This coffee mug cake comes complete with crumbly streusel topping in each little bite.

By now, I think all of my girl friends–and some of the guys too–are on Pinterest. We were talking about the site a few days ago, and one of my friends mentioned a “coffee cake in a mug” pin that taunted her every time she logged into her account.

Finally she wrote down the recipe with the intent of trying it at home, but then was horrified to learn one mug contained 720 calories and an entire day’s worth of saturated fat!

How can they fit so much fat into a single mug?!

So I came up with a healthier version for her.

You could quadruple the following recipe and it would still be healthier than eating one of the frankenmuffins from Pinterest.

I think my friend approves of this recipe.

She’s made it four times already and says I’m her new favorite person in the world.

Apparently my face is now pinned to her “Dream Wedding” Pinterest board, under the title “dream wedding caterer.”

Not sure how I feel about this…

To answer a question that a bunch of people have been asking:

Coffee cakes traditionally do not have actual coffee in the ingredients. They are so named because they’re seen as “a cake that goes well with coffee.”

If you want to add a sprinkle of instant coffee to this cake batter, feel free!

Coffee Mug Cake

A soft, homemade, easy and single serving coffee cake in a mug recipe.

Ingredients

  • 3 tbsp spelt, white, oat, or almond flour
  • 1/4 tsp baking powder
  • 1/16 tsp salt
  • pinch uncut stevia OR 1 tbsp sugar
  • 1 tbsp + 2 tsp water, or 1 egg or flax egg if using almond flour
  • 2 tsp oil or buttery spread – or applesauce
  • 1/4 tsp pure vanilla extract

For The Streusel

  • (If you like a lot of streusel feel free to double all ingredients below)
  • 1/8 tsp cinnamon
  • 1 1/4 tsp sucanat or brown sugar, or keto sweetener
  • 1/4 to 1/2 tsp oil or butter, or applesauce for low-fat
  • tiny pinch salt
  • 2 pecan or walnut halves

Instructions

  • I prefer the oil or buttery spread, but that’s simply because I’m not a fan of fat-free baked goods. If using an oven, preheat to 330 F. Combine batter dry ingredients and mix well. Add wet and mix until just mixed. In a tiny bowl, combine all streusel ingredients. Fill a greased muffin tin 1/2 way with the batter (or use a ramekin or mug, if using the microwave). Sprinkle on two-thirds of the streusel, then spoon the remaining batter on top. Finally, sprinkle on the rest of the streusel. Cook 12-13 minutes in the oven, or around 1 minute in the microwave. Microwave times will vary, depending on microwave wattage.

    I’m going to have to try this ASAP. i used to make chocolaet ones in grad school all the time.

    I know a lot of people that have put a lot of effort into their weddings already- and are probably still years away from it. I guess if it makes them happy, but I’m so low key I’m trying to figure out a way of getting married in flip flops.

    I was just talking about the baked goods I missed since being vegan, wheat and refined sugar free. Coffee cake was one at the top of the list. Along with cinnamon buns and gingerbread (both the loaf and the men). Can’t wait to try this. YUM!

      I just made this with Bobs Red Mill AP GF flour, coconut sugar, and earth balance – it was amazing!!! You won’t feel like you’re missing anything!

          I LOVE THIS CAKE. It’s been my go to with all the diet restrictions I have right now. I make it GF, nut free, and refined sugar free. This works wonderfully with coconut sugar and Earth’s balance for the streusel, I use coconut oil for cake. I haven’t tried oat flour but found the results with Bob’s GF flour to be too spongy/rubbery, the best results I’ve gotten (GF) are with 2 tbsp brown rice flour and 2 1/2 tsp coconut flour (used less flour because coconut flour is a liquid hog!). This combination gave it a wonderful moist somewhat denser texture more like a pound cake. I also used carton coconut milk instead of water.

    Oh man my roommate is definitely obsessed with wedding stuff on pintrest. She nuts! I’ve seen a few of those crazy bride stories too. One girl went tanning so much she basically cooked herself from the inside out and died at the altar. SCARY.

      I’m pretty sure that’s not a true story lol. I suppose it is possible that she tanned waaayyyyyy too much &also happened to die at the altar,but the events would almost positively be unrelated. A tanning bed is not a microwave,it would not “cook” someone from the inside out..precisely the opposite. It would be from the outside in,meaning that the external effects would manifest long before anything internal happened..&since we are talking about a tanning bed,something that physically changes the color of ones skin at an expidited rate,the symptoms would surely be noticeable. If someone tanned long enough for it to cause intetnal complications,they wouldve greatly surpassed that bronzy glow that any bride to be would be looking for,several times over. Assuming she did it in several sessions like normal,she wouldve had to have burned &blistered and still continue with her sessions at which point idk what word would properly describe the condition that poor girls skin would be in… But my bet is no one would intentionally turn themselves into a crispy burn victim,especially if they’re walking down the aisle. HOWEVER, there is the possibility that she tried to get all her color in one go,say, the day before the nuptials,& stayed in the bed for a very lengthy amount of time,where the effects wouldnt be felt immediately..but I know theres no salon in the world that would allow that and you’d think someone would have enough common sense to know that laying naked in a machine thats basically the sun on massive steroids &only inches away from you&your naughty bits probably wont yield any desirable results…..but honestly,these days,i almost wouldnt be surprised if this story was actually true &that is what happened.
      Stupidity isnt grand,UNLESS were talking about these stupid easy &even more stupidly delicious mug cakes…especially this coffee cake one. Mm mm…just mmmmmmm. Simply delightful? Nope. Stupidly delightful 🙂

    Yum, I love coffee cake. I will probably try something similar soon. I have trouble following recipes, instead I use them as a guideline. lol
    I am in Wedding Mode right now because I am getting Married in September. I haven’t been planning all my life, In fact I didn’t seriously start planning until early this year… I am running out of time and doing my best to put together a fun wedding on a tight budget. I’m soooo glad I am not a bridezilla though. I watch that show ‘Bridezillas’ as a what NOT to do! lol, that and it’s also a guilty pleasure.

