It started with chocolate. And bunny ears and cupcake liners and flip-flops. (I have to return the flip-flops. Darn you, wide feet!)
It also started with rain.
Lots and lots of rain, but thankfully Easter itself wasn’t dreary at all. Some highlights:
I made these for breakfast: Strawberry Shortcake Pancakes
My sister flew in from Boston, and I’d driven to my parents’ house the night before. So we all had strawberry shortcake pancakes for breakfast. (I would’ve been more festive and made carrot cake pancakes, but not everyone in the family likes carrot cake.)
Quite possibly the funniest card I’ve ever seen.
My mom says she doesn’t care that we’re not kids anymore; she’s going to give us Easter baskets even when we’re grandparents. (She still makes a basket for my dad as well!)
For my Easter dinner, I made a meal out of the many vegan side dishes, which included sesame asparagus, broccoli with lemon and olive oil, magic mushrooms, strawberry spinach salad, etc.
And I also made a pan of my famous cornbread.
Question of the Day:
What was one fun thing about your Easter?
Or, if you don’t celebrate Easter, what was one fun thing about your weekend?
In case anyone’s interested, here are last year’s photos.
Kat @ a dash of fairydust says
That card is super cute, but the very first photo definitely steals its show! 😉
You’re so pretty,Katie, and I love your dress! Glad you’ve had a nice Easter despite the dreary weather!
Chocolate-Covered Katie says
Aww Kate, thank you so much!!
Liz says
Agreed. You are beautiful!
And you look beautiful in last year’s pictures as well :).
katie @KatieDid says
cute dress, and your hair looks lighter- highlights?! My easter was great, but it was spent with friends instead of family. Holidays tend to be bittersweet for me since my family is so spread out. Glad you had a great day with your family.
Chocolate-Covered Katie says
I did get highlights :).
I hear you about the bittersweet thing… one of the reasons I love holidays is because they’re becoming the ONLY times my family is all together!
Barb says
beautiful dress! my mom surprised me with an easter basket as well – she went and found me the best dark chocolate, even though I wasn’t even going home for easter and haven’t lived at home for years!
Chocolate-Covered Katie says
Haha I think moms like to keep giving us Easter baskets because it makes them feel like we’re still young ;).
Samantha says
Cute dress by the way!
I did make your carrot cake cupcakes on Easter for me (with the peanut butter frosting). Never would have thought to buy canned carrot before that and it is a great idea! I will do that again!
For the Seattle area we had crazy NICE weather, so I feel for you in the dark and the rain. Very un-Easter-like.It sounds like you have a fun family. 🙂
Claire @ Live and Love to Eat says
OMG, thank you for sharing the card. Too freaking adorable! 🙂
Shannon says
Love the dress! You look so cute 🙂
Tried to see the recipe for your mushrooms though and got an error. Even tried looking them up on your recipe page same thing. 🙁 Love mushrooms and would love to see the recipe.
Thanks for all the great recipes!
Chocolate-Covered Katie says
Yikes, thanks for letting me know!
I could see the page, but apparently it was somehow listed as a draft… so no one else could!
I *think* it works now: https://chocolatecoveredkatie.com/2010/04/16/magic-mushrooms/
Ashley @ My Food 'N' Fitness Diaries says
strawberry shortcake pancakes sound like the PERFECT easter breakfast!! love that card – too cute!
Jennifer D. says
My favorite part of Easter is watching my kids and my niece and nephew hunt eggs. This year though my daughter got sick so she just laid on grandma’s couch. I made braised kale for my traditionally southern food family (think corn pudding, green beans with bacon, ham, deviled eggs) and several of them liked it. Nice to broaden their horizons a bit 🙂
Liz says
Haha I love it! I wish my mom would make me kale for Easter! We’re a southern family too, and I had to make my own vegan feast this year. Oh well, it was fun!
Katie @ Peace Love & Oats says
I didn’t get to celebrate Easter since I wasn’t home and my brother forgot… But I did get to go on a walk with my brother and his puppy since it was gorgeous out that day!
Stephanie @ Legally Blinde says
Hahaha, I love that card!! And my mom still makes Easter baskets for my sister and me, too. I love it 🙂 One fun thing about my weekend was really having a collaborative effort in the kitchen this year! Usually my mom does the cooking, but this year my sister helped out a lot and I contributed two dishes.
Carly says
We usually don’t celebrate Easter… but we wound up spending some time with my sister this year. We smashed cascarones on each others heads! SUPER fun if you’ve never done it. I blogged about it here: http://johnnybug.wordpress.com/2012/04/09/cascarones-chocolate/
Laura @ Sprint 2 the Table says
I love your Easter basket!
I catered a wedding shower the day before, so I was pretty tired. My sister made mom and I mimosas and we chilled by the pool. 🙂
katie says
we had a butter lamb! i hadn’t gotten one before, and i’ve really wanted one. it’s pretty much just a chunk of butter shaped like a lamb, but they’re really cute.
Jennifer @ Peanut Butter and Pepper says
OMG! The card is hilarious! I am such a pancake fan and I have to try your cupcakes, they look wonderful!!
