Cookie Dough Bark – 8 Ingredients

This chocolate chip cookie dough bark is possibly the best thing to ever happen to a Monday.

Just 8 ingredients, no baking required – and it’s completely vegan!

You didn’t think I’d let Halloween go by without posting at least one new healthy candy bar recipe, did you? And this one is pretty epic, because it’s two layers of chocolate… with a layer of unbaked cookie dough in between! It’s like the candy bar of any chocoholic or cookie dough lover’s dreams. Hershey’s, take note!

Th bark is great for parties, because it’s fine to leave out at room temperature for at least a few hours without melting.

You could even throw a cookie dough-themed party, where every single dessert is made from cookie dough.

Cookie Dough Bark

Adapted from the famous Chickpea Cookie Dough Dip

Cookie Dough Bark – 8 Ingredients

Yield: a 9x13 pan

Ingredients

  • 1 can (or 1 1/2 cups cooked) chickpeas or white beans
  • 2 tsp pure vanilla extract
  • 1/4 cup nut butter of choice, or allergy-friendly sub
  • 1/2 cup pure maple syrup, honey, or agave
  • 1/3 cup quick oats (or flaxmeal, or flour of choice, excluding coconut)
  • scant 1/4 tsp salt
  • heaping 1/8 tsp baking soda, which gives a cookie dough flavor
  • chocolate chips, as desired
  • chocolate bark, listed directly below

Instructions

*For the chocolate bark, either melt 12 oz chocolate chips (I like to then stir in 2-3 tbsp oil for smoother results that are easier to spread) OR stir together 1 cup cacao or cocoa powder with 1/2 cup melted coconut oil and 1 cup pure maple syrup or agave to form a sauce.

Line a 9×13 pan with wax or parchment. Spread half the chocolate sauce on top, and refrigerate to set. Meanwhile, drain and rinse beans very well. Add all ingredients (except chocolate) to a food processor, and blend until completely smooth. (A blender will work if you must, but you should routinely stop the blender and stir to ensure even blending.) Stir in chocolate chips as desired. Spread over the chocolate layer in the pan. Top with remaining chocolate sauce, and refrigerate again to set. I like to cut into bars after about 15 minutes, when the top chocolate layer is not yet fully hardened and therefore is less likely to crack when cut. Store leftovers in the fridge or freezer, and thaw before eating. If using the chocolate-chip version, bars can be left out for a few hours without melting.

    Awesome, Katie! Looks grand! Question, though: when I got on the homepage, this post featured a picture of what looked like some wonderful banana-topped cookie. What was that?

      It’s related to a glitch with emails. For the correct image to show up on the blog, we need to set a featured image, but those featured images show up larger-than-life in the emails sent out to subscribers. So they’re left off until the email goes out. It should look much better today after around 10 EST 😉

    This looks amazing! I just wish I had the self-restraint to eat only 1/40th of a recipe at once (RE: nutrition facts and 40 servings from one pan!). I’m seriously impressed by anyone whom has the magic ability to stop at one little piece – I definitely do not 😉

      It makes a 9×13 so that actually would probably be a pretty decent sized piece of bark, especially being three layers. That’s not to say I’d stop at one piece either but at least they are lower calorie than I’m guessing normal cookie dough bark would be. Three pieces at 180 calories total sounds like a good dessert to me.

          But still, 40 servings out of a 9×13 dish?!? That is seriously skewing the nutritional value of the bars. The pieces would be about 1.5 inch squares (not exact but close enough), and while that is a nice small morsel it certainly doesn’t look like the large pieces that are photographed! And while 3 pieces doesn’t sound like a lot of calories, if you go by the Weight Watchers plan you have consumed 9 SmartPoints. For a lot of people, that would be almost a third of our daily intake. And that doesn’t take into account the extra calories if you use the cocoa sauce method-1/2 cup of fat & 1 cup of sugar really adds up.
          Granted, these will be more healthy than many other treats out there, and it has much more nutrition than a ‘regular’ chocolate cookie dough treat, it just irks me when the serving size is way out of whack with what we would actually eat!

            Katie uses a macro lens for her photography, so I think the “large” pieces you mentioned maybe are just not as large as you are thinking. I can vouch for these being the correct size, because I was there when she made them 😉

    Katie, just in case you didn’t know, there is a brand of chocolate that is stevia sweetened, and they also have chocolate chips, too! The brand is called ‘Lily’s’. I live in Western NYS, and I can find the products in a health food store, as well as my beloved Wegman’s grocery store. Fantastic way to cut the sugar even more in something like this!
    And btw, I LOVE the cookie dough recipe….have made it oodles of times!
