in my book! Now added to my favourites
Hey Katie
I’m the girl looking for cookie cutter recipes
Thanks for leaving a comment! I am always too verbose for twitter lol
.
You can use cookie cutters on any of the larabar-type recipes (like the pb cookie dough cookies). You could probably also do the snickerdoodles into cookie cutters, but I’d fridge the dough after cutting them, because they’re softer if they’re cold before being put in the oven.
Same with the dough for the pumpkin-stuffed cookies (minus the pumpkin part)… I *think* it’d work with cookie cutters, but I’ve never tried it.
Oh, and the graham crackers can be cut into shapes too. Hope that helps!
Hi Kate,
I made you fantastic oatmeal larabars and loved them! I want to make them again but did not save the recipe.
i tried to click on the link but didn’t have any luck. Any ideas?
Ooh thanks for letting me know the link wasn’t there. I’m fixing it right now. Meanwhile, here’s the link: http://chocolatecoveredkatie.com/2011/11/14/oatmeal-raisin-cookie-larabars
WOW! you are so quick! Thank you so much! I can’t wait to make them again when I get home from work.
I was wondering if you drink/eat any soy protein? I know it takes a little work to get a good amount of protein as a vegan (me being one). If so, what brand do you use??
I don’t really eat any protein powders (I don’t think I’ve had any in over a year)… but I’ve heard great things about Sun Warrior! Everyone seems to love that one.
I was wondering if you like/make crepes! I think that would be a wonderful addition to your wonderful recipes (if you like them!) Just a thought!! Plus I would love to know how to make them
crepes are just thinned out pancakes with fruit and other fillings rolled inside (:
Wow, you are so right! My blog needs a crepe recipe!! It’s going to the top of my list!
Hi Katie!
Thought I’d let you know that I included some of your gingerbread PB and pumpkin PB in the holiday gift baskets I made for my friends — they adored both! I also included a butter recipe of my own — caramel apple peanut butter. I believe I blended up…1 cup of homemade PB, 1/2 cup unsweetened applesauce, a splash of vanilla, a LOT of cinnamon (maybe a tbsp?), 1/2 tsp red food coloring, and around 1/4 cup of honey. Although I’m sure it would taste fine with agave instead of honey, or even without sweetener. You should try it out sometime!
Wow, that sounds incredible! Bookmarking your lovely recipe right now!
Hi Katie,
Since I found your blog two weeks ago, I have been making the 1-Minute choc cake everyday and have recently started baking the Not-Guilty choc chip cookies. They are out of this world! I love that you use whole grains, a bit of healthy fat and minimal sugar in your recipes. That is just the way I like my desserts! I also have a little baby, and am really excited that there are healthy desserts we can make together when she gets older. Yes, we will be making your desserts for years to come!
A couple questions for you: 1) You seem to use spelt flour in a lot of your recipes. Is there a reason you opt for that particular flour? Can I sub with ww pastry flour or oat flour? 2) I am planning to make your sugar cookies next. How did you make the frosting for those cookies? Also, do you have any good recipes for healthy cream cheese frosting (for cinnamon rolls)?
Thanks again, Katie!
Hi Denise!
I like spelt flour because it has a light texture for a whole-grain flour. But yes, you usually can sub with a different flour. Depending on the recipe, you’ll get a different taste, but texture-wise it won’t be a problem.
Here’s my favorite “Cinnamon Roll Frosting” recipe (It’s also known as cheesecake sauce). http://chocolatecoveredkatie.com/2011/06/20/cheesecake-pancakes/
Ah. Meant to say candy apple peanut butter, not caramel apple. /facepalm. Haha.
i would really like to subscribe to your daily blog via email but it wont seem to let me… how can i fix this?
Hi Erica,
Did you try this link: http://feedburner.google.com/fb/a/mailverify?uri=Chocolate-coveredKatie&loc=en_us
If you did, and it doesn’t work, can you tell me what error message you’re seeing so I can hopefully try and fix it? Sorry for the trouble!
Hi Katie, I found your site for the first time today from Skinnytaste! LOVEEEEE IT!!! So I never heard of a Vita-Mix til now…. it’s expensive! what are some good alternatives? Thank you so much and I am so excited to try your recipes. I shared your site with my office and a bunch of friends! YUM!
Hi!!
.
It depends what you want to use the blender for… honestly, I use my Magic Bullet more than the Vita-Mix! I love the MB because it’s single-serving and because it’s so easy to clean (just pop the cup in the dishwasher). It’s only $49, and if you print off a coupon for BedBathBeyond, you can get 20% off as well
Other than that, I also use my Cuisinart food processor a lot. It’s 7 years old and still works really well!
oh good!

