Thank you to everyone who likes The Chocolate-Covered Katie Facebook Page.
On Saturday, it reached 100,000 facebook likes, and I can’t even find words for how much your support means to me. THANK YOU!!
There will be a giant “thank you” giveaway up next week. But today I want to show my appreciation with Tiramisu Pancakes.
High in protein.
Low in calories.
Cholesterol-free.
With a sugar-free option.
It tastes like eating dessert for breakfast!
Tiramisu Pancakes
Inspired by my Oatmeal Pancakes
- 1/2 cup spelt, white, or Bob’s gf flour (65g)
- 3 tbsp rolled oats (15g)
- just under 1/4 tsp salt
- 1 tsp baking powder
- 1/2 tsp cinnamon
- pinch stevia, or 1 1/2 tbsp pure maple syrup
- 1 tsp instant coffee granules (I like Mt. Hagen)
- 1/2 cup milk of choice (Decrease by 2 tbsp if using maple syrup) (120g)
- 1 tsp pure vanilla extract
- 1 tbsp oil (10g)
- optional: Add a little rum extract if desired, or replace 2 tsp of the milk with rum
For the Frosting:
- 1/4 cup cream cheese (such as Daiya or Tofutti) (60g)
- 1/4 cup Mori-Nu tofu OR more cream cheese (60g)
- 2 tbsp milk of choice (30g)
- pinch pure stevia, or 2 1/2 tbsp powdered sugar (Or use a liquid sweetener and decrease the milk)
- cocoa powder for dusting (important)
Combine all pancake dry ingredients in a bowl, and stir very well. In a separate bowl, whisk together all pancake liquid ingredients. Pour dry into wet, and stir to form a batter. (If the batter is too thin–which might be the case if using cup measurements–just add a little extra flour until you achieve a pancake-esque batter.) Lightly grease a medium skillet, then place over medium heat. When the pan is hot, drop small ladelfuls of batter onto the skillet. Using a spatula, flip the pancakes when the edges begin to look dry. Allow to cook one additional minute, then remove from heat. Makes 10-12 silver-dollar pancakes, or 1-2 servings. For the frosting: Blend all ingredients together until completely smooth. You’ll only use about half the frosting… but, for smoothest blending, it’s best to make a full batch unless you have a tiny blender. You can always use the extra frosting to top banana bread, baked oatmeal, or my Hummingbird Cupcakes.

These look DELICIOUS— a must try!
Also, I love your dress in that top photo! Is it two separate dresses or one? Where did you buy it?
Chocolate Covered Katie says
It is actually an apron. I think Sur la Table?
lori says
Another “like” for the dress! Where did you get it?
Chocolate Covered Katie says
Sur la Table, I think. It is an apron 🙂

Anything that tastes like a dessert for breakfast is a win in my book and with coffee? These look great, thanks for sharing!
Gail says
This is our favorite pancake recipe, BY FAR:
http://allrecipes.com/recipe/grain-and-nut-whole-wheat-pancakes/
It is not vegan, but I supposed Katie can take care of that. =)
We made changes to suit our family (double the walnuts, add cinnamon, use splenda and agave instead of sugar, use almond milk, grind our own flour) and we serve with our own homemade maple syrup! We think this recipe is superior to those served in that well-known pancake house. =)
Leah @ goodnightcheese says
These look great!
How about peanut butter and jelly pancakes? Or peanut butter chocolate chip pancakes? I feel like this would work really well with peanut flour.
Hayley says
Tiramisu PANCAKES? Sounds so incredible and so, so indulgent. You look so great in the first photo of the post! Glowing & healthy! Can’t wait to make these pancakes. Oh, and I agree with the person above me. PEANUT BUTTER PANCAKES 🙂

I had no breakfast plans and had just bought Bob’s Red Mill GF flour for the blueberry muffin loaf, and when I saw these, I was like, “Breakfast solved!” They are absolutely delicious!!!!! I used imitation rum extract, and I love the rum-coffee flavor. I had no cream cheese, so I didn’t have any filling, but they are delicious without. Thank you so much!
Am says
Oh! and super congratulations on 100,000 likes!

