They did the Mash

So many people have been asking me for my mashed cauliflower recipe, and I realized– Oops, I never posted it!  Time to remedy this.

Monster-Mashed Cauliflower

(version 1… scroll down for version 2!)

  • 1 head cauliflower (or one bag frozen cauliflower)
  • 1/2 veggie boullion cube
  • up to 1 tsp salt, and pepper to taste (I don’t use much pepper)
  • 1 tbsp dijon mustard
  • Dash of chopped parsley
  • 1 clove of minced garlic (I use one tsp of the jarred garlic)

Cook the cauliflower until it is fork-tender. Drain well. Place everything in the food processor or blender (crush boullion cube first), and blend on high until it’s the consistency of mashed potatoes.  If you want a creamier consistency, add a little water as needed.

Monster-Mashed Cauliflower 2

(version 2: a.k.a. the version for lazy-butts ;) )

.

  • Boiled or steamed cauliflower (about 300 grams when raw)
  • 2 teaspoon melted vegan butter (such as Smart Balance Light)
  • Salt to taste (I use over ¼ tsp)
  • Mash all the ingredients together with a blender (for a more “whipped” result) or a hand blender or fork.

The mashed cauliflower also makes a terrific sauce—for veggies, for pasta, even for salad greens (yup, I’ve tried it).  For a thinner sauce, you can add a bit of water or non-dairy milk to the mixture.

Mmm. This sounds so good!! I’m so happy you posted it, when I last made mashed cauliflower I noticed you didn’t have a recipe for it. The bouillon and dijon will add so much flavor! Thank you!

Have you asked Henry where your camera cord is? He looked a little mishchievous in the last picture you took of him.

Perhaps misplacing your camera cord is in the air!!!!! So funny I went through the same thing a couple days ago. Its so disheartening not having it around. I became so stir-crazy without it I went out and bought a new one. Hope you find yours soon!!!

Oh, purple cauliflower… one day I will try it. Thanks for the recipe! I’ve had mashed cauliflower before, but didn’t like it very much. These ingredients look tasty together, though, so I’ll have to give it a try :)

Good luck finding your camera cord! I lose things like that all the time – very annoying. They always turn up after a while though. Looking forward to your pictures :)

ooh, I never thought to use a food processor for cauliflower-mash (I always used a fork, silly me!).

THE PURPLE OF THAT CAULIFLOWER! It’s So stunning! Isn’t mother nature just incredible sometimes! I saw PURPLE ASPARAGUS yesterday at WF and I almost fell over they were SO pretty :) I added you to my blogroll and am So happy you are enjoying my little baby blog :)

You know, I’ve been having camera issues too! My battery compartment broke, and I took my camera to my parents house so my dad could fix it. He said it’d take a while, so loaned me his to take back home (I live an hour away). And all last night, I tried and tried to download pix but it wouldn’t work from his. I finally found a way…but I was about to post a “my camera is having issues” post instead! Good luck finding the cord!