LOL! :0) I freakin’ LOVE coffee cake but won’t make it anymore because I know how much guilt and regret I’d feel after consuming a piece from a normal recipie. Can’t wait to try this!     I am finally old enough that the biggest marriage and baby blitz has passed. I would be lying if I didn’t say it was a bit hard because I wasn’t a part of the wave. However I have always known my wedding if I had one would be extremely easy and now, more and more I am thinking elope or justice of the peace.

    THEN spend the money on a fun vacation experience!

    (and yes, I have seen some crazy stipulations for the bridesmaids…kind of says a lot about the bride in my opinion).

    YUM!!! Could I have this for breakfast? I REALLY hate using the microwave just because it takes out the nutrition in anything and emits dangerous radiation. But I don’t wanna wait for the oven either 🙂
    Anyone obsessed with weddings? Well, I was *sort of* obsessed with the Royal Wedding. I know what you’re thinking- such a loser. Well, my cousin was obsessed with the Kim Kardashian Wedding. now THAT’s a real loser :p
    And guess who’s still married?
    If you said Kim you need therapy.
    So many people were surprised that they broke up so quick. Was I the only one who was surprised that it lasted a WHOLE 72 days?

    This looks absolutely AMAZING! I will be making this yummy recipe this weekend! I think my very non-vegan husband might like this as well! Thanks for another fantastic recipe!

    As for weddings- I agree. It should be special and perfect because of who you are marrying!! I married my husband in a courthouse in the presence of 8 people and a judge, in a 3-dollar thrift store dress. We had plans to have a “real” wedding, and even that one was very low-key. But in the end, we just didn’t feel like waiting that long just to make a spectacle of the whole thing. And I am definitely NOT saying that all weddings are just a big show- I love lovely weddings! Nothing wrong with that at all if you keep in mind the true reason for the whole thing! But for us- two young (I was 18, he was 22), spontaneous people, it just wasn’t for us 🙂 But here we are, nearly 8 years later with 2 kids!

    As someone who just got married, it is hard not to get caught up in wedding madness! I’ve heard stories of brides making the bridesmaids dye their hair so that nobody has the same hair color as them! How crazy! Aren’t they in your wedding because you love them and want their support?

    I love what you’re saying about weddings – hasn’t it become the social norm to focus more on the wedding than the actual marriage? After three years of reading books like the Five Love Languages, Personality Plus and Building Your Mate’s Self Esteem; hanging out with couples who have been married for years and are actually happy, and learning as much as possible about building a solid foundation, my honey and I are finally at the planning stage. Honestly, this stage is getting less attention than other struggles in our life that we are going through together.

    The divorce rate is over 50%, correct? There’s nothing wrong with wanting to plan out a beautiful wedding, but perhaps we all need to consider what’s going to happen several years down the road when the butterflies flutter away!

    I do have a wedding page on Pinterest, but its only for those pins that are so crazy cool I think “I want to do that IF I ever get hitched.” I feel weird planning a wedding without the groom….he’s kind of half the party, ya know? His opinions definitely count, so why plan the whole thing alone…when I’m still single?

    This looks delicious! I assume the ones pictures you did in the oven, how is the texture when microwaved?
    One of my sisters is getting married in August and the other is an event coordinator/wedding planner, so I hear lots of wedding talk. It’s always fun though. I’m definitely a few years away from that, I’m more concerned with finding the dream groom, the actual celebration not so much (at least not yet).

        Old Married Lady here! Looking for recipes for one or two (hubby travels – he’s a musician)… So fun – must made it before my dinner for one – now I’m full… oh well – I liked this better than my main course! But I never microwave – was curious and used it – hence a spongey but tasty bit – forgot to use the nuts – this is definitely a great morning treat with coffee – my dog loves when I bring coffee and breakfast in bed – she thinks she’s getting something fabulous… Anyway, she won’t get this nor does she get the green smoothies we’ve been having! I’m going to make the chocolate cake in a cup next (tonight – hahah – I’m recipe testing!)… Thanks for doing this – it’s a great idea! AND I agree – ditch the wedding and take a nice vacation!

      Good morning. I literally just did this one in the microwave.

      Generally speaking, I find the microwaved versions slightly…spongy-er. That is the best way I know how to describe it. I still microwave more often than not because it is fast, easy, and no heating the oven.

      I will say that having done some of these recipes both oil or applesauce versions that when I have done the oil it has been more of an oven consistency in the microwave…if that makes sense?