Thank you so much for posting this recipe! My mom loves tiramisu and what better way to greet her on Mother’s Day than tiramisu pancakes 🙂
laura says
there is an amazing vega/vegetarian restaurant in Toronto, Canada called Fresh that makes the most delicious and giant vegan banana nut buckwheat pancakes. They are super huge and fluffy and filled with lots of banana slices and pistachios, cashews, almond and walnuts! It’s the best because I am gluten and dairy free and finally a pancake recipe I can eat
I am intrigued by this frosting. I own organic meadows cream cheese (not vegan) and mori-nu tofu and will definitely give it a try
Lacey D says
OMG those pancakes sound like they’re to die for… *taking notes*
Rebekah {aCricketSang} says
Maybe more of a dessert 😉 but they look delicious!
EVA says
My go-to pancake recipe is actually your banana pancakes! I seriously make them once a week for dinner. I had only had pancakes once or twice before trying your recipe, as my mom has never made pancakes, and it was a VERY rare occasion where we’d go out to breakfast. So, at the ripe age of 18, I had to google “how to make pancakes” because I had your lovely recipe but was completely lost on the technique! HA!
That being said, I’m not really familiar with any pancake flavors. Maybe you could attempt a crepe?
Audrey @ In Shape Cupcake says
Oh my goodness, almost looks too good to be real! Haha, but seriously, my mouth is watering.
Angela Gilmore says
Yum! These sound amazing!
The Vegan Cookie Fairy says
I might add some real rum in there 😉
Emily says
Wow! These look amazing. So happy to have stumbled upon your blog! I have a terrible sweet tooth but know I need to make healthier options. You are so talented, thank you for sharing!
Ellie H. says
I nominate chocolate peanut butter pancakes to be made! Also, maybe peach cobbler pancakes? I don’t know how those would taste with maple syrup, though…
Other ideas to try: red velvet pancakes, peanut butter and jelly pancakes, and sweet potato pancakes (but maybe not for breakfast!)!
I love pancakes! I especially LOVE your apple pie pancakes.
(ps.- you look super cute in the above picture! I ♥ your dress/ apron and your shoes!)
(pps.- do you have a recipe for chocolate I could use to dip food like strawberries in? Or should I just use your 3 ingredient chocolate bar recipe? Thanks!)
Vienna says
Look up her Hot Chocolate Butter recipe. Within the post, she mentions how to make Magic Shell.
Lacey D says
Ooh when craving the choc/pb combo, I make her brownie pancakes then top them all with pb2!!

HUGE congratulations on your 1000,000 likes on Facebook – its an amazing achievement! As, of course, is the transformation of tiramisu into pancake form… who’d have thought of it?? It’s the perfect post to prove those likes are well-earned:D

These look incredible! I will definitely be trying them soon, though perhaps with a cream cheese substitute. Breakfast is – hands down – my favorite meal of the day. I love making my sourdough pancakes with eggnogg instead of milk in season…I don’t think there’s any way to make that vegan though.
Tara says
I live for anything Tiramisu. These pancakes look divine. And so does your hair! I love the volume, what products do you use?
Chocolate Covered Katie says
Made my day. Thank you 🙂
I change it up, to be honest… One of my favorites is Desert Essence coconut moisturizing shampoo and conditioner. I use the conditioner almost every day but only use the shampoo about 3 times a week. I’m terrified of over-processing, so I don’t blow dry, but in the photo I did use a curling iron and then hairspray at the end for more staying power.
Hi says
you look anorexic.
ok bye.
kara says
Actually I was thinking the opposite: you look glowing and healthy, Katie!
Chocolate Covered Katie says
Thanks, Kara! 🙂

That picture of you is the CUTENESS. I love it. You have a slightly Alice feel to you in it, like you might go unexpectedly down a rabbit hole at any moment… 😉
Oh and the pancakes. Um, hello! Your site is always the destination when going to make pancakes while still fulfilling my sweet tooth. Unfortunately, I can’t have grains any more 🙁 Guess I’ll have to sub in almond/coconut flours!

These look sooo good! This is definitely on the list for Sunday breakfast =o). I made mocha protein pancakes (inspired by this recipe but I didn’t have all the ingredients), no idea why I’d never thought of it before. I’m not so creative in the kitchen=/. You are too cute!
Brinley says
Way to ROCK that apron!!!! You should model as a pas time!! Just a thought 😉
Amanda says
I’m getting really into cauliflower as a base ingredient for hidden veggies. I love what this website is trying to do by making them into pancakes, but I’d like to see a vegan option without eggs. I was also wondering if other flour such as coconut, chickpea or oat would work in these pancake recipes? Or any of the recipes for that matter! I love trying the recipes on your blog, thanks for posting them!

