      I have just discovered your blog and I am loving your food, especially your breakfasts. I’m not a vegan and didn’t realise how easily vegan food could be made. I thought you might like a veganed up version of my peanut butter and banana porridge (Thats what we call oatmeal in NZ). Thank you so much for your awesome recipes!

    this page is like the best present ever! I feel like its christmas and can’t wait to try it all. I thought no one in the world loved chocolate and peanut butter as much as me. and now there is someone and someone who does it healthy! Which is always my struggle since I am also a fitness fanatic. Now is there a chocolate chip banana bread recipie on here somewhere???

    Katie! Ahem! You never posted the mushroom stroganoff recipe! And if your archives are correct (which, I, erm, assume them to be since they are archives and organized by a computer :p) you said on Oct. 29 2008 (a long time ago) that you would post it in your next post. Either I have yet to find it or you never did??

    Ok. I’ve just stumbled across your blog and am now severely annoyed that I’m only just finding it and haven’t been trying all these delicious recipes for ages. I think that some of these may prove to be real winners for me on my early run days – which is awesome for me as I need something before a run and have struggled to find stuff that works. Now I just have to decide what to start with! I see some very yummy days coming up though that’s for sure 🙂

      I’m so glad you found me :). I can’t really recommend a diet plan for you, since I don’t know anything about your specific situation… and I’m also not qualified as a nutritionist or anything. But most of my recipes can be easily modified to fit a low-calorie lifestyle. Just use the optional applesauce in place of oil in my recipes, and try stevia in place of sugar.

    I’m a fairly new vegan since moving to America but when I visited home recently (my beautiful Australia) I found eating vegan quite a challenge, especially at restaurants. Do you have any advice on veganizing meals at not so vegan-minded restaurants?

    I love your recipes!! What kind of oats do you use for the baked oatmeal cakes?? Also I attempted to make coconut butter and failed miserably!! I have a magic bullet, any tips??

      Sadly, I wouldn’t have tried it in a MB… I just don’t think it’s powerful enough. If you can find it, I highly recommend buying the Artisana. It’s expensive, but a little really does go a long way (when you think about the fact that a candy bar is like a dollar, but you eat it in a single sitting!)

      Oh, and I use regular rolled oats for the boatmeal (either Quaker or Old Wessex organic. I don’t use quick oats for this recipe).

    I tried this recipe i found on the web the other day (can’t remember where i found it though) and thought i should share it with you.
    Its for a chocolate avocado mousse recipe

    1 Avocado
    1/4 cup of cacao powder
    Agave nectar or honey to taste (i used 1/4 cup, but i like it sweet)
    1 tsp of vanilla

    Blend it all together until it is very smooth and creamy, put in the fridge to chill and enjoy the richest chocolatey mousse ever.
    Next time i’m going to add some hazelnut butter, so it will taste like a nuttella mousse…oh i am soo excited.

    Can I make a really random suggestion/comment??? Okay I’m going to whether you want it or not- I’m good at unsolicited advice lately. Anyway, I come to this page, and I get excited about the pictures, so I try to click them.. but they aren’t links to what I think they should be.. 🙁 Ex: I am going to make some oatmeal pancakes for breakfast, yumm! So I clicked the picture of the delish-looking pancakes.. which just took me to another picture of the pancakes. Still delish-looking, but I was hoping it would take me the same place as the hyperlinked text below.
    Not sure if it’s possible to link the picture too?? That’s my suggestion. Either way, I’m making these pancakes for breakfast, and I’m excited! 🙂

    Just another suggestion: Maybe you could also group them by purposes like wedding *g*, holidays and so on….

    Recently I was looking for some vegan party snacks (especially fingerfood) that are as healthy as possible and especially sugar-free ( I can’t prepare a batch of muffins without eating some – too many- of them …) and easily to transport on a bicycle (so facy creamy cakes don’t work unfortunately..). Do you have any suggestions?
    Would be cool if you had an idea :).

    Okay, so I am completely obsessed with your array of yummy desserts! I am not vegan, but I am pescetarian. I used to eat meat, and the only thing I miss is BBQ sauce. I know that sounds weird but I love it so much! Unfortunately, now I don’t know what to eat it on! Does anyone have an idea?

      I know a few of CCK’s recipes have broiled/baked cauliflower in place of meat; just make sure you cook it long enough, or else it won’t be crunchy! 🙂

    Hi, Kate! I’m a teenager who just discovered she has a long list of food allergies. My allergies include; milk, soy, wheat, rice, peanuts, corn, beef, and I’m sure I’m forgetting something. I already knew about your website, but quickly came back when I heard of my food allergies. This is so helpful! It’s nice to know I won’t have to give up sweets! I’ve found a lot of great recipes that cater to my restrictions! Thank you so much!

I have recently had a little boy and made the decision to cut out sugar and gluten so I have the energy to keep up with the little fella! Fortunately I have a sweet tooth! I say fortunately because your recipes have allowed me to contine to enjoy and satisy my sweet cravings without the guilt or decline in energy levels. Now I would like to share one of my favorite recipes with you!

