My Crazy Easter

It started with chocolate. And bunny ears and cupcake liners and flip-flops. (I have to return the flip-flops. Darn you, wide feet!)

It also started with rain.

Lots and lots of rain, but thankfully Easter itself wasn’t dreary at all. Some highlights:

I made these for breakfast: Strawberry Shortcake Pancakes

My sister flew in from Boston, and I’d driven to my parents’ house the night before. So we all had strawberry shortcake pancakes for breakfast. (I would’ve been more festive and made carrot cake pancakes, but not everyone in the family likes carrot cake.)

Quite possibly the funniest card I’ve ever seen.

My mom says she doesn’t care that we’re not kids anymore; she’s going to give us Easter baskets even when we’re grandparents. (She still makes a basket for my dad as well!)

For my Easter dinner, I made a meal out of the many vegan side dishes, which included sesame asparagus, broccoli with lemon and olive oil, magic mushrooms, strawberry spinach salad, etc.

And I also made a pan of my famous cornbread.

    cute dress, and your hair looks lighter- highlights?! My easter was great, but it was spent with friends instead of family. Holidays tend to be bittersweet for me since my family is so spread out. Glad you had a great day with your family.

    beautiful dress! my mom surprised me with an easter basket as well – she went and found me the best dark chocolate, even though I wasn’t even going home for easter and haven’t lived at home for years!

    I did make your carrot cake cupcakes on Easter for me (with the peanut butter frosting). Never would have thought to buy canned carrot before that and it is a great idea! I will do that again!

    For the Seattle area we had crazy NICE weather, so I feel for you in the dark and the rain. Very un-Easter-like.It sounds like you have a fun family. 🙂

    My favorite part of Easter is watching my kids and my niece and nephew hunt eggs. This year though my daughter got sick so she just laid on grandma’s couch. I made braised kale for my traditionally southern food family (think corn pudding, green beans with bacon, ham, deviled eggs) and several of them liked it. Nice to broaden their horizons a bit 🙂

      Haha I love it! I wish my mom would make me kale for Easter! We’re a southern family too, and I had to make my own vegan feast this year. Oh well, it was fun!

    Hahaha, I love that card!! And my mom still makes Easter baskets for my sister and me, too. I love it 🙂 One fun thing about my weekend was really having a collaborative effort in the kitchen this year! Usually my mom does the cooking, but this year my sister helped out a lot and I contributed two dishes.

    we had a butter lamb! i hadn’t gotten one before, and i’ve really wanted one. it’s pretty much just a chunk of butter shaped like a lamb, but they’re really cute.

      Sorry about that! I had a link up to the mushroom dish, but apparently it was broken. It should be fixed now!
      As for the other dishes, they were all made by my mom. I don’t think she uses recipes… she just makes things up in terms of proportions. The broccoli is one of my favorite holiday dishes. It’s steamed (but not mushy), then chilled. Then she drizzles olive oil and squeezes lemon on top and serves it cold. So so good!

    Such a cute card! What is wrong with that picture, though, isn’t the cannibalism: it’s the fact that he’s starting with the tail instead of the ears! … When I gave my puppy a bunny-shaped biscuit on Easter, I broke the ear off first so that he would do it “properly.” My sister think I’m nuts.

    hehe my mom makes us easter baskets as well. She mailed mine up to college! Anyways-Easter was different for me this year because I went to a wedding. It was certainly strange not having a typical Easter or being with my family but lots of fun too!

    Sounds like you Easter tasted wonderful and glad you had a nice time sharing with family, despite the bad weather. Those pancakes looks so delicious, I am big fan of strawberry shortcake– but I did make a carrot cake for Easter 🙂

    Oh man, someone in your family doesn’t like carrot cake?!? That’s what my wedding cake was. 🙂 I’m sure the strawberry pancakes were just as delicious.

    I don’t celebrate Easter, but had a great weekend with lots of hiking and eating!

