What type of apples?
Tart and crisp apple varieties are best for baking in general.
Try Granny Smith, Honeycrisp, Golden Delicious, Jonagold, Braeburn, or Pink Lady apples. Or try Fuji apples, which are my personal favorite.
The apples can be peeled or unpeeled. For added fiber and less prep work, I like to be lazy and leave on the peels.

Flourless apple cinnamon bread ingredients
For the recipe, you will need the following ingredients.
Fine almond meal or almond flour, granulated sweetener of choice, baking powder, salt, eggs or flax eggs, plain yogurt or coconut cream, fresh diced apple, ground cinnamon, and an optional fourth teaspoon of pure vanilla extract.
You may use regular or Greek yogurt, and dairy free brands work as well. For added sugar free apple bread, be sure to use an unsweetened yogurt. Or swap out the yogurt for an equal amount of coconut cream.
Sweetener options that work well include xylitol, granulated erythritol or a monk fruit blend, or regular white sugar or coconut sugar for those not on a low carb keto diet.
Almond flour is not actually flour at all. It is simply blanched and peeled almonds that have been finely ground into a texture that resembles flour.
Substitute wheat flour or coconut flour at your own risk. Almond is the only one I recommend here that will work without making other modifications to the recipe.

How to make keto apple bread
Start by dicing the apple and setting it aside.
Grease a 9×5 inch loaf pan. Or line the bottom of the pan with parchment paper.
Preheat the oven to 325 degrees Fahrenheit as you stir all of the flourless quick bread ingredients (excluding the apple) in a large mixing bowl.
Since the loaf is gluten free, there is no need to worry about overmixing here.
Stir in the apple, then smooth the batter into the prepared baking pan.
You can stir the cinnamon in with the other dry ingredients. Or stir half of it in with the dry ingredients and reserve the other teaspoon. Mix the remaining cinnamon into one and a half tablespoons of water in a large dish. Be sure to use a deep enough dish that allows for vigorous stirring.
Swirl the cinnamon liquid into the loaf with a knife, right before baking.
Bake on the oven’s center rack for fifty minutes. Let the flourless apple loaf cool completely. Then go around the sides of the pan with a knife to loosen the bread.
Pop the loaf out onto a plate. If you have let it fully cool first, it should pop out easily without cracking or breaking in half.

Measuring the recipe in grams
If you prefer to use gram measurements instead of the cups listed further below, here are the amounts:
240 grams of almond flour, 160 grams of yogurt, 80 grams of diced apple, and 60 grams of granulated sweetener. Also remember to add the other ingredients below.

- 2 cups almond flour (for nut free, try this Apple Bread)
- 1/3 cup granulated sweetener (for sugar free, I like Lakanto)
- 1 tbsp baking powder
- 1/2 tsp salt
- 2/3 cup yogurt or coconut cream
- 3 eggs or flax eggs
- 2/3 cup diced apple
- 2 tsp cinnamon
Instructions
- *You can stir all the cinnamon in with the dry ingredients. Or save one teaspoon to mix into one and a half tablespoons water. Swirl into the loaf right before baking. Gently stir in the apples. Smooth into the prepared pan. Bake 55 minutes. Let the bread cool completely before going around the sides with a knife and popping out the loaf. The recipe is very moist and soft, so this ensures it will not break. Once cool, you can loosely cover and leave out overnight.
