Homemade Coconut Butter! The post I should’ve written a long time ago!
Yesterday afternoon, I made a Single Lady Cupcake.
Not just any single lady cupcake. This one is covered with homemade coconut butter (and cacao nibs). Every time I post a recipe using coconut butter, bunches of coconuts people leave comments lamenting the lack of coconut butter in their areas (or lack of $, for coconut butter, in their wallets). Never fear; a remedy exists!
You can make your own homemade coconut butter to use any way you’d use Artisana Coconut Butter.
Just throw the shredded coconut into a blender or food processor and blend the heck out of it! Within minutes, you should have smooth and buttery homemade coconut butter! It could not be easier!
Depending on your climate and the fat content of the coconut you use, you may need to add a little virgin coconut oil to the blender as you work. If your homemade coconut butter looks dry, pour in some coconut oil–about a tbsp at a time–and it should be smooth sailing from there. Pun intended!
Homemade Coconut Butter
Homemade Coconut Butter – Make Your Own
Ingredients
- Shredded, unsweetened coconut (full-fat)
- Oh wait, there aren't any other ingredients!
Instructions
Homemade Coconut Butter: I took a bag of shredded coconut (Let’s Do Organic brand) and simply blended it in my Vita-Mix for about 3-5 minutes. (Note: If you use a food processor, blend for 10-ish minutes.) That’s all there is to it! Chocoholics can also make Homemade Chocolate Coconut Butter.
Side note: Depending on where you live–and the temperature/altitude–you might have trouble with this recipe. It works perfectly for me, and many of the commenters have also reported being wildly successful, but coconut butter reacts oddly in different climates. A few people have left comments saying they’ve encountered trouble – If it refuses to turn to butter for you, add some virgin coconut oil to the blender… usually that fixes things right up!
*For help and troubleshooting, click here: Coconut Butter FAQ Page.*
This recipe works great in Chocolate Peanut Butter Fudge.
Just a thought. 🙂
Albizia says
For foreigners and blender-less people – just eat the shredded coconut and dream about the most beautiful single-lady cupcakes 🙂 .
Sam says
Coconut trees grow in tropical countries – Caribbean, India, Malaysia, Indonesia, Sri Lanka, Vietnam, etc., and sea shores in countries of Africa, Australia, Asia, Polynesia and South America. @Albizia _ That is to say apart from Florida, some southern US states and Hawaii – coconut is indeed an exotic foreigner 🙂 and widely popular in their country’s cuisines for thousands of years. People live and consume coconut in so many forms – only now getting recently introduced in the US as a gourmet food! With Amazon worldwide, the sources for blenders and coconut are one too many. Cupcakes are also staple in most countries with the same icing deliciousness for the past 80 years thanks to the British and French colonial influence all over the globe. We are in a small world in a coco-nut shell now 🙂
Kayla (Little Miss Healthify) says

Alex@Spoonful of Sugar Free says
I’ve been making my own ever since Heather posted it! I make it in my magic bullet 🙂 🙂
I’d love to win the Artisana jar! You are on my blogroll already, silly! 🙂
Carine says
I Just tried to make it on my bullet, but it toke too long, between scraping, closing back together, shaking and it never got the texture of butter. Very annoying!!! It’s a shame!
Holly says
I found that if I had my food processor tipped on an angle (with books or something underneath one end) that I wouldn’t have to keep shaking it because the coconut would just naturally back into the blades…and the coconut that gathers on the other side would build up and then get pushed to the center….hope this helps!
Lenore says
Just made this using my new Cuisinart; I left it upright and only had to scrape down with a wooden spatula three times. As soon as it gets to the smooth consistency I didn’t have to scrape anymore. It was a bit runny before I stopped and pour/scraped it into a jar.I don’t know if it’s right or not, I expected it to be more oily like my coconut oil in solid form but it’s somehow a smooth but dry butter. That can pour…
Took about ten minutes total, including when I turned it off to scrape, and test toward the end.
So…now what do I do with it….Anyone know how long it will keep? I like it but want to use it to make something. I don’t like it enough to eat it with a spoon. I can’t seem to remember which recipe I saw called for this, I was just so excited to make it. hmph.
Carine says
Hi Lenore,
I like to substitute all kinds of sweet recipes that request vegetable oil or butter by replacing it with the coconut butter. I like cakes, pancakes, brownies even crepes. I want to try making coconut rice and use the coconut butter instead of oil. You can also enhance the taste of rice pudding by adding a spoon of coconut butter, and part milk and part coconut milk to the rice.
There is this delicious Brazilian recipe called Bobó de camarão, it’s like shrimp stew, but I don’t have the dendê oil to make it, I wonder if it would be good if I just use the coconut butter instead. This dish is made with veggies, shrimp and coconut milk, and it’s very deliciously saucy.
Well, good luck and I hope I helped a little!
Lenore says
Yes, I love your idea! I will try that. Thanks!
Also, I remembered the recipe I was meaning to try, the cake batter milkshake, oh my it was so yummy. Do make it.
You should try your recipe with different oils, I bet you find one that works good enough 🙂

Hey Katie! I have a Vita now and can’t wait to make this again, but when I tried making it in my food processer (ages ago) it took at least 30-40 minutes! Not sure if that would be the case for ALL food processors of course.
does it resemble artisana well??
x sabine
Sabine @ thefruitpursuit says
babe, I tried to share your post on FB (not to enter the give-away) but networkedblog gives me errorsss. 🙁
Chocolate-Covered Katie says
Oh my gosh, you’re too sweet to want to share on fb! That would’ve made my day! Annoyingly, I think it’s a networkblogs problem, because I just tried it and it didn’t work. So I tried to share someone else’s post, and it still gave me an error msg. Grrr.
As for the butter, I guess it depends on the strength of the food processor. Also, I’ve heard that using MORE coconut (i.e. a bigger amount) yields smoother results. Mine was pretty creamy, but I used the whole bag.

Hi! I’m not sure if this is also for European readers?? Anyway, I mentioned your giveaway on my blog: http://fitundgluecklich.wordpress.com/2011/01/30/bohnen-spinat-laibchen/, I would love to win some coconut butter!! Have a nice day!!
Chocolate-Covered Katie says
I entered you :).
Milla says
Heey!
I made coconut butter last week with my foodprocessor. I used the cheap coconut, shredded and dried. I turned out very smooth but it didn’t taste so good because I don’t think it was a good quality. SO, I bought some brown coconuts and shredded the whole thing myself. I tried to make some butter but I NEVER BECOME SMOOTH. What is wrong here? Do you think I have to dry the coconut i the dehydrator or something? too bad. 🙁
Chocolate-Covered Katie says
Hey Milla,
I’m sorry to say I don’t know :(. I’ve only made it once… but heab (heathereatsalmondbutter.com) is a master at homemade coconut butter, so maybe try asking her? Good luck!!! 🙂
Andrea says
Soooo good! I made coconut butter my other day (thanks for posting this and saving me the $$) – I dipped my flax/date balls in them…oh my.

