- 1 large head cauliflower,
- 2-3 tbsp olive oil or coconut oil
- salt and optional pepper as desired
- Preheat oven to 425 degrees F. Line a baking sheet with parchment paper, or grease well. Cut cauliflower into florets, discarding the leaves. In a large bowl, toss cauliflower with the oil and any spices you wish (I usually add 1/2 tsp salt). Arrange in a single layer on the baking sheet, making sure not to crowd the cauliflower. I love love LOVE the cheesy cauliflower, and I don’t even really like cauliflower! I was stuck with a bag of cauliflower rice (long story) and was looking for ways to use it and found your recipe. I wouldn’t say it tastes exactly like mac and cheese, but the flavor is definitely similar.

We tried the buffalo cauliflower wings for the start of football season. I have three boys and a carnivore husband and they all loved it! Next week I will try the barbecue cauliflower recipe on them and hope for the same results. The kids are adventurous but cauliflower is not usually their favorite vegetable.

I will start by saying that I am not a vegetarian. No one in my family is a vegetarian. My husband and son don’t even really like vegetables all that much. But even they loved this roasted cauliflower recipe! Its beauty is in its simplicity.
I’ve tried some of the other cauliflower recipes on them before, both from this blog and others, and they haven’t been fans. But this simple one, they loved. Who knew?!
