No Bake Vegan Peach Cream Pie

If you need an easy summer dessert that everyone will be talking about for weeks, look no further than this show-stopping no bake peach cream pie!

Ice Cream Fruit Pie Recipe

The entire recipe calls for just 5 ingredients!

Here’s everything you need to add to the grocery list: canned peaches, cinnamon, lemon juice, vanilla ice cream (I chose a dairy free option to make my pie vegan), and your favorite store-bought crust or homemade pie crust ingredients. That’s it!

To make the peach ice cream pie:

Start by gathering all of your ingredients.

You can use any pie crust you wish, such as a graham cracker crust, raw date and nut crust, or a traditional flaky baked crust like the one I chose.

If your pie crust needs to be baked, prepare it first and then let it cool fully before proceeding with the recipe.

Take the ice cream out of the freezer and let it thaw until easily stirable. Mine took about 25 minutes.

Drain the peaches, then combine them with the cinnamon and lemon juice in a large bowl, and mix well. (The lemon juice is optional to keep the fruit from turning brown.)

Spread a thin layer of ice cream evenly over the bottom of your pie crust, then arrange a layer of peaches on top. Smooth all of the remaining ice cream over the peaches. Finally, top with more peaches, and freeze until firm.

The pie can be made ahead of time and frozen, or leftovers can also be stored in the freezer. Just take the pie out and thaw for 20 minutes or until sliceable before serving.

The photos show a peach pie made with one pint of the cashewmilk frozen dessert. Feel free to use two pints for a deeper pie if desired.

No Bake Vegan Peach Cream Pie

This no bake peach cream pie is an easy summer dessert that can be made with just 5 ingredients.

Ingredients

  • 3 cans peaches – I like O Organics® Organic Peaches
  • 1/4 tsp cinnamon
  • optional 2 tsp lemon juice
  • 1 – 2 pints vanilla ice cream – I like Open Nature® Cashewmilk Vanilla Bean 
  • 9 inch pie crust of choice

Instructions

  • If using a pie crust that needs to be baked, let it cool fully before filling. Allow the ice cream to thaw until it begins to melt and is easily spreadable. Drain the peaches, then mix with the cinnamon and lemon juice in a large bowl. (The optional lemon juice prevents oxidization and keeps the fruit from turning brown.) Spread a thin layer of ice cream evenly over the bottom of the pie crust. Arrange a layer of peaches on top, then smooth on the remaining ice cream. Finally, top with remaining peaches. Freeze until desired firmness is reached. If not serving right away, store in the freezer and thaw 20 minutes or until ice cream is softened.