Susan says
I tried this in my Vita-Mix with a bag of unsweetened coconut and it didn’t come out creamy at all. I don’t know what I did wrong, but I’m a new Vita-Mix owner, so maybe I wasn’t using the right speeds. Silly me did not at first get the difference between coconut butter and coconut oil, and I used coconut oil in your fudge recipe, but it still came out very good! I don’t know how you are so creative, but I love your blog!
Chocolate-Covered Katie says
Hmmm… maybe it’s a winter thing? You’re like the fourth person who said it didn’t work. I looked through all of Heather’s comments, and no one had any problems with it… but she posted during warmer weather. 🙁
Jos says
Again Katie, thanks for sharing this! I finally made my own coconut butter as well!
Sonya says
Thanks so much for sharing that you made this using your VITAMIX! I saw that HEAB uses a food processor and thought maybe there was a reason she did it this way instead of using her VITAMIX… I don’t think it took five minutes. I think I put 3 cups or so of coconut just to be sure there would be enough volume once it started turning into ‘butter’. Worked perfectly 🙂 Thanks for sharing. Love your site!!
katie says
ok this is really frustrating.. the coconut was in the blender on high for 20 minutes.. i tried stirring a few times.. nothing.. so i transferred it to the food processor.. now 10 minutes later still nothing.. the flakes arent even smaller.. ugh.. just how powerful must a device be to tackle shredded coconut??
Chocolate-Covered Katie says
I think maybe the cold has something to do with it… a lot of people have been having trouble lately, but when HEAB first posted in the summer, no one commented and said they had trouble. 🙁
katie says
i dont think its the cold because i tried heating it up and trying again..
i eventually got it into mush.. but its super gritty.. im thinking i need a better blender.. and a better food processor.. i even got desperate and tried the stick blender.. and it took a grand total of 5 hours to make it into gritty mush.. but it was sort of worth it for dads reaction.. i mixed some of it with cocoa and warmed it up..
me: “dad do you wanna be the first one to try it?”
dad: “NO!…
me: *the look*
dad: “oh all right”
me: “well how is it?”…
dad: *walks away with the bowl*
me: “HEY! let me try it!.. oh hey that is a good flavor, but the texture is all wrong”
dad: “no this is what i want” *walks off with bowl*
yeah he stole my coconut cocoa mush… it was almost funny enough to make up for a solid 5 hours of frustration
Chocolate-Covered Katie says
hahahaha your dad is too funny! As are you. “He stole my coconut cocoa mush.” Funniest quote ever!
kelsi says
I love that recipe!! So so simple!!!
jean says
can i use a blender
A Teenage Gourmet says
Did you use full-fat, or reduced fat coconut? I tried reduced fat, but it didn’t work.
Chocolate-Covered Katie says
I used full-fat.
Kelly says
I tried to make coconut butter in my food processor. It’s a Quisinart so it’s a pretty good brand. I had mine running for 45 minutes and never got the coconut butter. It burned up a piece of my food processor from running so long. Live and Learn.
Chocolate-Covered Katie says
Boo :(. I just don’t understand… I want it to work for everyone like it does for me. I think Heather (heathereatsalmondbutter.com) has a cuisinart and has had success, so the only thing I can think of is that maybe the super-cold temperatures are having an effect? ‘Cause I’ve gotten a few comments from people who’ve had problems, but Heather–who posted last March–only seems to have success stories in her comments. I wish everyone could have success with this!
Oh, also, what kind of coconut did you use? Apparently, it can make a difference. I’ve had success with the “Let’s Do Organic” brand.
Kelly says
I bought mine at sprouts. I think it may have something to do with the freshness, maybe it’s moister and works better if its fresh. I don’t have a Whole Foods close by, so I can’t get my hands on the coconut butter, but I’m dying to try it. It’s all good. The stuff that came out of my Cuisinart tasted good, it was just not butter.
Chocolate-Covered Katie says
By any chance, did you accidentally pick up the reduced-fat one that Sprouts sells? I got mine at Sprouts too, and I accidentally picked that one up first and almost went home with it!
Kelly says
I did not pick up the reduced fat one, but I found the Lets Do Organic brand at sprouts. Did you use the big shreds or the small ones? I used the small shreds. I will try it again with the Lets Do Organic Brand and let you know how it works out. Thanks so much for your responses.
Chocolate-Covered Katie says
Small. I got butter after like 6-10 minutes. I really hope it works for you!!!
nolalarue says
When you used the Vitamix, did you used the whole bag of coconut? Did you put it on High and use the wet container? I used the whole bag and tampered but after five minutes (on variable 5/6/7ish), it was just more shredded. Heather @ Heather Eats Almond Butter sent me your link (you both are fab, by the way) and told me not to be scared to put My precious Vitamix on high (she’s new and we’re still in our honeymoon, “just getting to know you” phase so I’m being gentle) but nothing really happened and it seemed to just whirr everything up the sides and underneath the blade so no butter. Sorry for the run on but had dreams about the butter and just have to have it!
Chocolate-Covered Katie says
Yes, definitely use the whole bag of coconut! If you don’t, it has a harder time making butter. And I did turn my blender on high. I got butter in just a few minutes. LOL about your honeymoon… I’ve had my vita for like three years and my poor mom is STILL scared to put the thing on high!
I hope putting it on high will work for you! 🙂
Andrea says
Oh my god! I just tried it (and I have to admit, I was sceptical…) and it worked! And I am addicted already! THANK you so much!! I will try a lot more soon! :))
Chocolate-Covered Katie says
Aw yay! I’m so glad it worked for you! I love it, because it’s great for saving $$ :).
Dina says
Katie
Your recipes are so amazing Thank you for continually sharing the goodness with us 😀
Chocolate-Covered Katie says
Aw, thanks Dina! 🙂
lily says
Your coconut butter looks so delicious!
Did you take dried or fresh coconut for this? I tried dried coconut flakes and it became hard instead of creamy
Chocolate-Covered Katie says
Hey Lily, is it cold where you are? Coconut solidifies at room temp, but it can be warmed up in the microwave or in a warm oven (Just be sure to turn the oven off prior to putting the coconut butter in; you don’t want it to burn lol).
nikki says
just 1o mins in my El-Cheapo magic chef mini and voila! creamy smooth coconut butter, Thanks for posting!
Chocolate-Covered Katie says
I’m so excited it worked for you, Nikki!
Aurelia says
Hi Katie,
I’m so glad I found your website! All your recipes look delicious, but I think this one is calling my name the loudest… if only because once I have coconut butter ready, I can make a billion more recipes… I might be drooling a little right now. 😀 Thanks for sharing!
Chocolate-Covered Katie says
Aww I’m so glad you found me too!!
Alison says
Ok, your use of coconut butter in a few of your recipes just made me have to finally try making it on my own! I have a little blender, so I figured I’d attempt it (it doesn’t normally like making anything other than smoothies, which works for me haha).
WELL, it did work! I got some sitting on the counter now! Woohoo! But I do have ONE question…have you ever experienced it smoking/steaming (the coconut in the blender that is)? I didn’t let it sit on for more than a few seconds at a time as I didn’t want it to overheat, but the last push when it was actually turning into the butter, I let it go a little longer (maybe 20 seconds?) and when I opened the top, all this white steam came out haha. I’ve never made any homemade butters before, I thought I read somewhere that some nut butters can steam from the heat of the whole process, so I was just making sure it was something that COULD happen and not just the rubber in my blender burning or something, which would totally be my luck! haha
Nevertheless…I cannot wait to dig in! Thank you again!
Chocolate-Covered Katie says
Hey Alison! I’m so glad it worked for you! This just further proves my suspicion that it works better in warmer weather… a lot of people seemed to have trouble making coconut butter in the winter months (and more than one person told me her blender started steaming up). But lately, all I’ve gotten are success-story comments. 🙂
Personally, I’ve not had the steaming problem, but (as I said), others have. So you’re not alone! As long as it tastes good (and your blender isn’t broken!), I think you should be ok :).
Alison says
Aha that makes me feel better! I’m TOTALLY going to be making a single lady cookie again (with allspice) and frosting it with the coconut butter! I CAN’T WAIT! Haha!
And yes I’m in the UK at the moment and it’s been warm the past few days (even warmer in my kitchen) so I wouldn’t be surprised if the warmer temps helped the whole process out. I suppose it’s good I can’t find coconut butter over here so I’m forced to make my own, because if I were back home, I’d probably just grab the Artisana! Mmm, someday!
Thanks for the speedy reply:D I think I’ll be setting up some overnight oats for strawberry shortcake oats next (but your chocolate raspberry truffle oats have been in my dreams!!) Have a great rest of the day!
Chocolate-Covered Katie says
Aww u too! Have a great CHOCOLATE-covered rest of the day ;).
Marisa says
Ooh yay, thanks for this! Now I can finally try out all your yummy coconut butter recipes.
Alex says
Oooo, awesome! Is this the same as coconut oil…? I’m new to the whole coconut thing. Can you cook with it, or is it just a spread?
Chocolate-Covered Katie says
Hey Alex,
Coconut butter has more of a consistency like peanut butter (when it’s warm). And you use it like pb too. Coconut oil is liquid at room temperature. (Both are solid when cold. Don’t store coconut butter in the fridge.)
Amber Schaefer says
Does the coconut butter become creamy or is it just powdery? Cause I’ve been processing it for at least 25min! 🙁
Chocolate-Covered Katie says
Some people seem to have trouble with it… I’m not sure if it’s that their food processors aren’t strong enough or that it’s too cold where they live. Is it cold where you are?
Anonymous says
do you have to add any water?
Chocolate-Covered Katie says
No, definitely don’t add water! It’ll dilute the flavor!
Tiffany says
Ugh I had to use water! My food processor wouldn’t make it any smoother past a fine grain coconut ( there was a little paste) so i added water and it’s still not as smooth and airy as yours! Boo. I think I wasn’t patient enough. Now I’m stuck with thick coconut butter.
Lauren says
Hey Katie, I’ve been blending away like crazy and I still have powdery coconut. It’s very warm were I live, so I don’t think the weather is causing any issues. I used the Let’s Do Organic brand, but I bought the reduced fat. Do I need to buy the full-fat version to make this?
Chocolate-Covered Katie says
Yes, definitely you must use the full-fat version.
Kate says
This was awesome! Not even ten minutes to creamy awesomeness! Thank you!!!
Crystal says
Sorry…I thought the coconut butter was just OK!!
Marcus says
Hi Katie,
My roommate and I (we’re in college) have been experimenting a lot with coconut butter, oil, and other things and we made our own “treats” (what we call them) using cashews, coco butter, and honey. We discovered that a 50/50 blend of cocobutter (homemade or Artisana, doesn’t matter) and raw organic honey from our co-op tastes a lot like “healthy” cheesecake, and I’ve been trying to capitalize and perfect this and put it into a raw, organic treat on a crust of crushed cashews and honey, and it’s delicious. Have you found any other things that go particularly well with coco butter? I’m always looking for new flavors to play with…also I recommend you try mixing the coco butter with honey for something that’s CRAZY good!
thanks and regards,
Marcus

