Here is everything you need to make the recipe.
Gather together almond flour, cocoa powder, baking powder, salt, water or coffee, eggs or flax eggs, sweetener, and pure vanilla extract.
Look for fine almond flour or almond meal. We do not recommend substituting coconut flour. If you prefer a cake with flour, try this Vegan Chocolate Cake.
The almond flour dessert calls for both regular unsweetened cocoa powder and Dutch cocoa powder, which gives cakes a brownie like taste. If you are not able to find Dutch process cocoa, it is fine to swap out with additional regular cocoa powder.
To make a low carb and keto almond flour cake with no sugar, simply choose granulated erythritol or xylitol instead of granulated sugar.
For a plant based and vegan almond flour cake with no eggs, use flax eggs or prepared boxed egg replacer.
Add water for a basic chocolate cake or brewed espresso or coffee to create a mocha cake. The recipe is both milk free and dairy free.
Almonds provide healthy fats and fiber, and the flourless cake is completely oil free, with no olive oil, coconut oil, or any other type of oil required.

How to make the flourless chocolate cake
Start by greasing two eight inch round baking pans very well with oil or fat free spray. Alternatively, grease one nine by thirteen inch rectangular cake pan.
Preheat the oven to 350 degrees Fahrenheit.
In a large mixing bowl, whisk the almond flour, cocoa powders, sugar or sugar free alternative, salt, and baking powder.
Stir in the liquid ingredients to form a chocolate cake batter. Because this is a gluten free cake or torte, you do not need to worry about overmixing the batter.
Pour the mixture into the prepared rectangular baking pan, or divide it equally between the two eight inch pans.
Place the pan or pans on the center rack of the preheated oven. Cook for eighteen minutes or until a toothpick inserted into one of the cakes comes out mostly clean.
The finished almond flour cakes will look darker in color. They do not rise much, which makes this a perfect layer cake recipe, as there is no need to trim the tops before icing.
Let the cakes cool on top of the oven. If you will be removing them from the pans, it is important to let the confections cool fully before going around the sides with a knife and inverting onto a plate.
This cooling step will ensure the flourless chocolate cakes do not fall apart and the frosting does not melt. After cooling on the counter, we recommend refrigerating in the pans until cold to be entirely sure the centers are no longer warm.

Chocolate cake frosting ideas
The recipe tastes fantastic on its own or topped with fresh strawberries, raspberries, blackberries, and powdered sugar or chocolate syrup.
We iced the cake in the photos with this Chocolate Cream Cheese Frosting.
Other topping options include vanilla frosting, mocha frosting, or chocolate ganache.
For a healthy alternative to frosting, drizzle peanut or almond butter on top of the cake and add sliced banana or berries and Coconut Whipped Cream to each serving.
If the cake crumbles while you are frosting the sides, simply press it back together.
Tips for baking with a food scale
For those who prefer measuring in grams instead of cups and tablespoons, here are the amounts of each ingredient to measure.
You need 360 grams almond flour, 40 grams cocoa powder, 15 grams Dutch process cocoa, 120 grams water or coffee, 200 grams sugar or sugar free alternative, and 10 grams pure vanilla extract.
Also remember to add in the baking powder, salt, and eggs or flax eggs.

- Preheat your oven to 350 F. Grease two 8-inch pans or one 9×13 inch pan very well. Stir dry ingredients well, whisk in wet to form a batter, then divide between the pans. Bake 18 minutes or until a toothpick inserted into the center of a cake comes out mostly clean. Be sure to wait until the centers are fully cooled if inverting the cakes onto a plate and frosting.
