Spinach Ice Cream?
The spinach will be our little secret; I swear you cannot taste it at all!
It’s an ice-cream version of a recipe posted a few weeks ago.
This recipe: Mint-Chocolate Milkshake.
(That shake is one of my fave recipes on the whole blog!)
Finally the weather’s getting warmer. When I discovered that the temperature was a perfect 74 degrees, I decided to celebrate: with ice cream. Taking advantage of the waning spring-break hours, I invited two friends over to eat ice cream on the patio.
Yes, I really did serve spinach ice cream. And yes, my friends really did eat it all up! I honestly don’t even know why they allow me to feed them anymore, for how many times I’ve snuck funny things into their food—tofu chocolate mousse, spinach ice cream, kale milkshakes…My friends laughed when I told them the truth (after they finished eating). Then they requested more. (For theirs, I replaced the cacao nibs with regular chocolate chips. I know not everyone shares my love of those bitter little crunchies.)
Spinach Ice Cream
(sugar-free)
One of my Raw Dessert Recipes.
- 2 frozen bananas, as ripe as possible
- 2-3 drops pure peppermint extract
- scant 1/16th tsp salt
- 1/4 cup or more frozen spinach (I used 40g) (If you don’t like spinach, you can sub food coloring or omit completely.)
- scant 2 tbsp milk of choice (I used almond milk)
- chocolate chips or cacao nibs
Blend everything together in the Vita-Mix. (If you don’t have a high-powered blender, just add more liquid; it won’t be as ice-cream-like, but it’ll still taste good!) Use an ice-cream scoop for authentic-looking ice cream.

After my friends left, I continued the St. Patrick’s Day theme (and the leafy-green theme) with dinner. It’s just a simple stir-fry over bulgur. But the mache greens look like four-leaf clovers! I also ate a spoonful of raw cashew butter, straight-up. Anyone else like eating nut butters straight-up?

Yesterday Annika and I made roasted hazelnut butter in the food processor – yum! Totally worth eating straight-up!
As for getting in my daily greens, I like to toss some kale in whatever soup I’m making. It is mild enough that I can usually get it past the kid and husband without too much complaint.

Spirulina is super-healthy and visibly great for the skin! 🙂
That’s the plus…on the minus side, it has a *very* strong flavour. It’s completely vegan…but it tastes like fish food, bleugh. Not too surprising, considering it’s the main ingredient in most…fish food.
I used to gulp down my daily dose of spirulina powder mixed with water and sweetener, whilst holding my nose tightly, then immediately grab a toothpaste laden brush and go crazy (tongue included). Would follow with an (unhealthy) diet coke just to get rid of any aftertaste burning through the toothpaste. It’s *that* strong…so not sure what it would be like in a recipe.
The health benefits are too good to miss, so now I take the weaker but less hard-work tablet form.

I’ve been reading your blog for a couple of months now and love it! Ever since you told the “Brocci, more brocci…” story, my 6 and 4 year old ask me to read your blog to them every morning. I wanted to say a special thanks for your PMS chocolate. My 9-month old who is still nursing gets really miserable when I have dairy or soy, and the only thing that has been a real sacrifice for me has been chocolate! There are very, very few chocolate items that don’t have soy lecithin in them! Ever since finding your blog, I’ve been making PMS chocolate, freezing it in bar form and breaking it apart for chocolate chips. I don’t want to be melodramatic or anything, but you may just have saved both of our lives! (Or at least made mine a whole lot better! And you know what they say, when Mama’s happy, everybody’s happy!) 🙂
I also want to thank you for the recommendation of the Nu-Naturals vanilla stevia drops. I’d given up on finding a stevia that I could stand, but with your rave review, I decided to give it one more go, and I’m so glad I did!
OK, one last thing – sorry to be long-winded! My 6 and 4 year olds think spinach smoothies and spinach ice cream are the best desserts ever. Smoothies are definitely our delivery-method of choice for greens around here. And if you’re ever out of mint extract, you can always just put fresh mint in with the spinach for even more green goodness. We like it both ways, and the fresh mint is free from the garden so we often go that route.

Happy to make you smile! Spinach does make for super-smart kids, you know! When I make spinach smoothies for people who have a hard time with the green, I always make a strawberry banana one and add about a quarter cup of fresh grated beets for a full Vita-Mix blender. I know it sounds weird, but it makes for the most gorgeous strawberry-red color, it totally covers the green of the spinach, and the beets actually add a little sweetness. (I, of course, never tell the secret ingredient – everyone always assumes the strawberries made it so beautifully red!)