Jennifer @ Peanut Butter and Pepper says
I have cupcakes on the brain for some reason, I meant pancakes. Geez! Happy Tuesday!
Liz says
Cupcakes on the brain… sounds like me, all the time!
Aubrey says
Would you post some recipes of what you made for dishes:)?
chocolate-covered katie says
Sorry about that! I had a link up to the mushroom dish, but apparently it was broken. It should be fixed now!
As for the other dishes, they were all made by my mom. I don’t think she uses recipes… she just makes things up in terms of proportions. The broccoli is one of my favorite holiday dishes. It’s steamed (but not mushy), then chilled. Then she drizzles olive oil and squeezes lemon on top and serves it cold. So so good!
Katy says
Such a cute card! What is wrong with that picture, though, isn’t the cannibalism: it’s the fact that he’s starting with the tail instead of the ears! … When I gave my puppy a bunny-shaped biscuit on Easter, I broke the ear off first so that he would do it “properly.” My sister think I’m nuts.
HollieisFueledByLOLZ says
hehe my mom makes us easter baskets as well. She mailed mine up to college! Anyways-Easter was different for me this year because I went to a wedding. It was certainly strange not having a typical Easter or being with my family but lots of fun too!
Suzie says
Sounds like you Easter tasted wonderful and glad you had a nice time sharing with family, despite the bad weather. Those pancakes looks so delicious, I am big fan of strawberry shortcake– but I did make a carrot cake for Easter 🙂
Lauren @ Oatmeal after Spinning says
Oh man, someone in your family doesn’t like carrot cake?!? That’s what my wedding cake was. 🙂 I’m sure the strawberry pancakes were just as delicious.
That card is adorable! 🙂
I don’t celebrate Easter, but had a great weekend with lots of hiking and eating!
And, I have wide feet too. I feel your pain.
Anna @ The Guiltless Life says
Muahahahaha that card is hilarious! And yet kinda sad 🙁 lol!
Dudette (Miss Lebowski) says
I saw that card at the store the other day, and almost bought it just for myself. It is SO funny! Cute bunny ears btw, now you can be a bunny on halloween 🙂
Maddie says
Aww! I’m glad you had a great Easter. 🙂 It’s so sweet that your mom still makes you Easter baskets. I got to make my mom an Easter basket this year. Homemade honey caramels,a chocolate bunny,a caramel egg,and a little origami kitty. It was a blast! In return I got amazing lotion,a blueberry plant, and an Easter pineapple. 😛
Janet says
The best part of Easter this year was that my 3 year old daughter “gets” it now. She woke up to a new bike that the Easter Bunny brought (her first real bike so I made it special with the EB giving it to her – and they were on sale at Target so it all worked out). She also did an Easter egg hunt (candy in plastic eggs) in the living room. She had a blast! After church, we went to my parents’ house with my sister and family and spent the rest of the day all together. It was a great family day!!
Anonymous says
Awww I am so excited for when my little one will “get” it. I have a ways to go yet… she’s still in my belly!
Janet says
This is the year she’s starting to “get it” and understand alot of what’s going on around her. It’s awesome! Christmas was great too! She’s starting to talk and communicate more and surprises me everyday with something new. Being a mom has been so much fun! Best part of my life EVER!
Liz @ Tip Top Shape says
Aww, my mom made me an Easter basket, too!! She was all excited for me to open it. And she did, well, too. Chocolates, make up, and more chocolate. She knows her daughter well!
the surfer says
more than one family was devouring Katie food on Easter. I made your Reese’s eggs (mine came out as balls though :/) and the macaroon chicks (but the assembly of these was a failure so I just threw all the makings into a pie pan with the macaroons). Regardless shape or assemby, EVERYBODY loved them. Thanks to you, I now hold the south Texas power of homemade better-than-store-bought Reese’s peanut butter “cups.”
Thank you.
Chocolate-Covered Katie says
Aw thank YOU for making them!
Sabrina @ Nutritiously Sweet says
The pancakes look delicious! My mom use to do egg hunts with us but she says we are too old lol. But she still always gives a little something 🙂
Lori says
I would have to say my favorite part of Easter this year was the trick we played on my niece and nephews! They LIVE for the Easter egg hunt we do every year because we fill the eggs with money (coins mostly, but there is one egg with a $5 bill). We filled the eggs with rocks this year… Let’s just say their reactions were priceless! We of course, did another egg hunt with real prizes right after 🙂
Liz says
So cute!!!
Meg @ Maknwaves says
We had such a crazy Easter too with lots and lots of traveling! But it was worth it too be able to spend it with my boyfriend and get to see both of our families! Love your dress!
Eleanor@Eatinglikeahorse says
Bless your mum; mine’s the same in that she still buys us eggs and gets us stockings at Christmas! But hold on, your family doesn’t like carrot cake?? How is that possible?!
The strawberry pancakes look fab though and the card’s brilliant 🙂
Chocolate-Covered Katie says
Haha I know, right? Crazy!