Also, I want to share with you my recipe for macaroons!
Preheat oven to 350 degrees F
Whip two egg whites into a frothy paste, add 1/8 cup sugar, 1/8 cup raw honey, and 1/3 cup dried unsweetened coconut shreds…
tablespoon it onto a parchment-covered cookie sheet and bake for 20 minutes until golden brown
let cool and drizzle with melted dark chocolate
if you like this recipe please post about it! thanks and have a good day!
Veronica says
Hello, I was stirring up my new jar of coconut butter and spilled about 1/3 cup of the oil liquid on the counter so I continued heating up the rest and now it doesn’t taste right. It is not sweet. what should I do? Thanks!
Margaret Vasquez says
i only used a little bit because i wanted like a single serving type thing but my mom got mad at me about the blender and nothing happened? 🙁 … is it just because i didnt use the whole amount cuz i dont want to try again if theres no chance itll work for me :/ …. and also if it does work can i use the butter instead of the oil in ur recipes?
Chocolate-Covered Katie says
You need to use an entire package for it to work.
Many of my recipes already call for the butter. It depends on the recipe.
margaret vasquez says
so i was able to kindofish get a result the second time i put hot coconut milk with it and kept blending it its kinda gritty but i think it should still work in ur recipes! (:
Liza says
YUM! You have just saved me a TON of money!!! This was so easy. I had melty, beautiful butter in only like 5 minutes. No trips to far away Whole Foods, and no spending major money on a jar! Awesome! 🙂
Sheri says
I’ve read your blog for a while now, but have never actually tried any of the recipes besides some of the oatmeals, which are delish! I just had my third baby and he is a sensitive little dude… so I’ve cut dairy and (SADLY) chocolate out of my diet. So I’m back to the internet to find tasty dairy free recipes. That’s where you come in! I want to make that coconut butter… Like whoa. I have a vitamix, but I only have the wet contatiner, not the dry one. If I try and blend the coconut in the wet one will it ruin it? Also… can I make the homemade larabars and babies in it? I obviously don’t know what I am doing! 🙂
Chocolate-Covered Katie says
Sorry, I don’t really know anything about a Vitamix wet container. I have a very old model and it only came with one container. But I AM pretty sure you can make the fudge babies/larabars in it! I make them in my Magic Bullet, which isn’t very powerful at all, and it works fine! 🙂 🙂
GlensGirl says
Help! Im trapped in this site and I dont wanna get out!
Chocolate-Covered Katie says
LOL! Funniest comment ever!
Sheri says
So I finally got around to getting some coconut… but I have to settle for sweetened right now. I’ve been doing it in my vitamix, and the thing is steaming like there’s no tomorrow! Did yours steam and get hot? It seems like my vitamix is having a really hard time with it. I don’t want to burn the motor out. 🙁
Chocolate-Covered Katie says
I”ve heard that the sweetened one won’t work.
Ben says
Dear Katie,
I have tried a couple times to make the coconut butter and it seems like it is proving a bit difficult. Is it because I am trying to make it using the Magic Bullet? My latest attempt is semi-mush. What should I do?
Chocolate-Covered Katie says
I seriously doubt a magic bullet would work
Melissa says
I’ve never tried coconut butter, but I would probably make something gooey, sweet and delicious!!

Hey,
i wanted to make this, but i bought desiccated coconut, not shreeded coconut, are they the same? And if not does anyone know where i can get the right stuff from in the uk?
Emily says
Katie,
How big was your bag of coconut?
Chocolate-Covered Katie says
I use a full package of Let’s Do Organic brand.
Beth says
Mmm…this sounds interesting! I’ve recently been reading about Coconut Butter…sounds like there’s so much you can do with it! I never tire of learning more about it’s uses!
Looking for advice Katie! I don’t own a food processor and would like to buy one but not crazy expensive or something to wild I won’t use all of (attachments etc). I’m looking to use it for making things such as Pita Bread, Pesto, Chopping Veggies/Shredding etc. I think the Vita Mix (ha! Why do I always think of LUCY when I hear that term) might be a bit out of my price range at the moment. BUT if it’s the best way to go I can see what I can do. What I’m looking to do is not own 10 different pieces of equipment that all do one or two things when I can instead have one piece of kitchen equipment that does it all! HELP PLEASE. ;o) xo Beth
THANK YOU SO MUCH for helping me with the above, you wonderful FUN blog receipes… I can’t get enough of your blog. It’s definitely my go to for fun and creative ideas. Haven’t yet tried the Single Lady Cupcakes but can’t wait, cool concept for portion control. lol ;o)
Chocolate-Covered Katie says
Honestly, I think a Cuisinart food processor is more versatile than a Vita or other blender. That’d be my recommendation! I am currently using my mom’s old Cuisinart… it’s at least 7 years old, but it still works perfectly!
dara says
How in the heck did you make that coconut butter??
Ok, this was my grand plan.. it seemed so clever when I thought of it. I was at the grocery store and I saw a coconut. I thought, “Hey, I am going to make coco butter!” I bought the biggest coconut and headed home. I went through this long process of breaking the coco open, draining the milk, scraping out the meat, chopping the meat in my blender, toasting it in the oven and then put the toasted meat in the blender. The problem came up every time I hit the puree button. The meat would get slung to the sides of the blender thus causing me to have to stop the blender every ten seconds to scrape the sides. anyways, EPIC FAIL. So, in making this stuff, do I have to have an awesome blender (like a vitamix) to succeed in this process??
Chocolate-Covered Katie says
You don’t need a Vita. I’ve made it in my Cuisinart food processor. But I would recommend getting already-shredded coconut flakes if you can… I’ve never tried it with a raw coconut :-?.
Lindsey says
I’ve tried to subscribe to the emails (no blog or twitter) for the ice cream maker contest but I don’t think I did it right because I haven’t gotten anything. I would LOVE to try the coconut butter. All I have is a Ninja (big borther of the magic bullet) so i doubt it would work to try and make my own…
jill says
I tried it in my food processor, but it worked so much better in my cheap blender
Tatum says
Will this work if the coconut if reduced fat? I don’t want to take risks with this!
Chocolate-Covered Katie says
Most likely not
Megan says
I have yet to buy a food processor and was just today looking at a small Kitchen Aid one at Target (not a full sized one, sadly) and after reading this post and repeating it to my husband…well, you’ve made my decision. The food processor is a must because I have a bag of coconut just screaming to be made into this yummy recipe 🙂 Thanks so much for the idea! Can’t wait to try it!
Stephanie says
How do you store this stuff?
Chocolate-Covered Katie says
Closed jar, in the pantry :). It lasts for months!
Stephanie says
Thanks so much, Katie (for your reply on how to store the coconut butter). 🙂
Susan says
I finally figured out why this wouldn’t work for me the first time. I was using Let’s Do Organic unsweetened coconut, but it was the reduced fat version, and I never realized it! Anyway, I picked up a bag of the full fat stuff, and I just made this in my 62F house with great success! So, the cold did not affect this recipe for me. I’m so excited to make some of your recipes using coconut butter now!
Renae says
I have no idea how I found you but I put this on my Google homepage. All this subscribing to this, that, and the other thing boggles my mind but your stuff captured my attention so I wanted to be able to find you again easily and that worked. (Amazing.)
I want to try this coconut butter idea; I live in Michigan and all I have to use is my OLD blender (like, seriously, I think it’s older than you) or the semi-recent food-processor so we’ll see how this goes!
Chocolate-Covered Katie says
Ooh I hope it works for you!
abi111 says
Just made this in my vita. I’m so happy!!!! it worked, now my vita wasn’t a waste of money. YAY!!!

Hi Katie, I have a beautiful fresh coconut on my counter…could I use it for the coconut butter? Or must it be the shredded bagged variety?
CCK says
Sorry, I don’t know.

I haven’t had any success with fresh coconut. 🙁
Jenn says
I’m at a high altitude, and I used my food processor but could not get this recipe to work. Bummer. :/
Holly says
Is a vita mix the same thing as a blender? If not, what’s the difference? I’ll look up a magic bullet, never heard of that either.
Shade @ One Vegan Fatty says
I just realized that this calls for unsweetened coconut, and the bag I bought yesterday is the sweetened kind…like for baking. Do you think that would make a huge difference in my results? Has anyone else made this with the sweetened coconut?
Chocolate-Covered Katie says
Sorry, I don’t know.
Courtney says
I would really like to try this, but all I have is a blender. Based on some comments, I’m not sure the blender will do the job. (Sorry for commenting a year later. I have been looking through your recipe archives. I am new to the blog, but like what I see so far.) 🙂
Chocolate-Covered Katie says
Some people have had success in a blender. Honestly, I think it has more to do with outside air temp than anything else, because it really does seem to be a hit or miss recipe for some weird reason!
Loretta Hanes says
Can you use fresh grated coconut instead of dried?
ashley says
i tried to make this in my food processer but the coconut never made butter so i added some warm water to it and it became the texture of marshmellow fluff, maybe my coocnut was dry? next time ill try soaking it before i blend