        That’s because applesauce versions will also be gummier. So an applesauce version in the microwave = double gummy! Haha but some people like it that way! I know my friend uses the applesauce version of this recipe and loves it. I probably wouldn’t even like the applesauce version in the oven! Everyone’s tastes are different ;).

          Yes…gummy is a good description. 🙂 Once I did applesauce + microwave + whole wheat flour. You can probably imagine. I was overtired that night. 🙂

          The oil versions just have more of a rich baked goods taste to me.

        Hello! I LOVED this recipe…thanks so much Katie! But in fact I have to say that if you microwave it you CAN make it fluffy, light, and not gooey or dense at all! I also used whole wheat flour! The trick is NOT to overmix, as it will cause the cake to develop lots of gluten and become gummy. It is also very critical that you do not OVER-MICROWAVE it! (Try cooking 30 sec first, then stick a toothpick in to see if it comes out clean. If not, then cook it longer) So remember that less is more.

    I’m totally with you, Katie. I definitely don’t want a big expensive wedding; in fact, if the time’s right and the person’s right – why not elope?! It would save everyone stress, money, and time! All for what – one day? Plus, 50% end in divorce, so no matter how you look at it, there’s a chance it won’t last. I guess you could say I’m a little cynical when it comes to marriage 🙂

      Exactly! Put the extra money in savings and you can use it for something that’ll last much longer than one day!

      (Of course, I know some people disagree and say that you get memories from the day so really it lasts more than one day, and therefore the money isn’t gone within a few hours.)

    This is just what my Monday morning needed! I looove coffee cake, but even the vegan ones I’ve tried end up being a hazard to my health. I used oil and the microwave, and yes it came out “springy” but it was so delicious and quick, it didn’t matter. You’re a genius, Katie!

    And on the topic of weddings – I’m getting married in a year and want to be at my top game health-wise, which is how I found your website! My sweet-tooth will never shut up, so healthy treats are my new jam.

    I love your single-serving cake recipes! I make your chocolate microwave mug cake every day, and add a dollop of peanut butter to the middle of it before cooking. It’s heavenly! I’m super excited to try this recipe.

      I did a version of this one with peanut butter as the oil and it was incredible. I like your idea of just straight peanut butter in the middle of the chocolate one though too.

    Seeing as how I just celebrated my 3rd wedding anniversary, I can safely say that I don’t have a “dream wedding” to plan. Perhaps a “dream wedding vow renewal” to work towards! *lol* Actually…that’s not a bad thing to start saving for!

    The coffee cake looks good. I’ll have to get a few things, but I’m eager to try it, perhaps later this week. I usually do the single lady cupcakes in my pretty coffee cup (it gives them a nice shape), and I’ve been slathering them with the Reese’s Frosting. Excellent stuff. 🙂

    Speaking of…I have Zumba tonight…I can afford some yummy chocolate. Time for a snack 🙂

    I have some friends who seem to be obsessed with weddings, and sadly enough they are very single.

        Katie, is the pure uncut stuff 100% stevia extract? I’ve got a bottle (it is a powder) from Trader Joe’s with the label “100% stevia extract” that I have never used and I always wonder if that is what you are referring to when you mention “uncut” stevia in your recipes? If not, then what is it and where can I find it?

    Hey Sweetie – this coffee cake looks tasty, tasty, tasty!!! I can’t say how much I appreciate the WW points in the nutritional info! No need to worry about conversions from cals to kilojoules!! So easy and great because most of the WW snack bars/etc we have here are full of wheat and other stuff and I really need to lose some kilos (or pounds!) but you need something right? You betcha! 3 points for a snack is really good!

    I can’t say I’ve ever endured a bridezilla but I have endured a mother-of-the-bridezilla once when I was a bridesmaid! Your Mum’s maid sounds like a real trouper though! What a good friend!

    Also, the directiona are a little confusing, do I put dry and then wet together and thw mix the stroussel, and pt the strussel on the bottom of the cup? 🙂

      Mix all dry for muffin (not streusel). In a separate bowl, mix all muffin wet. Combine.

      Then in another separate bowl mix ALL streusel. Put 1/2 the streusel in the middle of the muffin and the other half on top. 🙂

I just tried this coffee cake and because I don’t use spelt or white flour – and love to experiment – I made it with 1 Tbsp. Brownrice flour and 2 Tbsp. almond meal (and butter instead of oil) – yummy!!

    Just want to say that I appreciate that you include microwave directions. It seems like many vegans these days are under the impression that a microwave isn’t healthy when nothing could be further than the truth! Decades of research have proved their safety, and it’s the best method of cooking for preserving the most phytonutrients, macronutrients, and micronutrients. More than steaming! Sorry for my tirade. 🙂

      Microwaves actually change the structure of food by the friction caused by heating, rendering it unrecognizable by the body. The body then treats it like a toxin, not food. Food cooked in a microwave causes an immune response (a flood of white blood cells) to deal with the altered food which also causes hemoglobin deficits. (anemia can also be a result because of this).

      Any food heated higher than roughly 114 degrees causes nutrient, enzyme and vitamin loss, regardless of how it’s heated. If your food comes out steaming hot, it will have gone through some degree of nutrient loss.