Ashley (Southern Purple Vegan) says
I wish I had gotten a Easter basket myself. However I got to see a cousin of mine after 7 years of not seeing him to find out that he is going to school to be a musical composer, Which I think is better than a Easter basket.
Annie @ Naturally Sweet Recipes says
You are NEVER too old for Easter baskets! My hubby and I do them for each other, haha. This year we hid a treat for our puppy- it was the cutest thing watching him sniff around us trying to find it. Glad you had a great Easter!
Char @ www.charskitchen.ca says
Happy Easter, Katie! Love the card, and it looks like you got a pretty good haul. I usually get lots of chocolate from my mom for Easter, but this year, Easter came two days before my birthday (which is tomorrow- 25 yrs old, eep!), so we celebrated that instead! 🙂 Glad you had a great weekend.
btw, frizzy hair?? pfftt, your hair is always perfect.
Chocolate-Covered Katie says
You are the best :).
Ashley says
Best. Card. Ever, A friend from Germany was back in the states so spent Saturday with her and hung out with The Best Friend all day Sunday. So in other words a pretty perfect weekend! x)
Kailee says
Katie, you are stunning!
Laura @ A Healthy Jalapeño says
First, you look adorable. Second, that cornbread looks amazing… I don’t know how I’ve missed it before. Easter was great, lots and lots of family time and driving all over the state… but I guess thats the benefit of being in CT, only 2 1/2 hours boarder to boarder!
Happy Easter!
L. says
Makes me wish I did not live in California! You can’t drive ANYwhere!
kate @eatrecyclerepeat says
I had a hanami – flower viewing – picnic with friends underneath some cherry blossom trees.
bridget@mrsgreenjeans says
I wish I got an Easter basket! Although this year I was at my dads and they hide Easter eggs in the yard and fill them w money so that was awesome. It was also my first vegan Easter! I made vegan Easter cookies, straw spinach salad, bruschetta and a potato dish. Everyone loved it!!
Kailee says
I wish they’d fill my eggs with money. This year they were all filled with jelly beans, which I can’t stand! Oh well, at least I had fun hunting them. The fun is more important :).
Katie @ Nutrition in a Peanut Shell says
You look absolutely stunning! I love your dress 🙂
Kristen @ notsodomesticated says
Looks like you had a great holiday! 🙂 We had a great Easter weekend … on Easter day, we served at church and then enjoyed a BBQ with some other church members later that day. Good stuff!
L. says
I can’t stop laughing at that card!
Lexi @ Cura Personalis Foodie says
The cornbread sounds delicious! I actually had cornbread too, but it looks like yours was better 😉
vogelstar says
I will admit that my Easter was spent stuffing myself with all the types of foods I know I won’t be eating for the next 2 weeks in Japan (yay). Even my guy called me a little piggy – it was embarassing but true. By the way, I love the flowery spring dress – very pretty.
Lauren says
I couldn’t help but nominate you for some awards! You’re a favorite of mine http://cravingsgoneclean.wordpress.com/2012/04/11/versatile-blogger-and-liebster-awards/
Chocolate-Covered Katie says
Thank you so much, Lauren! Your blog is beautiful… I love the header! And I like how you stressed the chocolate when you mentioned my site. Maybe add a few more “and chocolate”s.
You know, like ten more? 😉
Lauren says
Haha, yes! Never enough chocolate. I learned that this weekend once again–my aunt had a chocolate fountain at easter. Dark chocolate. It was amazing.
The Mrs @ Success Along the Weigh says
Looks like a wonderful way to spend the day!
One good thing about our Easter was how much people raved about my Easter Egg Cake Balls. It’s nice to know when effort is appreciated!
Beth H @ Gardens and Garlic says
I made dyed Easter eggs for the first time in years. My grandson is one now and I might as well get him started right. He loved the egg hunt! And my family loved the homemade Reese’s Eggs! Thanks for the recipe!
tmmc says
Those Pancakes look delicious. I think I may make breakfast for dinner one day this week now 🙂
My daughter(5) has taken to our family tradition of getting one chocolate bunny and then smashing it with a hammer. My mom started the tradition because cutting the bunny with a knife is not an efficient way to share a bunny.
Chocolate-Covered Katie says
Haha that actually sounds fun… wrong, but fun. Kind of like my Easter card above ;).
Lady Jennie says
We went to Alsace and it snowed. Very very far from your pretty spring dress next to the pool! I absolutely love that your mom still makes baskets for everyone. I need to do that for my kids. As it is we just do chocolate.
I bought canned carrots just so I could try your carrot cake for one.
LizAshlee says
You are too cute! Wow, that breakfast looks amazing!!
Nadiya @ Milk and Honey says
Looks delicious 😀 I actually had a question regarding coconut 😛 Being a big lover of anything coconut related I came to know that coconuts are very high in saturated fat and its consumption should be limited. I know you use coconut butter a lot in your reipe so I was wondering if there’re any health benefits to eating coconut. Thanx 😀
Alyssa says
Aw, the poor bunny on that card looks so guilt-ridden, lol!
Glad you had a nice Easter!
Mary says
Luv your dress, it’s super pretty.