Your blog has changed everything for my family. Every recipe I make, we love. It has been like an answer to prayers. Thank you.
Barbara says
I put about 3/4 cup of shredded coconut in my blender and gradually spun it up to Liquify setting and had it on for over five minutes and all I ended up with was very finely shredded coconut. It did not become ‘butter’ consistency, so I ran the blender several more minutes, but there was no change. Since I already have coconut oil in congealed form (like the consistency of lard), I added a rounded tsp. of it to the coconut and blended it for a few minutes. The mixture wasn’t appreciably different from before I added it. (The congealed coconut oil becomes liquified when heated.) So, the final outcome is that I still don’t have ‘coconut butter,’ and don’t know why it didn’t come out as you described. Can you give more information on making one’s own ‘coconut butter?’ I would like to make it at home, but something’s missing for me, since it just didn’t come out as expected.
Kelly says
I made the homemade version, but it hardened overnight into a pretty solid block. Any suggestions?
Chocolate-Covered Katie says
Gently warm it. The best way is to heat the oven, then turn the oven off and put the coconut butter in the cooling oven for just like 5 minutes.
beanyvondoom says
For all your Blendtec readers, I just tried this on 10th speed in my Blendtec and it turned out wonderfully! It only took 1 minute! Thanks for the recipe- it’s blowing my mind!

unsweetened coconut from a bag? Do we rehydrate it first? I know this is probably a dumb question, but I just started using coconut. Made your Frosting shot today yum.
Chocolate-Covered Katie says
Nope, no need.
Sarah says
Hi Katie! I have a question for you. I live in Ireland, and the standard shredded coconut here is dessicated coconut… which is very very dry. I have used American shredded coconut while in the States, and I noticed that it tends to be very moist compared to anything I can find here… I was wondering if that was the case with the coconut you use? If so, I’m thinking it may be necessary to soak my coconut in water to rehydrate it before trying this recipe out. Thanks!
<3
Chocolate-Covered Katie says
Sorry, I really don’t know :-?.
Lisa says
Hi Katie,
Can you tell me how many ounces of coconut you used and how much butter than made?
Chocolate-Covered Katie says
I use a Let’s Do Organic bag– the entire bag. Sorry, I’ve never measured how much results.
Joan says
I searched for the brand you used, here is a link:
http://www.edwardandsons.com/popinfo.php?id=178
It says 8oz, or 225g
I didn’t go grocery shopping, and forgot to specify ‘unsweetened’ so I’ll let you know how it turns out. I’m a little worried that if it does taste realllyyy good (extra sweet) then when I make it with unsweetened ill be comparing them…but oh well, I’m sure it will still be delicious!
Soo, blender, magic bullet, or food processor? Which, of any, would work best?
Marla says
Is it possible to make with fresh coconut? I live in the Philippines and can go the market and they will “grate” a coconut for me with fresh shreds (sort of) coconut. Maybe I’ll just try it and let you know. 🙂 If not, this might not work for me. The only coconut other than fresh that I get is dessicated which I don’t think would work. But again….maybe. 🙂
Chocolate-Covered Katie says
Do try and let me know! Maybe google and see if someone has done it before online?

I just made this in my food processor (: I was reaching for the Artisana when I remembered this post. Yay for saving $9! Only thing: I wish it was a tad sweeter. Any suggestions? I was thinking a bit of added sugar or agave?
Chocolate-Covered Katie says
Either would be good! 🙂
Lenore says
For the price of the coconut and the amount it makes, I actually think I am going to buy it next time. It will come out perfectly and it costs about the same. 🙂
Christine says
Hi Katie,
What’s the difference between coconut butter and the solids from a can of coconut milk? Do you think refrigerating coconut milk and then skimming off the solids would work the same as coconut butter? Thanks for your input!
FYI- your recipes literally make my world a better place : )
Chocolate-Covered Katie says
Sorry, they’re not the same. Cnut butter is more the texture of peanut butter. Look at premierorganics.com 🙂
Casey says
Okay, so I made this in my Ninja blender. Took a LONG time! And lot’s of pushing it back down. My roommate was concerned by the noise and asked if the blender was getting ready for take off!! So, it’s done and I put it into a tupperware container with a lid. I came back the next day and the stuff was HARD. Is it supposed to be creamy like peanut butter? Or is it like coconut oil which is solid until you heat it up? I’m not too sure how to go about using it as it is all a solid square block inside my container. Perhaps use a spoon or knife to saw off a portion and soften it in the microwave? Or throw the whole container in there? I want to make the sugar free chocolate fudge or your fudge cake. Thoughts? First off, is my consistancy correct? I used organic unsweetened dried shredded coconut. Hmm….
Chocolate-Covered Katie says
Depending on your air temperature, coconut butter can be solid just like coconut oil. I’d recommend putting it in a warm oven (i.e. heat the oven, then turn off, then stick the coconut butter in there for a few minutes). If you microwave, it’ll just burn.
courtney says
i just made this! we’re on a tight budget and can’t get real coconut butter. i want to make more CCK recipes and many of them call for it. i put the shredded coconut in my food processor and blended it for about 5 minutes. i had to add about 1/4 cup coconut milk and then blended it for 5 more minutes, occasionally opening the food processor to scrape the coconut shreds down toward the blades.
this really worked! it was actually buttery! i’m so excited to have this new ingredient at such a low cost!
Rosalie says
Hi Katie.
I love your recipes and I have marked heaps of them to try.
I tried the homemade coconut butter.. But all I got was very fine coconut powder, and a very hot processor.
The coconut I am using is dessicated (Finely chopped and dried). It is all I could find other than buying an actual coconut. 🙂
Is this what you are using? Or do you get a fresher shredded coconut product
marla says
I tried it with fresh coconut and it didn’t work either. 🙁 I was going to try desiccated today and after your post will probably just chalk it up to not being able to make this here. (I live in the Philippines and have coconuts in my backyard and still won’t be able to have coconut butter.) Ironic isn’t it.
Rosalie says
Thanks Marla, I live in Qland Australia, and coconuts are easy to get here as well, It seems that the coconut in USA is a lot moister than we get.
I tried adding some coconut oil and that took the powder to a paste, but not what creamy like I expected to get.
I have never seen the Artisan Coconut butter here in Australia.
Heather says
Hi, I’m in the Philippines, too, and I was wondering about which coconut to use to try to make the coconut butter, because these recipes sound so wonderful… But, I didn’t know if I should try the young coconut (butong) or the older coconut (lubi). Any ideas?
Chocolate-Covered Katie says
Nope, I use the shredded stuff too. As I said, sometimes it doesn’t work for people and I can’t explain why except to guess it has to do with climate.
Deb says
I tried making the coconut butter twice. The first time I used a food processor and the second time I used a blender. Both times, it took forever. I did a little research and discovered that other people had the same problem making coconut and other nut butters. The solution was to add a small amount of oil. Maybe my machines are not powerful enough on their own; maybe my coconut is extra dry; or maybe both. I do know that once I added a small amount of coconut oil, it blended up much better.
Laura says
Is a vitamix or food processor needed? We have a *pretty* good blender, but that’s it. I was also thinking of buying a magic bullet soon… Would that do it? No money for a vitamix here!
Chocolate-Covered Katie says
It depends more on the climate of where you live than the blender. Some people have reported success in cheap blenders… others can’t even get it to work in a vitamix!
Jenni says
Hey, I was just wondering. I tried reading through the comments but there are so many 🙂 Do you need to refrigerate the butter after making or can it sit on the counter? Thanks, Jenni
Chocolate-Covered Katie says
no need to fridge 🙂
Katie says
Hi there,
Just wondering if the picture with the blender is the end result? Is that what it should look like? Mine is definitely not spreadable, it’s just finer coconut. I was so excited about this and I so badly want to get it to work, do I just have to keep mixing for longer?
Thanks
Chocolate-Covered Katie says
It should have more of a peanut butter-type consistency. Smooth. Either blend longer, or unfortunately it just doesn’t work for some people and I don’t know why :(.
ANH says
You think this would this work with sweetened, non-organic coconut?
Lisa says
Since coconut milk is made with coconut and water, do you think that water could just be added to this butter to make milk? I feel like that could be a great way to avoid wasting to pulp/meat of the coconut.
Chocolate-Covered Katie says
Sorry, I haven’t tried it so I don’t know.
traci says
Hello- in ref to your vita-mixer for this recipe, did you use the blender container or the nuts/grain container? I have both for my vita-mixer <3 so I'm just curious
Chocolate-Covered Katie says
My vita-mix is very old and it only has the blender container, so that’s what I used. 🙂
Jade Blair says
Could the recipes including coconut butter be done with almond or hazel butter?
I live in England and the only coconut butter I can find is on amazon at prices I can’t afford, but almond butter on the other hand is very cheap!
Chocolate-Covered Katie says
Sorry, it really depends on the recipe. Some of them can only be coconut butter.
Hayley says
I don’t have a Vitamix, but will a regular blender work?
Chocolate-Covered Katie says
For some people it works and for others it doesn’t. It more depends on the climate where you live rather than the strength of your blender.
Robbin Z. says
Hi Katie!
I was wondering, will this process work with the Lite version of Let’s Do Organic’s unsweetened coconut?
Thanks!
SL says
Just out of curiosity, what happens if you use sweetened coconut?
Chocolate-Covered Katie says
Sorry, I’ve never tried it.
Jen says
I FINALLY got this right! lol. I have tried making my own coconut butter several times now and all failed. I finally got it to work (for me) by using a larger qty of coconut (2 cups or more) with a higher quality food processer and lots of patience and scraping. I really had to baby it scraping the processer down every 2 minutes. It took me 15 minutes. BUT it WORKED =) Happy buttering to all
Tanja says
Katie, for all the people who live in the cold areas:
Blend the coconut in your vita-mix… if it does not have the “buttery” texture yet, give it in a pot and warm the coconut butter up. The oil will emerge from the rather powdery coconut and within 15 to 20 minutes, you should have a creamy coconut butter!
Jennifer says
would it be terrible to use sweetened coconut?
Jenna says
Hi Katie,
I’m sure you’ve answered this before, but would it taste ok to substitute regular smart balance butter with coconut butter in your recipes? I don’t have a vitamix/food processor and coconut butter is expensive!
Chocolate-Covered Katie says
Depends on the recipe. For the fudge cakes, probably not… but I haven’t tried!
Carolyn says
Hi Katie. Your blog is wonderful! I can’t wait to try some of the yummy recipes here. I’m a big believer in eating healthy sweets! I have a question about the coconut butter. I never had it before, so I don’t know what the consistency should be like. I just made it now, for the first time, and I love it! I was expecting it to be a bit creamier, as that’s the way it looks in photos. I used my vitamix, and ran it until it was fairly smooth, but not like “fluff” or butter would be. Is this how it’s supposed to turn out? By the way, I love it–just the way it is–but I’m curious to know how yours turns out.
How is the consistency?
Thanks,
Carolyn
Chocolate-Covered Katie says
It highly depends on the weather and climate. Coconut butter is weird. It can be rock hard or the consistency of smooth peanut butter, depending on the climate.
Tanya says