          Andrea, I also had some trouble with this. I had to bake it (in the oven) 6 minutes more than called for to get it to set. I used whole wheat flour, and melted butter as my “oil.” Everything else I used as called for. The picture makes it look nice and fluffy, like a cupcake. Mine was nice and dense, like the sour cream coffee cake my mom used to make, but it would have been gooey if I’d taken it out of the oven at the specified time. As it was, it fell. But that’s a problem I always have with baking powder goods. I must overbeat it or something.

            I realize this comment is like 8 months old now but I think I may have just made the same mistake. I used 2 tbsp of oil instead of tsp… they took longer to bake and were dense. Hope this helps future bakers 🙂

    Ok….so don’t joke around about about being “pinned to her “Dream Wedding” Pinterest board” Every night I get on Pinterest and I always end up back here at your website. ;D My husband jokes around and says why don’t you marry this girl already. lol

    I have made your One minute chocolate cake a few times now. It goes down a treat!! Made it for Mother’s day. Used separate bowls for mixing the ingredients for each person. Made a huge mess, but they turn out great each and ever time. I have used the apple sauce variation and used just straight sugar instead of the stevia. But will give that a go, one of these days. Does that make it less calories?

    I am so gonna have to try this coffee cake now!!!!

    Ah. I know of the evil – but so good – recipe that this is inspired by. I made it once. And while it was delicious… I’ve never been able to convince myself to make it again. I did however just make your recipe and Katie dear, you’re a food genius! I’ve not had a chance to try many of your recipes yet but I have made several of them and I’ve loved them all, but this is by far my favorite! I love cinnamon anything. (=

    I have a dream wedding board on Pinterest… but it has to be said, my dream wedding is small and simple. I don’t need a fancy dress or ridiculously decorated cake. I don’t want my wedding to be all about me. I want it to be about both my groom and I together as a couple and surrounded by our closest loved ones. So, my wedding board is rather small and consists of sweet, simple ideas of things that we could do to give our wedding that cozy, intimate feeling. And there are of course some dresses and veils included. I’ve known a couple Bridezillas in my time and I just don’t understand why they have to be so dramatic and make what should be a happy event stressful for all involved. I’d rather my wedding and all the days leading up to it be filled only with happy tears – not bickering, anger and tears of frustration!

    Hi CCK. I was wondering why you always use spelt flour? Is it nutritionally superior to all purpose or whole wheat? What’s the difference between spelt and all purpose? Thankssss

      Hey, I don’t want to speak for Katie, but I can answer some of your questions. Spelt flour is MUCH more nutritionally dense than any form of wheat flour and fairly high protein to boot, not to mention a higher fiber content too. It also contains much less gluten so it’s quite a bit easier to digest. Healthier all round really. 🙂 Hope that helps a bit.

    This looks good! Bet it doesn’t even need frosting/glaze. I just made your 1 min chocolate cake yesterday for my friend’s birthday. Perfect 1 person serving! Put a candle in it and everything. 🙂 made 1 for myself to sample ahead of time to make sure it was good (it was!!) I chose to use 1TB coconut sugar in place of your 2 tsp sugar. It was delicious and moist! I used coconut oil (not applesauce or alternative.) Made it in a 1 cup round glass pyrex dish in microwave for 1 min. Had little trouble getting it out of dish. I greased with coconut oil. Should I have used something else? I tried once taking it out when hot and once when completely cooled, both times stuck. Advice?

    Also, I made your peanut butter chocolate banana frosting. Yum!

    This looks amazing! I’m hoping to make this tonight when I get home. I feel silly asking, but are you supposed to chop the pecans/walnuts for the streusel? It looks crumbly in the picture but I think all it says in the instructions is to combine the ingredients. Chopped or no, it sounds / looks delicious!

    I must be odd as far as weddings go… maybe years back I would gotten caught up in the fun of it, but right now when I try to picture it I just get stressed thinking about what a logistical nightmare it will be to try and find a venue that is a least slightly convenient for some of the guests (both my boyfriend and I have friends and family all over the place), plus there’s the potentially awkward meeting and mixing of family that don’t all get along… ugh. I really think eloping or going to the JP and then having a casual party somewhere is the way to go (for me).

    I will say I was a great bride. I let my bridemaids choose the dress and colour and let them do their hair and makeup however they liked. And one of my bridesmaids was 6 months pregnant on the day. She practically rolled down the isle. It was great because we were all relaxed and had a fun time.

    If I could offer one bit of advice for those planning a wedding….wear comfortable shoes!!! I had a traditional long wedding gown but opted for ballerina type white satin slippers. You’re going to be walking around, talking/chatting, posing for pics, and dancing your day & night away. So be comfy!!! No one even noticed my shoes until I pointed them out! A friend of mine wore the same kind of shoe/slippers at her wedding & said she was so thankful that she did! 🙂

    I know you spend a lot of time on your recipes and this site already, Katie, but I’m going to request additional information. I often want to make your single serving recipes, but I am NOT a single lady and if I’m making muffins, I need a dozen or two at a time. I have in the past just gone through and multiplied all the ingredients by 12, but it does get tedious and I need to find somewhere to save this information, etc. etc. I was hoping that instead of hundreds/thousands of us readers each doing all this math individually in our kitchens each time, perhaps you could post a link on recipes for a ‘panful’. I know I’d try more of the single serving recipes that way.

          Oddly enough, it’s not always as easy as just increasing that much. For example, if you try to do that to my single-lady cookies you end up with a goopy mess! Things don’t always scale properly, for some strange reason.

