With just three ingredients and no ice cream maker required, the delicious frozen strawberry dessert is all yours.

Imagine pints of smooth Haagen Dazs and Baskin Robbins in your very own kitchen, without any of the higher prices.

Serve the strawberry sorbet with fresh sliced strawberries and perhaps a swirl of chocolate syrup. Each taste is bursting with berry flavor.

And the DIY sorbet recipe can be dairy free, egg free, fat free, vegan, low calorie, low sodium, and gluten free.

Ingredients for the quick summer dessert

All you need to make the recipe are strawberries, lemon juice or zest, sweetener of choice, and an optional pinch of salt.

Unlike many other strawberry sorbet recipes, it does not require sweetened condensed milk, corn syrup, eggs, guar gum, or preservatives.

If you have an abundance of fresh strawberries, cut off the stems and freeze the fruits before proceeding. Or for an almost instant sorbet, simply buy frozen strawberries from the grocery store.

The lemon juice adds depth of flavor, as its slight tartness balances out the sweetness of the red juicy strawberries. I recommend including it for best taste; however you may technically leave it out.

Sweetener options that work well include regular sugar or unrefined coconut sugar, pure maple syrup, honey, or agave. For a keto sorbet with no sugar added, substitute an equal amount of sugar free xylitol.

A pinch of salt heightens the sweetness of the strawberries. You may omit this optional ingredient if you prefer.

Vegan Summer Strawberry Sorbet

Flavor variations

For a rich and creamy texture, add half a cup of coconut milk.

Or turn it into strawberry banana sorbet by blending in a ripe banana. This idea works well with ripe mango or pineapple too.

You may omit the lemon zest, adding the zest of an orange or lime instead.

And feel free to replace some or all of the strawberries with raspberries, blackberries, cherries, or even blueberries.

Serve in fancy chilled glasses, topped with Coconut Whipped Cream or chocolate ganache and Chocolate Covered Strawberries.

Have fun trying different add ins or toppings after churning, including mini chocolate chips, rainbow sprinkles, diced strawberries, fruit jam, or toasted almonds.

The recipe is wonderful in parfait cups swirled with Dole Whip.

Or layer it with vanilla ice cream for a strawberries and cream flavor. Add chocolate ice cream to make a Neapolitan Italian dessert.

Homemade Blender Strawberry Sorbet

How to make strawberry sorbet

If you will be using an ice cream machine, follow the manufacturer’s instructions for your brand and model. Freeze the container in advance if instructed.

To make strawberry sorbet at home, wash fresh strawberries in a strainer. Remove and discard the stems, then freeze the berries. Or for an easier option, simply start with frozen strawberries.

If you own a high speed blender like a Vitamix or Ninja, blend the frozen berries with all other ingredients until thick and smooth, with a texture similar to gelato.

Otherwise, allow the berries to thaw enough to process in a regular blender or food processor. Enjoy right away, or transfer the mixture to an ice cream machine and churn until frosty and smooth.

For best results, scoop out the strawberry treat with an ice cream scoop.

Due to the lack of gums and preservatives in the recipe, this dairy free strawberry sorbet will have the best texture on the day it is prepared.

Store leftovers in an airtight covered container in the freezer for up to three months, and thaw before serving.

Ingredients

  • 3 cups strawberries (360g)
  • 1/4 cup sugar of choice (pure maple syrup, white sugar, xylitol, etc.)
  • 2 tsp lemon juice or zest of 1 lemon
  • optional pinch salt

Instructions

  • To make strawberry sorbet, remove the stems and freeze the berries if they are not already frozen. If you have a high speed blender like a Vitamix, no ice cream machine is required. Simply blend all ingredients until the mixture achieves a smooth sorbet texture. Otherwise, let the berries thaw until they can be processed in a regular blender, then transfer the mixture to an ice cream machine and churn according to manufacturer's instructions.