Thank you, Katie & Tanya! I love this stuff!
Sabrina says
Katie,
Id like to try this out and currently have a bag of 40% reduced fat dried shredded coconut, do you think that it will still work? Or is the full fat from the coconut necessary for the butter texture/flavor?
Thanks 🙂
Sabrina says
Eek please ignore, I just read the comments above. Full fat it is!
Tracie Meier says
Hi! I just tried making this coconut butter and had a really hard time. I tried it in my blender first being as though I don’t have a vitamix. It wasn’t working. Next I tried the food processor. It wasn’t getting to a buttery texture. It was still a floury crumbling texture. I gave up. I tried adding a little coconut oil and coconut milk and it didn’t make it more like a liquid. Any thoughts??
Chocolate-Covered Katie says
Sorry; as I say in my post, I don’t know why it doesn’t work for everyone 😕
Heather says
I don’t know which type of coconut to use to make coconut butter. Young coconut (green on the outside) or the old coconut (has more meat and is brown and rough on the outside)?
Chocolate-Covered Katie says
Shredded coconut (unsweetened). Look in the bulk section of a grocery store, or look for Let’s Do Organic or Edward and Sons brand.
Sabrina says
I made some today to put into my chocolate cake batter milkshake-both were fantastic! I like this much better than Artisana (which seems so separate (into oil and coconut) when I try to melt it. I had no idea it could taste this good! I was wondering if you’ve tried blending more than one bag (of lets do organic) at a time?
Chocolate-Covered Katie says
Sorry, I haven’t.
Eleanor says
Hi Katie!
Your recipes are fantastic 🙂 Thankyou for posting them.
This was fun to make!
Just wondering, how many calories are in a tablespoon of the homemade coconut butter?
Thanks again,
Eleanor 🙂
Jo Clute says
I had one failed attempt but I’m going to try again. I think the shredded coconut I used was dried out. I bought a jar of Artisana from Amazon.com and it’s delicious!
Em says
Has anyone tried this in the UK? 🙂
Kathleen says
I already am on it!!! The first time I did coconut butter I bought it in the middle of winter and I practically had to saw chunks out. Now that it`s Summer I`ll be using a lot more! I* may make my own now… but I am too busy using it to stop and make time to make it!
artis allgier says
I can get coconuts here in Mexico fresh. After I cracked the coconut to get the meat out, should I dry it a little before trying to shred it in the food processor? Thank you so much..Artis
Chocolate-Covered Katie says
Sorry, I have never tried it with fresh so I don’t know.
Kellie says
Does the coconut butter have to be refrigerated? If not then how long it keep?
Chocolate-Covered Katie says
Nope. Months!
Teresa Monroe says
Although I’m not a big fan of coconut, this sounds very interesting & I’d like to try it. The problem for me is, I live in a rural community & some of the ingredients are hard to come by. Also, with my fibromyalgia, it’s difficult for me to work in the kitchen. I can’t even prepare meals without getting sore & worn out. I would like a chance to win a jar of Artisana though! Please keep me in mind. Thank you for sharing these wonderfully interesting recipes!
Nancy says
Do you keep it in the fridge? Once it’s hard how do you get it out of the jar? Mine got so hard I can’t dig it out! Thanks for any replies!
Chocolate-Covered Katie says
No need to fridge!
mary flynn says
Hi Katie
I am looking at the MYO coconut butter and I see that it calls for Shredded Coconut.
I see a product called dessicated shredded coconut.
Is that the same thing? Is all shredded coconut dessicated? Or will that not make good Coconut butter?
Thanks!
Mary
Chocolate-Covered Katie says
Sorry, I’m not sure. I would think if it says “shredded” on the label and it’s not sweetened, it’s the same thing.
Lina says
Hi Katie,
I have been following you for a few weeks now. I have made some of your recipes. My hubby LOVES the sinful guilt free chocolate chip pie, and he is EXTREMELY picky. I have 2 questions though please. Does the coconut butter need to go into the fridge afterwards? Is coconut butter the same as coconut oil? Oh does that have to go in fridge also (oil)? Thank you for all your recipes and time.
Lina
Chocolate-Covered Katie says
No, not the same. And no need to fridge 🙂
Lauren says
Hurray! It worked for me. 🙂 It took a good deal of patience with my mediocre blender (it’s a generic version of a Magic Bullet), but at last, it stopped clumping and began whirring around smoothly. I spread it on my homemade whole wheat bread, and it was deeeelightful. Worth the effort, for sure!
Tiffany says
So will this not work with a magic bullet? I really wanna make your fudge frosting, but i need to make coconut butter. 🙁 And my bananas are really ripe so i can make any of the frostings. Also, could not find unsweetened coconut. Not sure what to do now.
Coley says
I made this to use in the Raspberry Fudge Cake recipe. I live in Southern California, and used a Cuisinart food processor… it made the butter in no time. I had to scrape the sides about 4 times, but it all came together. I think my climate must be similar to Katie’s, because I had no problems. A whole package of the unsweetened “Let’s Do Organic” made about 3/4 cup of coconut butter. I will be making this a whole lot!!!
Ashleigh says
I found that if i added a little water, I finally got a “butter” consistency, using my food processor. I hope that helps some people who’ve had trouble!
Mab says
First time trying this. I used two 8oz bags of medium shred Organic coconut that I purchased online. I used our 11 cup size Cuisinart. I started with one 8oz bag of the coconut and when it started to clump I added the second bag. When I noticed the base of the Cuisinart getting warm (before this process was complete), I shut it off for about 5 minutes and came back to it. I did this twice and I think it took 3-4 minutes of total running to make the butter. We don’t have refrigerated air in our house, just fans. Here it is 9:am, 75°, and just barely out of August in San Diego. So the temps are running at 75°- 80° on the coast with 90%+ humidity. Cuisinarts do heat up after 3 or 4 minutes (in my experience making hummus).
I just went back to check on my newly made Coconut Butter and it’s turned somewhat soupy in it’s container, but still thick and still delicious! The soupy-ness is not because of the recipe, or the brand of the product, it’s the nature of beast in this heat. Coconut oil does the same thing (the melting point is around 76°F), and a warm food processor is only going to contribute to the heat factor. I do have a Vitamix and will try that next time. Probably when the weather cools down! I just could not wait another month to try this! I wish I could refrigerate this stuff but I know it will just turn into a solid. Katie, do you know how long his will last sitting on the counter/pantry? Provided it doesn’t disappear in a couple of days!
I want to mention this about Coconut Oil (and shredded coconut does contain coconut oil). I use an organic coconut oil mixed with two other ingredients to make deodorant (cornstarch and baking soda). Works quite well. But it didn’t at first. I got rashes from it. I thought it was the baking soda at first, so I adjust the amount, but it wasn’t the only contributing factor to my rash. Coconut oil (not the kind processed with high heat) contains some wonderful properties: antimicrobial, antifungal, antioxidant, and antiviral. When heated in a microwave, all those good properties are completely destroyed. I was killing off all the good stuff heating it in the microwave. Now I just set my jar of coconut oil in a bowl of warm water (no warmer than your hand can stand it), for a few minutes and that works fine. Patience is a virtue in this case (not opting for the convenience of the microwave) to preserve the benefits of this stuff. That’s my rule: never, ever heat coconut oil in the microwave.
Chocolate-Covered Katie says
It’ll last for months 🙂
Dani@fitnessfoodandstyle says
LOVE YOUR BLOG KATIE just wondering the shredded store bought coconut you get, does it have preservatives??? I know here in Australia, majority of the dried fruits do 🙁
Keep up your fabulous recipes!!! XxDani
Chocolate-Covered Katie says
Nope, all natural.
Bree says
For the coconut butter. Do you blend with dry or wet vitamin blade?
Chocolate-Covered Katie says
I only have one blade… lol my Vita is old!
Michele says
Hi Katie,
I tried this just now in my vitamix and it didn’t work great; the coconut kept sticking to the bottom and climbing the corners until the blades whirred air. I kept it at a low setting and spooned it every minute or so, but it’s still coconut flakey after like 20 minutes. Any tips? I tried adding a tiny bit of water and coconut oil.
Thanks, you are awesome and my taste buds agree.
🙂
Chocolate-Covered Katie says
See the faq link in the post! 🙂
Rachel Ramey says
My Vitamix overheated and cut off. (That’s a first!) What the heck did I do wrong?!
debbie says
I make my coconut butter with fresh coconuts and it’s perfect every single time. I dry the coconut in my oven and churn it in my ninja. It’s really easy to do and so good. I think people that have trouble with making it are using the wrong type of coconut shreds. Most coconut flakes have had all the oils and most of the flavor removed… all that’s left is the dry fiber. It will never turn to butter without the oils. Hope this helps. 🙂
meg says
Thank you Katie! Mine turned out PERFECT!!!
Julia Smith says
Aww I was so excited to make this, because my family LOVES fudge, but most of your fudge recipies have coconut butter, and I can’t find it in any stores! It didn’t work for me, but don’t worry I don’t blame you at all! 🙂 Oh well, I still ADORE your blog, and I really don’t think I will ever stop loving it! LOL! 🙂
Natalie says
hi! as a new-vegan with a big love for baking- your web site is like heaven to me! so thank you 🙂
my question is- can I use this coconut butter instead of oil in recipes for cakes\cookies?
Chocoholic says
I tried this with a hand blender and it corrupted! Coconut went flying everywhere!
Carine says
On Whole Foods Supermarket there are two brands for the coconut butter. One is Artisana, $15. The other one I forgot the name (and I’m too comfy to go to the kitchen now and look it up), it’s mana something or something mana…. This one is $10.
Lenore says
Oh my gosh, the Artisana at my Whole Foods in San Ramon was about 8 or 10 dollars. Guess it depends where you live.
Lenore says
Before I washed my Cuisinart bowl, I scraped the remnants out and rubbed on my hands. It was a bit gritty and sloughy so I rubbed on neck and face and let sit a few minutes. When I rinsed it with warm water I found my skin as smooth as a baby. Don’t let any go to waste, this makes a fantastic facial!!
SS says
Hey Katie! Where live, I don’t buy the bags of shredded coconut. Any idea how much is the actual amount(in cups/gms) you used for the recipe? And how much it makes?
Chocolate-Covered Katie says
Since it’s the only ingredient, amount doesn’t actually matter. Just put in enough that it fills up at least 1/2 the vitamix.
Mary Kay says
Wouldn’t it get hot and cook after being in the Vita-Mix for so long?
Thanks.
April says
Hey Katie
I was just wondering your thoughts on coconut butter and the high amount of saturated fats that are in it? Do you think its a concern when consuming coconut products?
Thanks
p.s. love all your recipes!
Hayley says
Do you think this would work with an immersion blender? It’s all I have at the moment and I’m not sure if it would actually blend the coconut or if they would just fly everywhere.
aggie says
Hi, can you use this cocoa butter to mix with food colours and paint cakes??? Regards Aggie
Jenny says
Does the final product have pieces? Is it gritty or smooth? The only unsweetened coconut I could find was little tiny shreds, and by adding a few drops of coconut oil, I got it to turn into a liquid. But in my food processor, it’s still gritty. What’s the final texture supposed to be like?
Sophia@ NY Foodgasm says
As far as fat goes? How much fat is in these? For someone On WW as myself. Would this be a low fat option?
Natalie says
Hi, is the shredded coconut you use wet? The one i usually get is dry and I blended it the other day to make coconut flour, although I can’t imagine it making a butter. Perhaps I should add some coconut oil? Or maybe soak it in some water for a while.. 😀 x
Heather says
Hi Katie. I just made this this morning in my vitamix! It literally took less than 2 minutes and it’s as smooth as syrup! Amazing! Forgive me if you’ve already answered this somewhere, but, how do I store it and how long will it keep? (not that I plan to have it around too long, my daughter and I are making some of your fudge recipes today) 🙂
Thanks,
Heather
Chocolate-Covered Katie says
It will keep for months, and no need to fridge.
Jill says
Just wondering if it’s indeed a better deal than buying Artisana on sale (8 ox for $5.99!). About how much shredded coconut makes your (what size?) jar of butter? Would love to do some light calculating…
Emily says
For me, 3 cups coconut plus two spoons coconut oil (i had to add this bc of my coconut being too dry) yielded one cup butter (two 4oz jars)
Lizbeth South says
What would happen if you used sweetened coconut?
CC says
HELP HELP the Vitamix is SMOOOOOOOOOKING!
So I’m trying (now) 2 make this coconut butter but I’m not sure at which setting 2 do it at so I chose LOW and finally went up 2 “10” but all that’s happening is it’s smoking & getting really hot. And has lost the orginal shape but is like granuels not buttah, Whaaa Happa???