        I must apoligize because I kinda went crazy the last couple days…and have lost all ability to follow directions so I am so sorry for my screw ups with the vitamix entries…

        Also, there were a couple recipes that I went on sparkrecipe and re-entered and got different results…I’m assuming it probably has something to do with my ingredients as opposed to yours (such as strawberries vs cherries, or medium banana vs grams, etc) thanks for always responding with such speed.

    I just made this but paleo’fied it. By using 1/2T coconut flour, 2T almond meal. And more fiber stevia. It was so so sooooo good! I actually made a second one too and added ground ginger, nutmeg and some shredded zucchini. Mmmm. It’s more of a mix between a blonde brownie and baked oatmeal. But amazing non the less.     This looks great. I am always looking for a fast breakfast and I’m glad I know not to be disappointed if it comes out flat.

    I can’t believe people ask someone not to break a bone. How can you prevent that? We called my wedding “The Handicapped Parade” because my sister (maid of honor) was on crutches because of ankle surgery. She asked me before she had the surgery and I told her that her being pain-free was more important to me than having crutches in pictures. Our best man had a cane because his MS had gotten so bad he was not able to walk outside unassisted and another bridesmaid was on crutches because she was hit by a car while crossing the street 2 weeks before the wedding. We were just happy to have them all there.

    I have a quick and really weird question. I have a one cup glass pyrex round dish and was wondering if that would work for this? I want to bake it in the oven, hence the pyrex dish, I’m just not sure if the size is ok for a one muffin sized cake. I’m sure you probably have no idea, hahaha. Just thought I’d ask.         I made two coffe cakes, for my daughter and myself, using two 6 oz Pyrex dishes. After baking at 330 for 15 min, it looked like it needed another minute, but had already cooled. So I put it in the microwave for about 30 seconds (1200 watt microwave). It was delicious and had a nice crown.

      You can make a really quick icing by just mixing powdered sugar or sugar-free powdered sugar with a few drops milk of choice. (I think you could just use water for a thinner icing… I used almond milk for the one in the photos.) .

Speaking of weddings, or rather anniversaries, we will be celebrating our 25th this Autumn and I have already been collecting coffee mugs to give as favors along with a Single Serving of Mug Cake. HOWEVER, I think the plan has now changed! This will be way more meaningful! We get up every morning and enjoy a good cup of coffee and some together time before our days get crazy! We pray together and always, always talk! This recipe will lead right into sharing one of our tips for a lasting, loving marriage! Thank you!

    We started with a very simple wedding, (the florist didn’t even arrive until after the ceremony, LOL) and a reception that was thrown together, by today’s standards, but we have been so happy together, (even during the very difficult times)! Your spirit is so refreshing and you will reap such wonderful joy if you continue to look at your wedding day with that view! Here’s what I’ve always told my, (now grown) daughters, “A wedding is a DAY, a marriage is a LIFETIME, keep your perspective grounded.”

    Yum! I just made a quadruple batch of these and ate two before I could stop myself! I used 1/3 whole wheat and 2/3 white cake flour, half and half coconut oil and apple sauce, and half Stevia half sugar in the cake part. I used xylitol in the streusel, and confess to doubling the streusel recipe ( it’s my favourite part of coffee cake!) I baked them in the oven and they rose beautifully, and were nice and light. Thanks soooo much for this delicious recipe!

    Just made this with applesauce, whole wheat flour, and used the microwave. With the combination of those, I didn’t expect much. But I took a bite, and just stared at it for a couple seconds trying to comprehend how it was so tasty! For the streusel, I made more of a syrup-y consistency, so the cake came out like a moist cinnamon roll. Delicious! Thanks for the recipe, I’m sure I’ll be making plenty more of these bad boys!

    Hi Katie, I tried twice to make this but I used almond flour and coconut flour. When I put the wet ingredients in there it was thick so I put some more water and it still thick so I put it in the oven and it took over 30 minutes and it was tasty but mushy. Any ideas??

As I was saying, in this 1 minute coffee cake in a mug recipe, you use spelt, but you mention you can use a rice flour/almond flour mixture.     I just read the nutrition info. How is it 2 grams of fat per serving if it has 2 tsp of oil? I used coconut oil in the recipe (it was already melted…yay August! *ugh*) and 2 tsp is 10 grams of fat. That adds 70 more calories too, unless I missed something?

    I was so excited when I learned you could make cakes in the microwave!!! I had never thought about that before. So I made this for breakfast today, but I made a few changes. Okay, I sort of turned it into a different recipe. 1) I used whole wheat flour, 2) I used canned pumpkin instead of applesauce, 3) I left out the streusel and threw in some raisins and pumpkin pie spices. It was amazing! It didn’t rise as much as I expected, but it was still delicious, especially with some cashew butter on top!

Since I am a celiac, I made it with a tablespoon of GF oat flour, a tablespoon of sorghum flour and a tablespoon of brown rice flour (really random-I know, but it worked!).     Tried this recipe and it was amazing and super easy. I added a little extra cinnamon to the dry components. I love cinnamon and adding a little extra to your daily intake is is good for stabilizing blood sugar and lowering bad cholesterol.