Someone mentioned your website at weight watchers and a recipe for pumpkin bread oatmeal in a bowl but I can’t find the recipe?? I love your website!’. Happy New Year
Hi Leah!
This isn’t an oatmeal recipe, but I think it’s the one you mean: http://chocolatecoveredkatie.com/2011/09/29/pumpkin-bread-in-a-bowl
Thank you SO MUCH! I am a MASSIVE chocolate fan who really has to watch my weight. Not because of health exactly, just because I have been 215lbs and got down to a reasonable 130 and added a bit more on but don’t need to get anywhere near that 200 again! And I WILL NOT give up my chocolate! And your site will help in SO MANY WAYS not to give it up!!! Thank you, thank you, thank you!
Hi Katie!
Thanks!!
I LOVE LOVE LOVE your blog! However, if I could wish for one thing (kind of in response to your post about New Years improvements), I would love a more comprehensive list of recipes. I always find new ones on posts and that one leads me to another, and another, etc. Which is great! But sometimes they are difficult to find again, so maybe a complete list (of links?) would help!
Hi Callea,
I actually already have such a page

Hey Katie! I just felt like I had to post a comment on your blog. Your recipies are absoutly amazing I tell you. I don’t even bother to look at any other dessert sites. You got it all! I love how they have so many healthy twists to them, yet there are still SO delicious. I would love to see some more tips on taking pictures of the food- I always do that when I make your desserts, also so that I can show you what I’ve made
I totally love yours Lara bars, so quick, convenient and healthy. Any other recipes that are tasty yet healthy are a go for me
Anyways, I’m looking forward to some new dessert recipes, I’m always checking up on your blog when I have a sweet tooth
It really is my new obsession.. hehe! Thanks so much for all the recipes Katie, you really are great at what you do!

Awww thank you, Jess!!
Please make us a cookbook!
Making girl scout cookie larabars and the oatmeal cookie larabars for my dad. He LOVES dates and dried fruits and has a sweet tooth, but is also a diabetic. Can’t wait for him to try them!!!!!!
Like so many, I too find this blog absolutely amazing. My roommates think I’m completely crazy when I make stuff like pumpkin boatmeal and fudgebabies, but they are missing out, big time! So many amazing recipes!
This put a huge smile on my face when I read it this morning
.
Oh good, because your recipes put a huge smile on my face EVERY morning
I’m new to your blog and the treat in the picture above the “Baked Goods” link looks delicious but I can’t find a recipe to match that picture! Is there a recipe for what appears to be chocolatey-peanut buttery deliciousness?
Sorry for the confusion! I have way too many recipes; it’s hard to figure out the best way to categorize them all! That’s a Fudge Munchkin, stuffed with peanut butter

Just stumbled upon your page, and oh my, those photos are beautiful! Can’t wait to try out some of these recipes!
Kate…I just thought I should tell you that I’m in love with you and we should get married…. but it could just be the recipes talking… I’m not sure… *giggle*
Thank you for all the amazing recipes! I found you via Pintrest! <3
LOL! Can I have a chocolate ring?
Absolutely! It can even have strawberry creme filling!
I have to admit, I’m a little disappointed that there isn’t a section for low-carb desserts for those of us who are either on Atkins or are diabetic (the two diets are pretty much identical). I’ll probably bookmark this and go through all the recipes one by one to figure out which ones I could use when there’s a day where I’m just hanging out at home with nothing going on.
Absolutely love reading your blog!!! I am a huge fan! Do you have a recipe for gluten-free thin mint cookies? I tried one that was ok but I love your techniques and presentation. Let me know.. Keep up the great vegan goodies!
Ally
I have the raw thin mints:
I also have a thin mint cookie dough ball recipe I haven’t posted yet. I like them uncooked, but you can try flattening them and cooking. Maybe you could use oat flour or Arrowhead Mills gf mix?
Thin Mint Cookie Dough Balls
(Makes 20-28, depending on how big you roll them)
3/4 cup whole wheat pastry flour (maybe try oat flour or a gf mix? I haven’t tried it, though)
6 T plus 1 tsp cocoa powder
just under 1/4 tsp salt
1/4 tsp baking soda
1/4 cup plus 2 T sugar (or xylitol)
3 T maple syrup (or agave)
1/2 tsp pure vanilla extract
1/4 cup canola or coconut oil (You can get away with 3 T and adding a little almond milk)
1/4 tsp pure peppermint extract
I just discovered your blog via pinterest and am SO excited to try out so many of the recipes you have posted. Thanks for sharing:)