Hi Katie, i love your blog and everything on it! i wanted to make this coconut butter however i have a qn.. when u say shredded unsweetened coconut, is that fresh or dried? and if dried, is it the same as desiccated coconut? or is that something different? sorry i live in singapore and its not easy to find the same products you guys have in the US…
Thanks again!
Megan says
Is there a difference between coconut butter and coconut oil? I got coconut oil from Trader Joe’s and it’s pretty much solid so I’m wondering if its the same or if you can use interchangeably.
Julie Khan says
I tried this with FRESH coconut, but its soft and somewhat smooth, but not creamy or meltable, I used my vitamix, it was steaming hot, I even added coconut oil, but then it was oily and not creamy, HELP>
CATHERINE says
I just post how to make it works: it’s necessary to dry the meat before. I put it in the oven until golden, but next time I’ll use the dehydrator to keep it raw. However, i really liked the roasted taste from the oven! Good luck!
Priscilla says
WHATTTTTT!?????? ARE YOU KIDDING MEEEEEE I JUST BOUGHT SHREDDED COCONUT OMG I AM DEFINITELY TRYING THIS RIGHT WHEN I GET HOME, OH MY BANANAS I AM SO EXCITED….
now i need to find a recipe that uses coconut butter. lol. i bet you have PLENTYYY
CATHERINE says
I tried the recipe using whole coconut and it works! 0nce opened, I removed the hard brow skin next to the flesh, then I shredded the coconut meat in an blender. Then, you need to dry the meat in the oven (or dehydrate it) to remove moisture. Next step is the vitamix. Within 3 minutes of blending, it was all smooth!
Jeannette says
When I first saw this recipe I knew I wanted to try it – so I purchased bulk unsweetened, grated coconut when I visited my daughter in Austin – last July!!
After I returned home, I forgot about the coconut until yesterday when I was looking over your delightful recipes again – and I thought, Oops!!! Maybe I’d better try that out now. It didn’t work. I was wondering, could the problem be that the coconut dried out? If coconut can dry out, then it might explain why others have had problems. It’s not the method, it’s the product. If it can’t dry out, then I don’t have a strong enough food processor or blender :(.
Thanks, Katie!
J
Jeannette says
PS – I did add some coconut oil – maybe not enough? What ratio would you suggest? Thanks, again. . .
J
Betsy says
Can you tell me the weather/climate/altitude conditions that you are in? That will help me know if any problems I have are due to those factors rather than something I’ve done wrong!
Thanks.
Jacque Foster says
I tried this with a fresh coconut since I couldn’t find unsweetened shreds at the store and it did NOT work–so just some advice to anyone thinking about starting with a freshy! There simply isn’t enough meat inside one coconut (or if there is, we don’t have the tool to get it all out.) Since the Blendtec blender blade sits up a bit above the bottom of the container, half the coconut would end up under the blade with the other half shooting up the walls. Next time, I will do this with bags of shreds as Katie suggests!!
Cheryl says
You have to do a lot to get the meat out. It isn’t that bad but it takes work. Plus, you have to basically make your own shredded coconut by drying it out in the oven. That is what I was told. I got organic and am going to do it. Do you add water to this to make it when you blend? Or did you?
jolaine says
What is the nutritional fact for coconut butter?

Riley Prohaska says
Would this work with sweetened coconut? Thanks!!
Courtney says
could I use sweetened coconut shreds or will it effect it?
E C says
What settings on the vitamix do you use, speed wise & what not?
Cheryl says
Hi there,
I feel sort of silly, but I have to know. I have real coconuts, so I am going to make dessicated coconut from those. So I would take this blend it finely and then do I add water as I do it. Thanks for any information. I love this though. 🙂
Mary Soucy says
Hahaha!! Little did I know I have been making a rough equivalent of coconut butter all along. I love the flavor of coconut, but I am not a fan of the texture. I have been grinding up coconut in the food processor until it is finely chopped or almost a paste and putting it in recipes in place of shredded coconut or coconut flakes. That way I can still get the wonderful flavor. Now I know to just continue and I will have marvelous coconut butter. SWEET!! Thank you for the tutorial!! I am doing the happy dance, in case you haven’t noticed!
idil says
thank you so much, I’m gonna try this tomorrow. how many grams of shredded coconut do you use to make aproximate a jar of coconut butter?