    I just made this and it was SO good. I made the mistake of putting it in too big of a mug and ended up needing to make more batter. I also doubled the streusel before I knew I was going to have to make more batter. I’m pretty sure there was more streusel than cake…and I had to cook it a bit longer but it was still really good. I’ll make it again in a smaller mug and maybe even have the patience for the oven. I honestly didn’t think the texture was too spongy in the microwave but I did use oil.

    I use a metric system but I didn’t convert it to ml and all – I just literally used the tablespoon that I use at the dining table, mixed everything together and baked it in a muffin cup. It turned out a little like a cookie, albeit a soft cookie. And I noticed that when I mixed the batter, it wasn’t runny – it was literally like cookie dough. That’s not supposed to be the correct way, right? :/

    This looks so yummy! I’m gluten intolerant, though and I’m having trouble getting this turn out right. I used gluten free all purpose flour and tried making it in a mug and it turned out totally weird. I tried again another day thinking maybe I had measured something wrong. And I baked it in the oven. It was better than the microwave one, but still a little gummy. Not sure what I’m doing wrong or if maybe I need to try another flour.

    Absolutely delicious recipe. I am gluten intolerant and lactose intolerant so I used Earth Balance “butter” and Buckwheat flower which is naturally gluten free. This turned out the same as the more heavily caloried coffee cup cakes. The only thing that I noticed was that it didnt rice as nicely as the other coffee cup cakes, but this might be from the flour. Due to the fact I tried the others with regular flour (before I was gluten intolerant). Overall absolutely delicous and the perfect size for a sweet morning breakfast.

    I have had this recipe saved in Evernote for months. I finally tried it today. The first attempt was not appetising at all, I tried it in the microwave and overcooked it. I had put it in a much larger mug, and it wasn’t a good idea to do that.

    However, the second time, I mixed it up and then put it into a single silicon muffin tray, and watched the microwave carefully to try to gauge the right time to stop. In the end, what came out was pretty good.

    I used half and half olive oil and coconut oil. I also used crushed up almonds instead of walnuts as that’s what I had. But it was good. Nutritionally, mine worked out to around 230 calories, but I’m happy with that. Unfortunately though, there’s no fibre in it.

    I like the idea.

    So my current tale of woe is I cannot have any sweeteners except Stevia and Xylitol. That works fine for the coffee cake part (I’m hoping–haven’t tried it yet, but excited!). But for the streusel, what would you suggest if I cannot use brown sugar or sucanat? Or am I out of luck on streusel? 🙂

    I just made this and it was delicious! I used 1 1/2 T oat flour with 1 1/2 T WW flour and organic brown coconut sugar. It took exactly 1 minute in the microwave it doesn’t look as pretty as yours but I don’t even care. Now I want like 6 more 😉 I might have to make up several of them at a time to keep in the freezer for quick easy treats a couple times a week. THANKS!!

    When i first tried this i got a wonderful result…just like your photo. It was a “did i bake that??” moment. But now i just cant replicate it. They are not rising in the oven like before and the inside is very dense and gummy and doughy. I used spectrum shortening every time and using the oven. Im an old guy so not a natural baker or cook. What is happening when something like this does not rise? I use spelt flour and swerve sweetener every time. Many thanks for any help…im not certain if i used an electric mixer the first time. i hand mixed with a spoon with all the failures. Could that be it?

    Instead of 2 tablespoons of margerine, olive oil, or applesauce, I used half coconut oil and half applesauce. It was SO good. I made one on the microwave and one in the oven to compare and the oven was a bit better. I will definitely be making it again. I also used coconut oil in the streusel instead of margerine.     I just stumbled over your recipe; it sounds delicious. And I’m thinking, I’d like to make one as a surprise for my Mister 😉

    I love baking but I usually spend hours in the kitchen – but today is such a nice, hot, sunny day here and I’d rather spend the day outside so I’d like to test the fast microwave version. I just tend to ruin things in the microwave. I’m not sure how to set t up so the batter doesn’t either remain fluid or explode inside the mug.
    Man, do I prefer ovens!
    Tips for me? Maybe even in degrees (Celsius, I’m in Germany)?

      Oven texture will be much better. But if you have a microwave, maybe a minute will do it, depending on your wattage.

    In the past, the “mug” recipes have always been a letdown. They’re usually rubber when they come out of the microwave, regardless of how carefully you watch them. This recipe, however, is absolutely perfect!! I was leery of all spelt flour, but OMG…… it’s the perfect texture for this!

    I would love a “full-size” recipe for this to serve as either dessert or as a light breakfast along with fruit.

    This was delicious! I’d never made a mug cake before; usually I only use my microwave for re-heating leftovers. I used whole-wheat flour rather than spelt and cut the sugar down to one teaspoon. It cooked beautifully in one minute (to my surprise), and popped right out of my mug–no greasing required! It was tasty. It’s definitely on my “cook again” list.

    WOW, I made this today and it’s so yummy! I think this one is worth doubling then using a regular sized mug because lets face it… one is not enough! After doubling the recipe, I put it in for 1min 30 sec and it came out perfect. The second time and I swapped the vanilla extract with almond. I was missing brown sugar so I just used regular sugar and added in a drizzle of molasses to make up for it. I have to confess that I also added more sugar. I do not have nuts so I’m wondering if I could try raisins next time. I think this one will be one I’m going to enjoy and play around with! What a quick an easy way to enjoy a muffin. Thank you for this! And I’m also excited that I can make it vegan and no one knows.