    Better for you Pancakes (Serves 2)

      About 2 hours after dinner, I start getting hungry for a nighttime snack. Usually I’ll have one of my dessert recipes. Or, a Mountain Mint Wild Bar and some fruit or maybe a cookie dough larabar and some fruit. And maybe some almond milk too. There’s usually chocolate involved :).

        It’s so funny you’d mention snickerdoodles, because I JUST made some today!! I haven’t posted the recipe yet, but I’ll write it out quickly here. If you try them, I’d love to know what you think!

        Skinny Snickerdoodles

        (Makes 20-26 cookies)

        3/4 cup ww pastry flour (or white?)
        1/4 tsp baking powder
        level 1/4 tsp salt
        1/4 tsp cream of tarter
        1/4 tsp plus 1/8 tsp baking soda (level)
        1/4 cup white sugar (or sucanat?)
        1/2 tsp pure vanilla extract
        1 and 1/2 tablespoons nondairy milk of choice
        1/4 cup vegan butter substitute, such as Earth Balance

        Preheat oven to 350F. Combine dry ingredients and mix very well. In a separate bowl, melt the vegan butter, then stir in vanilla and milk. Pour dry into wet and mix again. Form balls. You can opt to cook them as-is, but for true snickerdoodles, roll each ball in a mixture of cinnamon and sugar (either equal parts cinnamon-to-sugar OR two parts sugar to one part cinnamon, depending on how cinnamon-y you want your cookies). If you want soft cookies, you will need to get the balls very cold before cooking them. (So roll the balls, cover in the cinnamon-sugar, then fridge until cold.) Cook for 10-12 minutes. They’ll look underdone when you take them out, but that’s ok. Allow to cool before trying to move them from the cookie sheet. Store in a plastic container.

        Would sugar cookies be the same, just without the cinnamon and cream of tarter?

      You can use cookie cutters on any of the larabar-type recipes (like the pb cookie dough cookies). You could probably also do the snickerdoodles into cookie cutters, but I’d fridge the dough after cutting them, because they’re softer if they’re cold before being put in the oven.
      Same with the dough for the pumpkin-stuffed cookies (minus the pumpkin part)… I *think* it’d work with cookie cutters, but I’ve never tried it.
      Oh, and the graham crackers can be cut into shapes too. Hope that helps!

    Thought I’d let you know that I included some of your gingerbread PB and pumpkin PB in the holiday gift baskets I made for my friends — they adored both! I also included a butter recipe of my own — caramel apple peanut butter. I believe I blended up…1 cup of homemade PB, 1/2 cup unsweetened applesauce, a splash of vanilla, a LOT of cinnamon (maybe a tbsp?), 1/2 tsp red food coloring, and around 1/4 cup of honey.       It depends what you want to use the blender for… honestly, I use my Magic Bullet more than the Vita-Mix! I love the MB because it’s single-serving and because it’s so easy to clean (just pop the cup in the dishwasher). It’s only $49, and if you print off a coupon for BedBathBeyond, you can get 20% off as well :).
      Other than that, I also use my Cuisinart food processor a lot. It’s 7 years old and still works really well!

    I have to admit, I’m a little disappointed that there isn’t a section for low-carb desserts for those of us who are either on Atkins or are diabetic (the two diets are pretty much identical). I’ll probably bookmark this and go through all the recipes one by one to figure out which ones I could use when there’s a day where I’m just hanging out at home with nothing going on.

    I have only tried one of your recipes so far, but am excited to try the rest. I have found out that I am sensitive to wheat, so your gluten-free ideas sound great. I am also trying to lose weight, so your recipes will help me have some dessert. I do have a couple of questions. Is there a difference between coconut butter and coconut oil (which is in solid form in the store)? Also, do you think brown rice flour could be a substitute for the spelt flour?

      I don’t think you can sub brown rice flour 1-for-1 for spelt, because it lacks gluten (a binder). I don’t know much about gf baking, but I do know they advise you to mix up flours and add xantham gum… Sorry I can’t be more helpful!

    A friend just posted a link to you on FB and I’m excited! I’ve been a vegan for awhile and love to share and be health!! My favorite vegan recipe website modernmanna.org has a yummy vegan French toast recipe (I add cinnamon to mine):

    French Toast
    1 cup soy or rice milk
    1 cup cashews

    Hi, I’m sure you’re just inundated with comments and questions all day so I won’t be offended or anything if you don’t ever get to this question.. I’m a mostly-vegan with annoying stomach issues so I can’t do (a lot) of gluten or (a lot) of sugar or fructose or sugar alcohols… yeah, tons of fun. I found these great bars, Nugo Slim, that are sooo close to perfect. Except (1) I’d like to step away from relying on whey protein and (2) they’re kind of light as in I eat one and they’re fun and all but don’t really hit the spot. Like Crunch bars.

    So I was thinking, who better to make a vegan delicious version than you? The soy crisps they use are fun, but maybe if they also had something with tooth like almond meal or oats or..?     I was wondering, it seems like most of your dessert recipes call for a food processor. Are there any that don’t need one or that I can use a blender for instead?