I am so glad you have come up with some very easy and interesting ideas. I volunteer at our local Human Services Center (in the geriatrics unit where my husband is due to being aggressive) and I take in deserts of all kinds. Many of the patients just stop eating and so I try to keep them interested-as well as the wonderful staff. I have spine issues so baking for long times hurts my back. I will definitely pass along these recipes since they also make goodies there all the time and need easy to make items. Thanks for sharing. Judy

Hi there
2 questions re: coconut butter:
1.) Can you make it with fresh coconut – young or old coconuts?
2.) Can you freeze coconut butter?
Thank you
Unofficial CCK Helper says
1. No
2. Yes
Emily says
Just made this and it turned out great! I used the ninja mega kitchen with the small bowl food processor attachment, filled it completely with unsweetened coconut and two spoonfuls of coconut oil (it would not smooth out otherwise – I think maybe the shredded coconut I bought may have lacked some fat). Blended for about 12 minutes and it came out smooth and so delicious. I’ve also made your chocolate butter recipe to frost a ww vegan carrot-zucchini chocolate cake, and it was perfect!
Melissa says
Hi 🙂 Can we substitute the cocoa powder for raw cacao powder?
Teena says
Coconut is very abundant here in the Philippines, is it okay to use fresh shredded coconut? If yes, do I need to dry it before putting it in the blender?
Donna says
I just found your site and love it.
I’m hoping you can answer a couple of questions I have.
How much does a bag of unsweetened coconut weigh? I got something called coconut powder (which isn’t a powder) at an Oriental store and it weighs 2 lbs, so I don’t know how much to put in the Vitamix.
Also:
If you make Almond milk from 1 cup of almonds, how many carbs are left in the pulp?
I hope you can help me. I love your blog.
Thanks,
Donna
Donna says
I went thru the comments left and found my answer for the amount of coconut flakes to use… I still hope you can tell me how many carbs are in the pulp left over from using 1 cup of almonds to make the almond milk.
This site is wonderful!!

How long does this stuff last? 🙂
Kristi says
Oh my, you weren’t kidding! You’ve totally made my night. I just spent nearly an hour at my local grocery store, wandering the aisles of the health food section (even when the attendant said they didn’t have Artisana) and finally settled for a packet of Justin’s Raw Nut Butter to fill my craving. Still not satisfied, I came home and found this. And it works! I use Bob Red Mill’s unsweetened shredded coconut in the Vita Mix and it tastes JUST like Artisana! Wow! Thank you!!
Lisa says
Hi Katie !
I just tried your coconut butter recipe for the first time and thank you! However it wasn’t as easy as it seemed! My hour long journey took me to some grainy places . I think you’re right about the climate, but perhaps also how the coconut shreds are stored. If they’re frozen I’m sure it wouldn’t work as well as those naturally dried. I was blending my heart out and all I was getting was really finely grained coconut. I didn’t have any coconut oil to help it along so I added my homemade ghee (clarified butter) and what a difference it made! I switched from my blender to a food processor and just kept going and scraping and stirring and blending until finally my food processor was making a weird noise and I knew my butter was ready!
I just wanted to let you know for those who are having a hard time, persistence pays off.
Thank you again for these great ideas!

Re previous message. I can buy coconut butter from a supplier on the net (in Australia). So great. With coconut oil, when I was younger and not as knowledgable, a lot of Aussies used coconut oil to get a suntan (now we all avoid suntanning because of skin cancer). We used to buy it at the chemist.
Seth says
I’m curious to know if you or any of your users who have done this in a Vitamix have had the container heat up to REALLY hot? I see these blending times and I’m blown away. In just about 2 minutes the vessel was too hot to handle with bare hands so I turned it all off. The process was creating steam from the top of the vitamix and it wasn’t even on the highest (switch) setting. The dial was all the way up but the turbo switch was off.
Do I just need to be brave and keep running the Vitamix? Or should I expect to have to do it in intervals and let it cool repeatedly?
As a point of reference I was processing 250g of shredded (dried) coconut.
albanianero says
I had the same “fear” so I gave up :)))
Seth says
OK so back to this… Now I’m pretty sure that even though the shredded coconut I bought (bulk) wasn’t labeled as such, it was sweetened. Which would lower the fat ratio. The fat being the necessary component to making a buttery consistency. So I went to the sore, bought 2 coconuts, cracked, scraped, shredded and dehydrated them. Perfect Vitamix butter in about 2 minutes.
Next time I wont buy the coconut unless it’s specifically marked unsweetened.
albanianero says
I have a question… It is my third time trying to make coconut butter and I end up giving up because it wont turn into butter. Do i have to put in my Vitamix only DRIED shredded coconut??? I think that my experiments are failing successfully due to the fact that my shredded coconut is not fully dried. I try just to dry it in my oven and I dont know what else I can do…
P.S. I blended for about 1.5 minutes and the container was so hot..any risks??
Thankss!! 🙂

Yeah I’m sure it has to be dried. Coconut meat produces a lot of liquid. I make coconut milk in the Vitamix regularly and only have to add a little bit of water to get it to move around in the blender. How long did you dry for? In my Nesco Gardenmaster it took a full 6 hours. I cant imagine leaving an oven on for that long.
The hot Vitamix scares me too but with dried unsweetened coconut it turned to butter before the vessel got hot. The metal plate gets hot but not the container.

You are perfectly right! I dried them in oven at 50 Celcius for whole night and when i tried again Vitamix turned it into delicious butter in matter of 20 seconds at most :)… So DRIED coconut is a must..thanks again!
P.S. Vitamix is a wonder!

Do you think it would help if you soaked the coconut in water before trying to blend it or make matters worse?
Mega says
Nevermind. I didn’t read through enough comments. I found my answer. 🙂 I want to try this!

I have a vitamix and this is….I can’t name it! You have marvelous recipes! I click one and bam! There are 17 more opened up! I can’t stop looking and trying! It all started by searching “peanut butter dip” on google and now I’m a fan!
Lexi says
1 question:
can you make it with sweetened coconut?
Thanks!
Chocolate Covered Katie says
I haven’t tried… I’ve heard from others that it doesn’t work.
Kathy says
I tried this in my food processor and nothing happened. It just made the shredded coconut finer. Really disappointed as I love coconut and really wanted to try it. I processed it for 15 minutes and nothing.
Meagan says
I’m in the process of making coconut butter. It’s not as thick as it seems in the photo above, in fact, it’s quite thin. I did have to add a little coconut oil to it in order to get the blender to move. Also, it’s still a bit grainy. Should I keep processing it? Will it work for the peppermint bark if I use it as thin as it is? Should I add more coconut? Should I leave it as is? Should I give up and toss the whole deal? Thanks! Oh, and I’m using a regular blender as I am without a Vitamix,:(

I was almost ready to shell out the $13.00 + dollars for a jar of Artisana coconuut butter when I stumbled upon this article. Thanks for the great tip!!!

Hi Katie,
I love all of your creative, healthy recipes! I’m on your blog almost weekly!
For the coconut butter, can you use DRIED, shredded coconut?
Thanks!
Chava says
I just read through the comments and found my answer. Thank you!

Hi, I made this today but mine is a bit gritty….how can I make it less gritty?
Sarah says
Concerning the coconut butter you said you used your vitamix….do you have the dry blades container or the wet one?

I found a recipe today for maple ice cream that used coconut butter – I don’t think I’ve seen it here in NZ and had really only heard of coconut oil. I had to google and then found your blog (which I am now reading frantically) and used this method in my little mini wizz. Love it! Thank you!
Kathleen Vondra says
Where did you find the recipe for maple ice cream made with coconut butter? I would love to try it; maple walnut ice cream is my favorite!
Livi says
yum! do you think this would work with toasted coconut flakes?
Ginger says
When you refer to a bag of coconut (shredded), are you talking about dried coconut???
karen says
Hi
I just found your site and just finished making coconut butter. Had to figure out the best setting for my processor but once I did it was a breeze. Not as smooth as most would prob. like it but Hey, I like chunky peanut butter, too. BTW it isn’t chunky just not really smooth. I only used one 200g bag to try it out and actually wondering if two or three bages would work better.
As for the consistency – in my kitchen coconut oil only liquifies in the summer, so the butter will be the same. Never melt the oil, just use it. Funny thought is that I am glad the oil jar is labeled 😉
caroline says
I buy Coconut Cream Concentrate” from Tropical Traditions. Here are the ingredients: 100% pure finely ground coconut. Then it says: “It is sometimes referred to as ‘Coconut Butter.'”
http://www.tropicaltraditions.com — I buy my organic coconut oil from them as well.

Finally got my vitamix! I made the coconut butter and its fabulous! Do you store the coconut butter in the fridge or cabinet? Thank you!!