    I tried something inspired by yours, with 2 tbsp rice and 1 tbsp coconut flour and switched water for full fat youghurt and it came out yummy. Only thing was that it didn’t have a cute high dome like yours? Is the one in the pictures baked in the oven or microwave? 🙂

    Surprised my sister on her birthday with this cake, it was a hit! I of course needed to test the recipe out before I gave it to her ;D I made mine with spelt flour in the microwave, it turned out a bit crumbly but perfectly tasty. For sis I used regular white flour in the oven and it turned out perfectly! a little soft, and very sugary (I had to triple the streusel for her sweet-tooth, haha). But because I’ve had it before with one or two of your recipes, that my cake had a lot more calories than in the nutriton fact, I calculated the calories of this recipe. I followed recipe exactly, except I topped the tiny baked cake with a tsp of powdered sugar mixed a tsp of cream for an icing drizzle. Satisfied my sweet tooth without derailing my plan to cut down on the sugar and processed sweets. Need to see if it comes out as well in the microwave. Thanks!

    I have made this recipe more times than I can count now. It is a big hit with so many in my family including my kids. Some variations I’ve made…many times depending on what was left in the kitchen ha, ha! 1) I’ve done gluten free flour (works great too, all of the topping sinks to the bottom but that’s okay, still yummy) 2) I’ve done half white flour/ half whole wheat flour (it works very well) 3) I’ve replaced the vanilla with almond extract (yum!) 4) I’ve added food coloring for holidays 5) I didn’t have brown sugar so I used molasses and sugar separate (gave it a nice flavor to use actual molasses).     Gluten free cookies. Instead of using any kind of expensive flour. Make cookies with gluten free whole oats pulverize half and then add the rest to the mix. Tried it yesterday with adding pulverized walnuts and 2 bananas. They were so good..

    I made this tonight it was super easy and delicious. It seriously hit the spot. I tripled the streusel and I added a little cinnamon to the actual cake part and it was moist and delicious and ready in under 10 minutes. Next time I would like to also whip up a tiny bit of cream cheese icing for this.

    I just made this & it was absolutely delicious! To try to make it as sugar free as possible I subbed in date paste (just blended dates and water) for the sugar in the “cake” and left out the water: it was so so so good! I didn’t even feel guilty after eating it! Thank you for a great, easy recipe!

    Katie a lot of your recipes say uncut stevia. I use the liquid stevia and have a tough time converting. Do you know how many drops would work when you say a pinch of uncut?

    First of all, when i tried this i didn’t look anywhere as pretty as the photos but it was still delicious and perfectly fluffy. When i made this my second time i doubled the whole recipe because it made a very small portion. I also added instant coffee granules which gave it a nice coffee taste.

    I had never successfully microwaved cake before, but this was delicious. It seemed a little wet when I took it out, but they get awful when overcooked, so I pulled it anyway. The texture is really nice with no egg. It’s kinda flat, but my mug is super wide. I might throw one together tonight to have in the morning.

    I am so thankful I found this site. I have twin girls, one was diagnosed with celiacs 4 years ago and the other has 24 foods she is allergic to. Mug cake is perfect for the one with food allergies. Breakfast is one of the hardest for her since she is allergic to eggs, bananas and potatoes. She has options now other than oatmeal and bacon!

    The taste was great, but it came out a little gummy when I made the fat-free version. I was out of cinnamon, so I used some instant coffee granules (it IS a coffee cake, after all) and I feel like this improved the taste.

    I am eating this as I type. Oh. My. GOSH!!!! Why have I lived 20 years on this earth without this! Most and light. Fluffly and glorious. I used half oil half apple sauce in the batter and oil in the topping. The only change I made was adding 1 tbs oat to the topping mix. Yum!

    It’s not called coffee cake because there’s coffee in the cake (though I suppose if you made it with different flavors, you could add coffee to it). Traditionally it’s known as a coffee cake because it’s cake that is intended to be eaten with coffee or tea, as a brunch item or a snack when you have company.I think the “way back when” origins of it involved a sponge cake made with coffee as one of its flavorings or as part of the icing on top, but different cultures use different types of flavors, such as nuts and cinnamon and streusel topping, which is the tradition I’m used to.

    That’s the “history of coffee cake” as I know it, anyway! 😀 More knowledgeable people, feel free to chime in with data.

    I tried it this morning and it is absolutely divine! It’s really tasty, I made it in the microwave and just ate it straight from the mug. I used sugar instead of stevia, and white flour. According to my calculations it should have about 15 grams of sugar not using stevia, but regular white sugar. It really does taste like a coffee cake and I think I will be making these into little mixes by mixing together all the dry ingredients, and then in the morning you can just mix in the wet ingredients, pop in the microwave and your good to go!

    I’m not a vegan, and the move to become one is difficult (I most likely will never make it, I love steak too much). But your recipes are amazing, and the reason I bought a food processor. I’ve tried quite a few things on here, and my kids love it (even hubby liked a couple recipes). I’m glad I found this place, it lets me be able to have myself and my family eat a little bit healthier (and has saved me some money with using leftovers for lunch, breakfast, ect.) Please keep up the great work. I did however, have one question. My mother in law can’t have chocolate (it gives her migraines), is there anything I can use to trick her taste buds into believe she’s eating chocolate without actually giving her chocolate?