    Aww! I’m glad you had a great Easter. 🙂 It’s so sweet that your mom still makes you Easter baskets. I got to make my mom an Easter basket this year. Homemade honey caramels,a chocolate bunny,a caramel egg,and a little origami kitty. It was a blast! In return I got amazing lotion,a blueberry plant,and an Easter pineapple. 😛

    The best part of Easter this year was that my 3 year old daughter “gets” it now. She woke up to a new bike that the Easter Bunny brought (her first real bike so I made it special with the EB giving it to her – and they were on sale at Target so it all worked out). She also did an Easter egg hunt (candy in plastic eggs) in the living room. She had a blast! After church, we went to my parents’ house with my sister and family and spent the rest of the day all together. It was a great family day!!

        This is the year she’s starting to “get it” and understand alot of what’s going on around her. It’s awesome! Christmas was great too! She’s starting to talk and communicate more and surprises me everyday with something new. Being a mom has been so much fun! Best part of my life EVER!

    more than one family was devouring Katie food on Easter. I made your Reese’s eggs (mine came out as balls though :/) and the macaroon chicks (but the assembly of these was a failure so I just threw all the makings into a pie pan with the macaroons). Regardless shape or assemby, EVERYBODY loved them. Thanks to you, I now hold the south Texas power of homemade better-than-store-bought Reese’s peanut butter “cups.”

    I would have to say my favorite part of Easter this year was the trick we played on my niece and nephews! They LIVE for the Easter egg hunt we do every year because we fill the eggs with money (coins mostly, but there is one egg with a $5 bill). We filled the eggs with rocks this year… Let’s just say their reactions were priceless! We of course, did another egg hunt with real prizes right after 🙂

    We had such a crazy Easter too with lots and lots of traveling! But it was worth it too be able to spend it with my boyfriend and get to see both of our families! Love your dress!

    Bless your mum; mine’s the same in that she still buys us eggs and gets us stockings at Christmas! But hold on, your family doesn’t like carrot cake?? How is that possible?!

    Happy Easter, Katie! Love the card, and it looks like you got a pretty good haul. I usually get lots of chocolate from my mom for Easter, but this year, Easter came two days before my birthday (which is tomorrow- 25 yrs old, eep!), so we celebrated that instead! 🙂 Glad you had a great weekend.

    Best. Card. Ever, A friend from Germany was back in the states so spent Saturday with her and hung out with The Best Friend all day Sunday. So in other words a pretty perfect weekend! x)

    First, you look adorable. Second, that cornbread looks amazing… I don’t know how I’ve missed it before. Easter was great, lots and lots of family time and driving all over the state… but I guess thats the benefit of being in CT, only 2 1/2 hours boarder to boarder!

    I wish I got an Easter basket! Although this year I was at my dads and they hide Easter eggs in the yard and fill them w money so that was awesome. It was also my first vegan Easter! I made vegan Easter cookies, straw spinach salad, bruschetta and a potato dish. Everyone loved it!!

      I wish they’d fill my eggs with money. This year they were all filled with jelly beans, which I can’t stand! Oh well, at least I had fun hunting them. The fun is more important :).

    I will admit that my Easter was spent stuffing myself with all the types of foods I know I won’t be eating for the next 2 weeks in Japan (yay). Even my guy called me a little piggy – it was embarassing but true. By the way, I love the flowery spring dress – very pretty.

        Haha, yes! Never enough chocolate. I learned that this weekend once again–my aunt had a chocolate fountain at easter. Dark chocolate. It was amazing.

    Those Pancakes look delicious. I think I may make breakfast for dinner one day this week now 🙂

    My daughter(5) has taken to our family tradition of getting one chocolate bunny and then smashing it with a hammer. My mom started the tradition because cutting the bunny with a knife is not an efficient way to share a bunny.

    We went to Alsace and it snowed. Very very far from your pretty spring dress next to the pool! I absolutely love that your mom still makes baskets for everyone. I need to do that for my kids. As it is we just do chocolate.

    I bought canned carrots just so I could try your carrot cake for one.

    Looks delicious 😀 I actually had a question regarding coconut 😛 Being a big lover of anything coconut related I came to know that coconuts are very high in saturated fat and its consumption should be limited. I know you use coconut butter a lot in your reipe so I was wondering if there’re any health benefits to eating coconut. Thanx 😀