I just use McCormick pure peppermint. Make sure it says “pure” though, not imitation :).

That’s actually how we get our leafy greens in around here most of the time – well – not ice cream but blended, lol. Green Smoothies!! And esp. since the vegan 2 yr old of the house will NOT eat salad (“I don’t like salad Mommy” hahah!) He gets his in a smoothie. I swear, if I put it in a smoothie, he will DRINK it. Praise God he wouldn’t get greens otherwise!
I personally like organic baby spinach or mixed field greens as fresh salad, with veg topinngs (‘shrooms, scallions, LOTS tomatoes! and usually nooch on top!) Or wilted. Also super yum. Collards anyone? MMmmmmm I have some too – now I must go eat them!

LOL–I think the more apt question would be “who doesn’t like eating nut butters straight up! I don’t know anyone that doesn’t. I loooove nut butters, especially peanut and almond. My problem is stopping at one spoonful. I could eat half a jar in one sitting. I like your take on mint chocolate chip ice cream–I need to try that on my hubby–it’s his fave ice cream flavor! I’ve made the banana soft serve icecream before by just blending up frozen banana (I use a food processor) but have never added anything else. This is a great variation! I mostly get my greens through salad too, but this is my favorite way to make kale (http://kalynskitchen.blogspot.com/2010/03/recipe-for-sauteed-kale-with-garlic-and.html), and I’m going to make colcannon for St. Patrick’s day using kale instead of cabbage.

I’ve thought about trying to puree spinach and add it homemade ice cream before. I never actually had the guts to do it though, lol. Now I may have to try it. (I can’t believe your friends let you feed them either. My family is wary of my food even when it doesn’t have something “weird” in it)

Have you tried avocado in a smoothie? The texture and taste it gives to smoothies is absolutely amazing; i think you’d love it! Or try shredded coconut! 🙂

After the luck I had with your mint choc chip milkshake, I’m sure this is delicious!! You really can’t taste the spinach at all – the peppermint flavor is so strong. I eat nut butter straight up all the time – usually after a really tough workout, I crave it!

It will work just as well!! I just use frozen because it makes the smoothie colder. But I’ve done fresh before. It’s good with peaches too, although you might have to add a little sweetener.

I sneak things into my friends’ food too. Tofu’s a favorite, Example, vodka penne: “What do you mean that wasn’t cream? You fed me tofu? Well I never.” Sometimes it’s best not to tell them until they’ve finished, good call.

Ingredients:
-1 Banana
-10-15 almonds
-non dairy milk (use less for a thick shake & more for a medium thick shake)
-2 tbsp PB
-1 or 2 tsp unsweetened cocoa powder
-1 tbsp sweetener (agave, honey, sugar etc.)
-1 serving silken tofu
-1/2 cup ice
-Spinach
Directions:
Place everything in a blender. Mix until completely smooth. Enjoy!
As always, you can add: coconut butter or coconut flakes, vegan chocolate chips, peanuts, and marshmallows

That looks good. It is a little richer in color then mint icecream but it looks tastier. My favorite way to eat my greens is in stir-fries. I also like to make kale chips.

I eat my nut butters straight up on a fairly regular basis… in fact, I usually polish off a spoonful of peanut butter before bed… keeps me full all night while I sleep!!! 🙂

I prefer to get my greens via hughjass salads. I eat one every day!!! A lot of people say “aren’t salads diet food? you’re not dieting!”, but the truth is I’ve always loved salad! My sister is 9 years old and asks for a salad for dinner every night. At least our parents got one thing right!!

I made the skinny fudge babies using the directions you gave me and they taste great!
The “batter” is a lot stickier than any I’ve made before, but I let them set in the fridge for an hour or two and they firmed up just fine 🙂

Yay!!! I’m so excited you tried them… and that they worked! Yeah, the batter will be stickier because the nuts are dry and soak up the stickiness. But hey, sticky isn’t always a bad thing… look at caramels ;).

Much healthier than using green dyes in the ice cream besides the nutritional benefits. I think avocado ice cream might work pretty good too if it could be kept from turning brown. I have had avocado smoothies in Morocco and they were wonderful, enough fat in them to be really smooth.