Can i use the congealed layer on top of my coconut oil instead of coconut butter?
Jennifer says
I just made this and it tastes fabulous, but it’s a little runny. Is that how it’s supposed to be at first?
Stephanie says
OMG! I just made the coconut butter. It’s absolutely amazing!! I hate the texture of coconut, but love the taste and this is perfect since the coconut flakes are pulverized. It took a couple minutes from start to finish. I am very impressed with how easy it was to make. Thanks so much for the information.
Mel says
I tried this in my BlendTec Twister Jar and it was done in 30 seconds! It turned out perfect and I will be adding this to my future creations!
huhchuh says
When I make this in the food processor, I’ve noticed that the dryness of the coconut flakes affects whether or not it comes together into a butter. I had some older dryer unsweetened coconut flakes that wouldn’t come together into a butter. Newer unopened packages of coconut flakes with a lot of oil in them turn into a butter without any issues.
lilav says
I used my magic bullet took a lot of scraping and I always added a little bit of coconut to the mixture to blend thoroughly, instead of just chucking the whole lot in the magic bullet. It’s creamy like the photo, tastes good too.

Quick! In 2 seconds, give my your favorite recipe using coconut butter!!!
Haha ok, I’m planing on making coconut butter for the first time, and I know you have so many great looking recipes using it, and I couldn’t decide which to try first. What would you recommend?
Thank you very much!:)

I made it yesterday and it worked after I added 2 tbsp of coconut oil. I do not own a vitamix but my food processer worked, too. Thanks for the recipe. I haven’t even heard of coconut butter before- probably because I live in germany. Germans do not care about healthy food as much as they should. I have also tried some other recipes you posted. I am so impressed– raw food is my new love! 🙂
Agnesia says
Hi! I just want to ask, is it possible to make the coconut butter using fresh coconut meat? In my country, the price of shredded coconut are more expensive than the fresh ones so, if I do make them with the fresh coconut meat, should I alter the recipe?
Thanks!
Linda says
Can you use real coconut meat, fresh from a nut to make coconut butter? Or must one use dried schredded coconut meat? From one coconut to another!
Louise Gagne says
OMG – how easy was that to make – I couldn’t believe it watching it turn to liquid before my very eyes. I won’t hesitate to make this again and again. Bless your heart Katie. LG
Erin says
I tried this about 4 days ago in my Cuisinart food processor. I had my doubts with the finished product. Mine was nowhere near a “butter” state, but very creamy looking and smooth. It was also extremely warm from the processor running for so long. It’s been sitting on my countertop since with anyone coming into my kitchen asking “What is that?!?”. I just couldn’t justify throwing it away. I figured I’d find a use for coconut goo somehow. I’ve checked it everyday and now glad I didn’t just toss it. It got a little firmer along the edge by the second day. Third day more solid but liquidy in the middle. Low and behold my surprise when I opened the jar and realized my goo had solidified completely this morning after 4 days! It’s now spreadable and I am thrilled!! For the small price of my 8oz bag of coconut ,$2.36, I have half of a 12oz jar of coconut butter. Thanks for this idea! I never thought one could make it at home. A little patience and determination makes a huge difference!

I live in Houston as well, can you purchase the “Let’s Do Organic” coconut shreds at a local grocery store or do you order it online?
Jody says
Has anyone tried making this from fresh coconut?
Layla says
So I don’t have to buy expensive coconut flakes, I can just buy unsweetened shredded coconut in the baking aisle?
will says
there’s a lot of fiber in that coconut meat, so my guess is it will always turn out a bit gritty. And that’s no matter how creamy it gets and looks. a vitamix is strong enough to drive a car so you can’t do more. if you extract the oil you are left with what’s called copra. many industrial fibrous uses there. big time in bygone days.
your blog is nice. thanks will, san francisco
Ann Bartholomew says
Is it supposed to be grainy? I added some oil to it while it was in the processor, and scraped every so often, but is seems a little on the grainy side. Should I add more oil to the next batch & blend longer than 10 minutes?
Chocolate Covered Katie says
Supposed to be smooth. Keep blending longer until it resembles the texture of peanut butter 🙂
Ann Bartholomew says
I’ll keep it in mind for the next batch, or try the Cuisinart blender.
Verna says
Katie, I ‘d sure like to make this coconut butter. after I bought more coconut oil I heard about this butter. Sounds even better.
Rachel says
This is a complete necropost, so I don’t know if you’ll see it, but I was wondering if you have a general idea of how much coconut butter comes from a certain amount of shredded coconut (such as how much butter would come from a cup of packed, shredded coconut). Thanks!
Angie says
Hi Katie, could this be used in place of coconut oil? (Like, if I melted it?)
Wendy @ The Nomadic Vegan says
I did it! First peanut butter and now this. I love my food processor! I’d never even tasted coconut butter before tonight; I believe the first I heard of it was reading about it here on your website. Then Lauren over at The Oatmeal Artist was gushing about it too, so tonight I made some following your instructions and then used it to make this oatmeal recipe: http://www.theoatmealartist.com/coconut-kiwi-oatmeal/. Absolutely divine!

For those of us in the UK: is shredded coconut a bag of fresh coconut straight out of the shell and grated, or has it been dried or otherwise processed in some way? Trying to work out what I would use to have a go at this. I assume that dessicated coconut is too dry. Has it been sweetened?
Thanks.
Stephanie says
Can anyone give me a shred to butter volume estimate? How much butter would, say, 1/2 cup of shredded coconut yield? Or, conversely, how much shredded coconut do I need to yield 1/2 cup coconut butter?
Thanks for any input!

I tried making this but it never turned into butter it’s extremely hard. Is it a climate thing?

Almost blew up my food processor. Just turned into a burnt black stinking mess. I only put a couple spoonfuls in at a time with some coconut oil. No success.

I secretly hope that your recipes don’t taste a quarter as good as they look. I am getting over sugar addiction but I want to have no-sugar-added/fruit-sweetened desserts. Though, I’m a bit scared to use dates as a single date has 16g of sugar. Although it’s fruit, that’s still a load of sugar in a single date.
Anyways, point is that all these recipes are still very calorie dense and I’ve been doing so well eating vegetables and I have difficulty refraining if I eat a snack/sweet. So, if they tasted still ideally like real food (i.e. like full-fat greek yogurt with fresh fruit – yummy but not addictive like junk food desserts) and not as sweet and delicious as they look – then I think I’d be safe.
Joy Cartwright says
Iam going to try the coconut butter, will my food processor do the job? what is the difference between coconut oil and coconut butter?
A H says
You can try with the food processor, and let us know how it works. As for coconut oil & coconut butter, you can google it to get more information, but the quick answer is that Coconut oil is the oil that’s been extracted from the coconut meat, while coconut butter is made from coconut flesh that’s been ground into a spreadable paste.
Candra says
I have got to try this. I currently use coconut oil for like everything…hair, body, cooking…I wonder if coconut butter will be a replacement for my whipped coconut oil I use for my skin. We shall see…

Can I use the unsweetened shredded coconut from Trader Joe’s? It is so dry, I can’t imagine it would work.
Lila says
hi! im going to try this today! how many days can i have it in the fridge? can i freezze it? thankss

Made it! That was fast and easy. I’m wondering if I didn’t blend it enough, it’s just a little powdery to my tongue. Is that normal?
Josée Lalande says
What level on the Vitamix for 3-5 minutes?
Cynthia M says
Even though you have tons of comments, I am going to leave mine as well…. I found a partial bag of shredded coconut in the pantry and decided to try it. It looked dry, I put it in the food processor, but nothing was happening. Then threw it in teh small container/Twister Jar of my Blendec and within 90 seconds- it was liquid. It did harden up once cooled. Never bought the commercial stuff…but this is very delicious….
susan says
what would happen if i used sweetened flaked coconut?
Jason Sanford says
Not sure, but be sure to report back if you do, with whether it still turns to butter. Would be an interesting experiment!
astaff says
Could you make it in a nutri bullet?
Jason Sanford says
Possibly… be sure to report back if you try!
Linda says
You are correct, this is addictive! Mine has a slight golden tinge to it, not white like your photo. Could it be the brand I used? Bob’s Red Mill. And I think I processed a tad too long as it’s not as firm looking as yours. But, it is my first time (and won’t be the last) so I’m pleased.
Thank you for all of the great recipes you share; I’ve tried several and am never disappointed.
Jason Sanford says
Hmm just sounds like maybe your processing it longer heated it more and so it tastes a little bit toasted – which sounds like a good thing 🙂
cindy LAROCQUE says
this didn’t work I tried twice and the second time added the coconut oil but no luck:(
Madeline Hall says
Do you use Sweetened or Unsweetened coconut for the coconut butter?
Jason Sanford says
Unsweetened
Janice Mastin-Kamps says
I saw a comment on your coconut butter recipe and can’t find it now. Someone has had good luck using a blender other than Vitamix– maybe a Ninja or a Nutribullet? I want to ask Santa for the right one because I would love to make this! Thank you for any suggestions.
By the way, I mentioned your blog at a weight watchers meeting (love that your newer recipes list WW points!), and our speaker posted it on the group facebook page… I believe you have a couple dozen new fans:)
Jason Sanford says
I would highly recommend getting a Cuisinart food processor if you can only get one thing. It can be used here, and it can also be used to make Katie’s recipes such as the unbaked brownies, black bean brownies, cookie dough dip, and others that she says to use a food processor instead of a blender for.
Carol says
Yum!!!
Jessie says
It would not blend into butter at all in the Vitamix even with coconut oil but bended great in a food processor.
