Thanks so much for the sweet comment… I’m trying, but I really need to get better at working my camera! I just recently stopped using the automatic mode. Anyways, I have a Nikon.
For photoshop… well the very first thing I do when I open a photo in photoshop is to crop it. After that, I go to image, then adjustments, then “selective color.” I love playing with the selective color because it only changes the color of one particular aspect of the photo (as opposed to “color balance”, which changes the whole photo). I always make the whites have less black. And usually I go to brightness/contrast and add brightness too!
After that, I often blur the background, using the blur tool.
I kinda just play around.

This blog gave me the confidence to start my own! I had to work to keep a steady weight while making the transition to veganism. All of your recipes are so creative and energy-filled, where do you find inspiration?

And lol I get inspiration from the weirdest places… I’ve even gotten inspiration from Baskin Robbins before. Or magazines, grocery stores… I’ll look at candy flavors or ice cream flavors and say, “Hmmm, now what ELSE can I use that flavor for?” 😉

I love your website, I only discovered it yesterday but I have been reading through and drooling at all your recipes! You are so right about enjoying life and enjoying the things you love in a healthy way, that’s my philosophy too. I have one obstacle that stops me from making some of your recipes though, none of the supermarkets in my town sell coconut butter/oil (I live in Italy).:( I need to find a shop that’s NOT Italian produce-centric, that or wait til the summer when I can go home and buy what I need. I can’t wait to make that chocolate fudge cake, it looks amazing. Definitely an incentive to bake more.

Hi! I love your blog and have tried a lot of your recipes–you are truly a whiz in the kitchen! As far as your quest to gaining weight goes, have you considered lifting weights (heavy if possible) in order to put on some lean muscle mass? 🙂 Running is great, but definitely depletes your muscles.

I do lift weights… but I hate it :(. I wish I could be one of those people who loves weight-lifting! Basically, I force myself to do it 2-3 times a week (usually 2 because I am lazy!), and I focus especially on my arms. It’s helped a little! I use ten-pound dumbbells.

Katie, The thing that keeps me coming back to your blog is the fact that you’re very upbeat and you also cater to those who’re watching their weight—or just want lower calorie options– even though you dont need to. I think that that’s so kind of you and just awesomesauce 😀

I do know that people reading my blog have all sorts of dietary preferences… I have to remember to tag my posts as gluten-free, soy-free, etc. Recipes are so easily adaptable to different diets, though. Especially low/high-calorie. Just by changing up the type of milk you use or the amount of fat added, you can make it as high or low-cal as you want! 🙂

I just wanted to let you know that I LOVE your website. I also want you to know that it has helped me tremendously. I am not a vegan by any means, but I have an incredible sweet tooth. This sweet tooth has led to periods of binge eating (and sadly, purging as well) and feelings of guilt, lack of control, and basically misery. I know that probably sounds overly dramatic, but to one with a food addiction, it is a vicious cycle that is difficult to break free of. Anyway, since finding your blog, I have found ways to satisfy these cravings in a more healthy way, which does not lead to guilt or remorse. I just had a post workout bowl of peanut butter chocolate oatmeal 🙂 and no crazy feelings of wanting to binge. I feel more connected to the food, since I am preparing and therefore I guess maybe I appreciate it and can really enjoy it. Plus, it’s more filling and filled with awesome ingredients, so I respect the food more (I know that probably sounds so silly, but it totally makes sense to me ;). And by the way, my almost 2 year old, who is probably THE pickiest eater in my house loves your snicker doodle blondies. I can’t wait to try more of your recipes!

I just read your About Me, and some of your recipes. Firstly, I am sorry people have left you rude/ mean comments, because you seem like a wonderful person who has a healthy outlook on life & eating. It is so refreshing to read about your love for food, when these days so many women are overly obsessed with calorie counting. There is no doubt in my mind that women are jealous that you do not have to work that hard to maintain a thin physique.

i’m from austria and slowly switching from vegetarian to more and more vegan. i don’t miss a thing when eating vegan, but it’s my family and friends who make some difficulties when it comes to this.(long story, don’t wanna bore you;))
First I really have to tell you how incredibly great your blog is. it’s beautifully organised, features awesome recipes and you yourself seem very very likeable!:)
i also totally know the quest of gaining weight in order to stop people making negative and rude comments about your weight, cuz i experienced this myself and still do.
it’s good to know i’m not alone out there!:)

I just wanna say how much I LOVE your blog and how much its helped me! 🙂 I’ve been dealing with Anorexia Binge Purge Subtype (which was REALLY horrible because I LOVE food and cooking 🙁 ) but have been slowly over-coming it 🙂 I’ve became a Veggie (mainly because I love animals,Woop!) and I really wanted a healthier lifestyle for myself. I just wanted you to know that your blog has opened me up to a new world of healthy but DELICOUS food that I can enjoy and not feel guilty about eating 😀 Its been hard being a 15 year-old Veggie and my Mum (Yea, I’m English :P) hasn’t been the most supportive of people but I know I don’t really know you but it feels like your kinda my second-Vegan Mum 😀 I love your views on life and food and NEVER want you to stop writing! 🙂 Lots of Love from London 😀 x P.S sorry for my rambling 😛

Wow! I love your blog and all the delicious recipes. But…and I say this with love, you are very skinny! If you are that skinny naturally, then great! But if you aren’t, I beg you to eat some more. If you eat all these yummy foods you will still be healthy. Just do what’s right for you, and eat more cookies! (:

Hi Katie, As I’m sure you can tell by all of my recent posts on your blog that I LOVE all of your delicious recipes. I think you are super cute and beautiful! It saddens me to read some of the negative and accusatory comments some readers post on your blog 🙁 You deal with them graciously and seem to take it all in stride. Please don’t let the negative comments bother you as I get the feeling others are jealous that you are naturally healthy and thin. Some think you are too thin but you are clearly at a healthy weight for your body, even your doctor agrees 🙂 I think it’s great that you strive to eat healthy foods and exercise because you love it. I also think it’s great that even though you are naturally thin you don’t use that as an excuse to eat junk food and processed crap all the time just because you can. I find your blog very uplifting and it motivates me to continue living as healthy a lifestyle as I can. PS I love all of you healthified desserts!!! Keep the great recipes coming! ~Leslie

Katie, thanks to YOU, I spoke to my parents tonight and told them I’ve decided to become vegetarian and eventually am intending on introducing the vegan lifestyle!
Additionally, I am becoming a scientist in the kitchen! I made your fudge tonight (and am currently eating it!) and made little alterations to fit my cravings (hello peanut butter, frozen berries and vanilla!).
To top it all off, I went to the grocery store today and purchased wholefood products!
I’m so excited to start on this journey!!!!

Any tips on telling people you’re vegetarian? I’m not sure how my friends will take it!
I guess it depends on your friends… I don’t know them, so I can’t tell you how to tell them! But if you want them to see that your not going to be deprived in your new lifestyle, come equipped with AMAZING treats to share that you can eat too :). That way, they’ll think, “Maybe her new diet isn’t so strange after all!”