Try subbing Thai coconut meat (the white, triangular coconut, not the brown one). Or maybe even mango or pear? Let me know how it turns out if you do try! 🙂

I’m sure when you said frozen spinach, you were refering to raw frozen spinach… didn’t know if that confused anyone since cooked spinach is usually used from a frozen state. Or am I confused?
I am a lover of the green smoothie for getting dark leafy greens in my diet. In fact, strangely, I’m not a big fan of salads. Prior to my discovery of green smoothies I NEVER got greens in my diet. I’ve gotten pretty lazy lately. I buy bagged organic fruit instead of fussing w/prepping fresh fruit, but I always use fresh greens. I found THE BEST organic delivery service. They deliver a box of goodies to my front door once a week for a very reasonable price.
I spent a year drinking only baby organic spinach w/different fruits before I was ready to branch out into the darker and bitter greens. Today I can say that I not only love Collards, Rainbow Chard, Carrot Tops and Kale, but I’m a huge fan of Dandelion greens too! still don’t like salad though 😉

I meant the kind that’s already cooked and comes in a package… but now that I re-read my recipe, it’s supposed to be a “raw” recipe. I didn’t think about that! Oops!!

this is AMAZING!!! I combined it with the mint chocolate chip ice cream recipe and I didn’t have mint extract so I used fresh mint. Katie you are AWESOME!!! thank you for all the wonderful yummyness!!!!

I made this today in the blender, although I had to use 1/2 a cup of milk for a regular blender, it was amazing! And another advantage is that if you don’t add the chocolate chips you can give it to dogs, like my Katie! She is a 12 week old English Cocker Spaniel, http://youtu.be/zwl2Vxa3XxQ.

I’m using my mother-in-law’s Vita-Mix to make your spinach ice cream (which is so fabulous, and I just finished a bowl!), and I was wondering if you had any trouble-shooting or tips for the Vita-Mix. Like, order of ingredients, blending time and/or level?
My end product is great in flavor, but the texture is just a little wetter than I’d like it to be and wetter than how your pictures look, and I end up re-freezing it. My bananas go in rock-hard frozen, as well as the spinach, and I carefully add the milk in bit by bit. By the time everything is combined, the “frozen-ness” of the bananas is no more, and I get a very liquid, ice-cream-less texture. I think it’s because it takes such a long time for my bananas to get whipped up in the Vita Mix?
What do you think? Product or user error? Ha ha…

I tried the spinach ice cream with canned spinach, not a good thing. greenish brown ice cream is not appetizing to look at and it didn’t’ taste good either. while I do like many of your recipes, I won’t be trying this one again.

re-freeze, then re-blend in a vita-mix (or blend-tec), but not regular blender.

I was curious, what is the reasoning for the bananas to be really ripe? Is it just for extra sweetness or for texture? I’m only asking because it’s pretty rare that we have extra ripe bananas at home, as they get eaten up so quickly after we buy them! If it’s the sweetness, could I just add some agave nectar to it, or will that mess with the texture? & if it’s the texture, could I do something to help the not-so-ripe bananas along, such as maybe baking them in the oven first to blacken them? Sorry, I’m a total newbie with stuff like this!

Just made this and it was delicious! I gave it to my sister and she was like “wait…WHY IS IT GREEN?” But after she tried it she loved it! One tip….never ever EVER use a spoon to pour the peppermint extract and then use the same spoon to taste the ice cream…..You see your life flash before your eyes.

this may be the very thing that gets me my blendtec! I have been telling my husband I need one so I can grind everything into tiny pieces so the kids won’t see the healthy evidence in things. This ice cream would definitely not work in my cheap blender from Wal-Mart!!! I know you can’t taste it, but my kids imagine they taste anything they can see.

just found your recipes and am super excited to try this ice cream! I have a question, your recipe says 1/4cup froz spinach, but you used 40g. How much is 40g in cups? might be a dumb question but I was curious. the more greens I can add in without messing up the ratio/consistency the better!

I learned this from the vitamix sales rep I met at our local Wegmans – but just used 1/4 cup apple juice concentrate, 2 cups of spinach, pineapple (or other fruit), and ice. I’ll have to try this version!

I made this over the weekend for my father who is in the hospital and has been craving ice cream, but really can’t have the regular stuff just now. It tasted delicious, which is really all that mattered to me, but the color was a little….sickly. Kinda baby poop greenish/brown. Do you think it was a difference in spinach or was it because I blended in the semi-sweet chocolate chips? I just used regular frozen spinach. I’d love to make it again because it was so yummy, just would be nice if it was prettier.

I find it so hilarious that you can’t taste the spinach! I love it! For this recipe I didn’t use chocolate chips, but I added 2 tbs cacao powder instead. Oh and I used my Cuisinart food processor, so it was kinda like frozen yogurt. What a great way to get a serving of veggies! My dad will never know! XD