    I really wanted to like this recipe. It was super easy to make dairy free for my daughter and I. I followed the instructions of the recipe exactly and only made one tiny substitution Using 2 tbsp of oil in the muffin mix and dairy free earth balanc butter for the crumb topping (I use this as a butter sub all the time.) I tried making this twice and it flopped both times. The muffins didn’t really cook and were a crumbly mess. Thinking it was the vegan butter I made one with regular butter for my husband who doesn’t have dairy allergies and it did the same thing. Not sure how I got such different results then everyone else.

    I made it and It’s so good! But the nutrition facts listed don’t add up, not if you’re using 2 1/2 tsps of oil, which I about 12 grams of fat.

    So surprised by how amazing this turned out! I made it in a toaster oven in a small pyrex, following the oven directions, and I used the oil. Great texture and flavor! I will definitely be making this again. I also used pecans instead of walnuts.

    The purpose of eating is to add energy and nutrients to the body to sustain life and effect repairs.
    Microwave cooking defeats that purpose. Please rethink your support of this dangerous practice.

    Where do the pecan/walnut halves come into play? I see them listed on the ingredients but never specify what to do with them… Do they go into the cake itself or added to streussel(kinda like you would for a “crisp” or “crumble” topping)? Or garnished on top? It can go any way so I’m really not sure lol. Im planning to make them now,like very literally right now, so hopefully youll be able to respond soon! If you arent able to answer me before I make them,I’ll just guess&let you know how it turned out! Lol thanks for an incredible recipe! New to your blog but will def be sticking around.     I tried this, doubled the recipe to make one for my husband as well, used almond flour and coconut oil, followed everything to the t, and it didn’t turn out at all. Tried one in the microwave and it was A liquify mess. Put it in for longer and there was still a thick layer of bubbling oil on the top and the bottom was burned. Tried the other one in the oven and I still can’t get it to thicken and turn into a cake. Should I add more flour??

      Hi! Unfortunately a lot of recipes don’t work to just double them exactly. If you do want to double it though and find it is too liquidy, maybe try adding a little coconut flour if you have it? That soaks up liquid like a sponge!

    Did you use a coffee mug from a dollhouse set for the photo? I followed the recipe using spelt flour and coconut oil, and it was less than an inch at the bottom of a regular sized mug. I would need to multiple the recipe times 5, at least, to get a mug cake.

      Hi! Her mug is shown in the video she has in the post and it looks to be normal size, but most likely just smaller than the one you used. Hope the visual helps!

    I have made this more than I wanna admit, probably upwards of 20 times! I always use either banana, applesauce, or Greek yogurt instead of oil (bananas my fave) and double the streusel. I also add oats instead of nuts to mine and it’s so unbelievably good!

    I used the Oat flour/ stevia/egg/applesauce for muffin base and applesauce/sugar option for streusel. the streusel topping could not be “sprinkled on”. I kept adding some oat flour and hemp seeds to try to make it a crumbly texture but no luck. Too wet. Tasted like an egg spongy something. So weird.

      Hi, if using oat flour you don’t need the egg version – that’s just for the almond flour version to bind it 🙂

    In the nutrition information, you say that this is 25 grams of carbs! Is that a mistake (maybe 2.5 grams of carbs)? 25 grams of carbs for 1 small mug cake is not low carb or keto at all.

    What would you suggest for making it as muffins, like a batch of 12? Usually you do not do 12 eggs in a batch of muffins, so I would not want to just multiple the recipe by 12. I have a very restrictive diet and this recipe works for my diet and is possibly the closest I have gotten to a “normal” tasting coffee cake/muffin. Thank you!

    We love making these for breakfast! So yummy and quick. If we wanted to increase the recipe to make more at a time using oat flour and the microwave do we just multiply the recipe by that number or do you have a recipe for a larger amount of mug cakes? My kids always want at least 2 each and making each one individually is so tedious! Just hoping to find a shortcut! Thank you!

    We are down the mug cake rabbit hole. We’ve tried a different one everyday. We doubled the streusel and layered it with the cake batter. A bit more work but worked nicely! Added a touch of almond extract, and a touch of flour in the streusel to keep it together. Used nondairy components for allergy purposes. Worked great! Son said, “This is convincing!” High praise from a picky eater! The drizzle on top is a must IMO.

    This was really good. I like that it has less butter or oil than a typical mug cake. Some recipes have 2 – 3 Tablespoons of fat. I thought it was the perfect size, smaller but just enough. I used butter and omitted the nuts from the streusel. Next time I will make a powdered sugar glaze but it was good without it. Thank you for posting!

    OMG SO GOOD!! The cake was so fluffy and the streugal was AMAZING!! But i would recommend doubling or even tripling the streugal because it was very light. I made a little powdered sugar glaze to go on top and “chef’s kiss!” Thanks for the recipe!

    I love this recipe, it tastes great but its not pretty like Katie’s.

    I’m not sure why but no matter what i do none of my mug cakes come out fluffy? I am using the microwave. In this cake the streusel topping sunk into the middle of the mug cake and disappeared…not pretty but tasted okay. Mug cakes in the microwave always seem more chewy than like a light fluffy cake? Would love any ideas of what I’m doing wrong.