      Many of them don’t need a food processor! Or you can use a Magic Bullet for many of them :).
      But if it specifically says food processor, I can’t vouch for the use of a blender. (And in the chickpea cookie dough dips, I would definitely caution against a blender because it’ll crowd the blender and the top beans won’t blend at all… maybe try it in batches if you must use a blender?)

    Katie, I love your recipes and are using many of them. I would like to say though, that canola oil is really a bad choice. By the time it reaches the plastic bottle made with BPA and gets to the grocery stores it is rancid. I think you would be interested in reading about the health value of coconut oil and safflower oil. Thank you for giving us your forum for healthy options.

I am a Mom of 3 gorgeous Princesses, Jasmine (6), Ariel (4) and Bella (2). My husband and I are transitioning our family to a vegetarian diet (I am a veg, he is getting there). I have been recovering from cancer, and people say that weight gain does not happen during this time, but I’m proof it does.     Hi Katie! First of all, THANK YOU!! For this awesome blog, for taking the time to make & test all these recipes, for the inspiration, and for sharing it all with us! My entire family has loved literally every recipe I’ve made from here, and all our guests as well – most of whom aren’t into eating “healthy”. They can’t tell the difference! SO YUM! You’ve gotten my little girl (& husband!) to eat *healthy* food – and enjoy it!
    Second, I was wondering – is it possible to mention how much each recipe yields? Or are we to assume that all recipes are made for one (or for small quantities)? It’s possible that you list this somewhere for each one, and I’m just missing it. It would be really helpful to have an idea before starting each recipe – ie in terms of planning/possibly doubling, etc. Thank you!

      Hi Sarah, I try to list serving sizes as often as possible, but for some recipes it is difficult to say an exact number because you can roll, shape, or cut things like cookies, pies and bars, into different sizes.

You’ve gotten my little girl (& husband!) to eat *healthy* food – and enjoy it!
    Second, I was wondering – is it possible to mention how much each recipe yields? Or are we to assume that all recipes are made for one (or for small quantities)? It’s possible that you list this somewhere for each one, and I’m just missing it. It would be really helpful to have an idea before starting each recipe – ie in terms of planning/possibly doubling, etc. Thank you!

    Oh my goodness, I stumbled across your blog through a link that a friend of a friend posted on Facebook for the 5 minute carrot cake and I’m so glad that I did!! I spent most of last night reading it, and this morning I just couldn’t help myself coming back for more! I love the recipes which have the most unexpected healthy things in, like dates and chickpeas, I can’t wait to try them all!     Hi! I just saw a recipe for cheesy cauliflower tater tots, but the recipe calls for eggs. do you think you could make a vegan version of this? sounds like a great idea! 🙂 Also, love this site, gives me hope that I can eat healthy and still actually enjoy healthy food besides green smoothies haha

      Hi Brenda,

      Currently the only thing you can do is highlight the recipe portion of the post and press “control c” then open a Word document and paste (control v).

      I can’t install the print plugin at the moment due to a corrupt file. Sorry for the trouble!

    You’ve inspired me – hopefully you’ll deem this recipe I came up with over the past couple of days worthy of inclusion in your blog!

    You’ll Never Guess Chocolate Pudding!

    (No dairy, no gluten, no sugar and surprise healthy ingredients!)

    ½ ripe avocado (make sure it yields slightly to touch like a ripe pear)
    1/3 lb Silken Tofu
    2 squares unsweetened Bakers chocolate
    8 packets Truvia (I like dark chocolate so I’m not used to things being SUPER sweet – 8 packets should do it but feel free to add 1 or 2 more to taste)
    Dash vanilla extract
    Tiny pinch salt
    4-5 Tblspns regular almond milk (or rice milk)

    Blend avocado and tofu and vanilla extract in blender until smooth. Melt chocolate squares with dash almond milk in microwave for 1 minute, stir until completely melted (may need to micro for a few more seconds – if too hot add dash more almond milk and stir to smooth out). Add melted chocolate and Truvia to avocado/tofu mixture and blend until completely smooth. Divide into 3-4 pudding dishes and chill in refrigerator for 20- 30 minutes until set. I don’t think it will really last more than a day or so (no preservatives and it’s yummy) so only make a batch the size that you’ll eat within that time. Whips up quickly though.
    I also tried adding a drop or two of banana extract – that was awesome (you could probably add real banana too but haven tried that). I’m thinking mint chocolate or raspberry might be tasty too!
    Try it and let me know what you think.

But I LOVE candy corn! Any chance you have or want to come up with a candy corn recipe??? BTW, your Reese’s eggs is my favorite recipe and make them way too often!

I love looking at cookbooks and blogs and coming up with my own “healthier” versions – but since I and several members of my family have serious health issues, I have to be very careful of the nutritional values. I am looking for a comprehensive program that I can use to determine my ‘healtheir’ recipes nutritional values – one the includes minerals as well would be ideal. Do you have any suggestions?

    I think the food and pictures look great, but every time I click on chocolate breakfast bread recipe I get video, pictures of ingredients etc. there are no ingredient amounts? I see ingredient amounts for cookies and many others but not for the bread?
