As I write this post, I’m on my way to Rehoboth Beach for the week! So far, I’ve found two ways to entertain myself in the car:
1. Taking ridiculous car selfies. And also snapping pictures of my younger sister who is sleeping. Blackmail for later.
(Older sisters are evil.)
2. Eating homemade blueberry mini muffins, made specifically for the trip.
I adapted the recipe from my Healthy Blueberry Muffins and Chocolate Chip Banana Bread Mini Muffins and was was quite heavy-handed with the blueberries, so each mini muffin is jam-packed (no pun intended) with blueberry flavor. These pictures were also taken with my iphone, proving you certainly can still write a food blog even if you don’t want to spend the money for a fancy camera.
Blueberry Mini Muffins
(makes 20-22)
- 1/2 cup milk of choice (120g)
- 2 tsp apple cider vinegar (10g)
- 1 tsp pure vanilla extract (4g)
- 1 1/2 tbsp vegetable or melted coconut oil (15g)
- 1 cup spelt, all-purpose, or Bob’s gf flour (120g)
- If using Bob’s flour, add 1/4 tsp xanthan or guar gum
- 1/4 tsp cinnamon
- 1 tsp baking powder
- just over 1/4 tsp salt
- 1/4 cup granulated sugar of choice or xylitol (50g)
- pinch stevia, or 1 additional tbsp sugar
- 1 cup blueberries, fresh or frozen and thawed (125g)
Blueberry Mini Muffins Recipe: Preheat oven to 350 F and line a mini muffin tin. Whisk together the first four ingredients, and let sit at least 10 minutes. In a separate mixing bowl, combine all remaining ingredients but the blueberries and stir very well. Pour wet into dry, and stir until just combined. Then add the blueberries and stir just once, very lightly so as not to break the berries and turn the batter purple. Scoop into the muffin liners, making sure you get at least 2 blueberries in each. Bake 10-12 minutes (my gluten-free trial took 12), or until a toothpick inserted in the center of a muffin comes out clean. (All recipes on this site should be baked in the middle rack unless otherwise noted.) Take out and let sit at least 20 minutes—the blueberry mini muffins will firm up during this time so that they will not stick when the liners are peeled away. Leftover muffins should be stored in the refrigerator or freezer.

Do you enjoy the beach?
Are you one of those people who can sit out all day, falling asleep in the sunshine or reading a book under an umbrella? Or do you prefer to be more active, jumping in the waves or shopping in town? My favorite time at the beach is early in the morning when no one else is around and the only sound is that of the crashing waves. I’ll go for a walk or run right at the water’s edge, watching the sun slowly rise above the water.

I am totally a beach person!!! My favorite vacation is going to Destin, Florida and I’ve already been this year. I enjoy laying around on the beach, but it’s also fun to cool off in the water. While you are in Rehoboth you have to go to Nicola Pizza for their famous Nicobolis. I just ordered a case of them for my husband’s birthday. Shipping them is really expensive, but totally worth it! Have a great time at the beach! Thanks for all of the amazing recipes!

I know you have a cookbook to write, but this hardly seems like a recipe. You just re-published your other muffin recipe but swapped the chips for blueberries. I keep coming back here to find a new and innovative recipe, but every time it’s just a rerun or a holiday recipe roundup. I know these are free and I shouldn’t be whining, but I guess I’ll just wait for the cookbook instead of anticipating new recipes.

It’s not an official term or anything… but sometimes when I read through the comments and someone says something rude to Katie there’s a lot of people who defend her. Don’t get me wrong, I am very very glad that people stick up for Katie when someone says something nasty and i would defend her too if I weren’t a year and half late. My only problem is that some people get too over-protective of Katie and start making sniping comments back at someone who may have had a very innocent and well-intended question. Case in point: one of the comments on Katie’s sugar cookie oatmeal post. Most of the comments defend Katie and confront the attacker in a very positive way but one of the comments at the end… not so much.

Katie these muffins look delicious!I will be making these in the near future.I was actually just at rehoboth less than a month ago for a wedding and let me tell you it is beautiful!The boardwalk is so adorable and fun to walk along.My family and I had a great time renting one of those 6 person bikes and just biking around the cute little town.Make sure you are very careful there because they give out tickets very easily and keep a close eye on the parking!

I just made them for breakfast! Delicious!
Changes and Substitutions I made: For the flour I used about 3/4 cup of brown rice flour and equal parts of oatmeal and cornstarch for the other 1/4 cup. I used 1/8 cup of honey instead of sugar. And butter instead of oil.
I didn’t have a mini muffin pan, so I used a donut pan. It made 6 yummy muffin-donuts! Thank you for the recipe!

Have fun at the beach, enjoy your holiday! Those muffins are looking great! I’m living near the beach and am more of a forest person, isn’t that terrible? Fortunately we have dunes with trees which is the best combination, a bit of sea and forest together. I’m not someone who can be lazy on a towel all day, I like to walk around or swim. Hi Katie, I just found out that I have a nickel allergy and I have to cut out certain foods until my reactions go away or for a lifetime. That means I can’t have all my favorite foods, and most of them are in your recipes! The main things are chocolate, soy, oats and nuts (all the best things), and some whole grains.. I wasn’t sure if you had any ideas what I can sub your recipes because I LOVE them!

I long ago outgrew wanting to fry in the sun all day – apart from hating sunburns, I find myself totally bored by lying around. If I were going to Rehoboth Beach I would make sure to stop by Dogfish Head and enjoy some of their exceptional beer and wonderful food. 🙂 Hope you had a great time!

Hello! I was excited to try this recipe as I have several food allergies, but unfortunately they didn’t turn out very good. I followed the recipe to a T, not sure what went wrong. I used Bob’s gluten free flour and added the xantham gum. It seems like a cup of blueberries was too much–maybe 1/2 or 3/4 cup would have been better, since these are mini muffins? Then the batter itself was really dry, am wondering if it needed more than 1/2 cup of milk? Once cooked, they rose beautifully and the blueberry distribution was okay, but the taste was really bland and the muffins were extremely dry. I genuinely want to figure out what might’ve gone wrong, as I am very much a beginner at this baking thing 🙂 Thanks for taking the time to put this together and I hope this feedback will be helpful for both of us. This look absolutely delicious. The Bob’s red mill four I have is 1 to 1 all purpose flour. It already has xanthan gum in it. Do I have to add more or omit if it’s already in my flour? Just was wondering.