Just writing to say I love your site. I’ve made several of your recipes and they’ve all turned out great. That’s a testament to the quality of the recipes, not my cooking prowess. Looking forward to more! Judy
Ps. Liked you on Facebook — did it for the vitamix, which I could really use, but would have done so earlier had I known you were there. My mistake!
Cathy Boucher says
I follow you on Facebook , Pinterest, and signed up for recipies
Sew Vegan says
Love the recipes! Would really enjoy having a Vitamix!
Diana says
Made these for breakfast the other morning and they were absolutely delicious! My new go to pancake recipe!
Julie C says
How do they taste without the icing? I can’t have any alcohol (medical reasons) therefore have no idea how this is suppose to taste nor can I taste it (I will most definitely add the rum) My hubs LOVES tiramisu and his Bday is Monday so I thought your recipe would be a fun surprise breakfast for him but considered leaving off the icing and serving with pure VT maple syrup. Would that be gross?? Thanks as I really have no clue.
Unofficial CCK Helper says
Great with maple syrup as well!
Vicki Birch says
Great recipe but did you know that toffuti has palm oil in it? I was shocked as went into health food shop to purchase some items as I am a new nearly vegetarian and to my disgust first product I picked up and read the label has palm oil in it and it is not stated anywhere that it is sustainable I was very disappointed. Can you use anything else as a substitute? Thanks.
Unofficial CCK Helper says
The recipe says you can use any cream cheese spread. Try Daiya.
Mary says
Mori-Nu Tofu has many different kinds. Which type of tofu do you use for the frosting?
Unofficial CCK Helper says
Try silken-firm.
Glenn says
Love to see new desert recipes! Years ago was in Lake Tahoe, and had the BEST pancakes ever. Duplicated w/bisquick and topped them off with pecans, raisins , and shredded coconut and real maple syrup. em emmmmmmmmmmm!
Melissa says
Omg! Love these pancakes!! I didn’t do your frosting and layered them with whipped cream and Nutella. I thought I was totally cheating while I ate these. I love all your recipes and I am not even vegan/ vegatarian. I used your recipes almost everyday! Peanut butter pancakes perhaps?
Mandy says
OMG! Make. These. Now.
I just made these and they are incredible.
I was skeptical the whole time until I tasted them and it’s like eating dessert for breakfast. Not too sweet, but just sweet enough. II used what I had in my kitchen, wheat flour, no coffee or oats, maple syrup, coconut milk, coconut oil, no. rum extract, yogurt I cream cheese, no tofu and powdered sugar. I would recommend doubling this recipe if making for two people. No need to double the frosting recipe. It makes just enough for two people. These were so filling I could only eat two of them. In love.
Mandy says
I meant to say I used tofutti cream cheese, no tofu and no yogurt(not sure why my phone did that)
Chocolate Covered Katie says
Thank you for making them! 🙂
Matea says
What a great idea! This looks delicious!
Joey says
Thanks for the great recipe, Katie! I plan on putting these on special this weekend.
I’m sure these pancakes will be a smash hit, right up there with our Cafe Mocha pancakes. Here’s a recipe for your @Jules WolfItDown…
Avenue Eatz Cafe Mocha Pancakes
1/2c Ricotta
1 1/2c Half and half (mixed with 1t white vinegar)
3 eggs
1t Vanilla
2c Flour
1t Baking powder
1 1/2t Salt
1/4c Sugar
2T finely ground Espresso
1T Cocoa powder
–Glaze–
1c powdered sugar
1T Espresso
1 1/2t Cocoa
2T half and half
Whisk liquid ingredients. Sift dry ingredients. Add liquid to dry. Cook immediately, top with glaze right after flipping once.
Yum!
Harriet says
These are great! I like making things for my mum that looks AND taste great- and these hit the spot! I had to add quite a bit more flour to get a good consistency, and I used ricotta (not vegan I know!) for my filling. Perfect!
Also- I live in Australia so maybe things are different- but what is a ‘silver dollar’? For me, this recipe made 5 10cm round pancakes. So what’s the 10-12 silver dollar bit?
Thanks!
Sarah says
What do you use if one can’t eat dairy (cream cheese) or tofu (soy) to make the cream cheese frosting? Thanks. Oh, I bought your cookbook and love it!
Unofficial CCK Helper says
You could always use the coconut cool whip recipe! https://chocolatecoveredkatie.com/2011/08/16/vegan-cool-whip/
Parker says
Hey these look amazing, but do you have the nutrition facts for the frosting because I noticed that the nutrition facts don’t include to frosting. Thanks in advance to anyone that responds!
Kayren says
Currently eating these for dinner. I made them with a combination on ap, oat flour, and barley flour, and they are delicious!
Katie, if you could come up with a recipe for panettone pancakes, that would be awesome 🙂
Laura B says
Just wow. Just made a double batch of these and they are amazing. I used whole wheat pastry flour since I ran out of spelt and they still came out wonderful. If you keep them sort of thick and don’t add extra milk, thet come out almost crunchy on the edge like a coffee oatmeal cookie! Couldn’t quite get the frosting to thicken up like the picture but it ended up better: it was thin like a cream which only made the tiramisu part even more authentic. Never had a bad recipe from your site, Katie. Can’t decide if these are better than the cinnamon roll pancakes…just can’t decide!
Erin says
Wow! These are fantastic. What a great way to start the day.
Katie says
My current favorite pancake recipe is this buckwheat one, which I make dairy free (but with pasture-raised local eggs). The pancakes are *divine* especially with some cinnamon! But they are also thin & I don’t think they could handle add-ins, so I’m looking through your recipes for pancakes that are soft and fluffy but ready for add-ins & toppings!! These look so good!
