This site is for anyone who wants to be healthy but refuses to give up eating delicious desserts in the name of health. Happiness and health go hand-in-hand, and how can you be happy if you’re not eating what you truly desire? My favorite food is chocolate, and I eat it at least once a day. I’ve never been happier. Or healthier.

A friend just gave me the link to your site and so far I love it. I’m a vegetarian and try to be vegan but I love cheese way too much so I look for local growers that I know and buy their cheese (next best thing). Anyway going to try your vegan pb cookies – they look yummy.

Pumpkin Cream Cheese Bars

(These can be gluten-free!)
■1/2 cup spelt flour (or white flour, oat flour, etc.)
■1 tsp cinnamon
■1/4 tsp pumpkin pie spice
■1/2 tsp baking powder
■1/4 tsp baking soda
■1/4 tsp salt
■1 egg of choice (flax, chia, I used 1 tsp energ. If necessary, you can omit completely.)
■3 T brown sugar (or agave)
■2 packets NuNaturals stevia (or 2 more T sugar)
■1/2 cup canned pumpkin (or cooked, pureed pumpkin)
■2 T nondairy milk
■2 T oil (coconut oil is really good, but veg oil is fine)
■1/2 tsp pure vanilla extract

Preheat oven to 350 F. Combine dry ingredients, then add in wet. Spread into an oiled 8×8 pan and cook for 20 minutes. Note: You can sub agave for the sugar; they’ll just be fluffier/cake-ier.

Let the pan cool for at least ten minutes before cutting or frosting the squares. Also, the flavors seem to intensify and these taste even sweeter the next day.

Thank you Katie for making these recipes and posting them! I have a 1 yr old who is allergic to milk, eggs, and peanuts. It has been hard to find foods that he will eat. I am finding more sites like yours but I just wanted to thank you! I can’t wait to try some of these desserts, especially the milkshake! He sees his brother eating one and he wants it so it will be nice to see what he does when he actually gets it! Again, THANK YOU!!!

An idea for the week of Valentines Day…desserts for one or two!
I have made your single serve muffin…oh 5 times in 2 weeks? Just wish you can an icing for the single lady cupcake that didn’t need a food processor until i find one to buy that is small and has good reviews. A muffin shouldn’t have icing but a cupcake? Well it DEMANDS icing. (Umm these are obviously only my rules!)

If you’re looking for a good mini food processor, I have the kitchen aid chef’s chopper! It’s super small, so sometimes i have to split things into 2 batches, but that’s pretty rare, and it’s only $40! It’s super portable, I share it with my friends all the time, and it’s pretty light. It’s strong enough that’s I’ve even been able to make crushed ice with it. (Plus- it’s really cute, mine’s bright red!!) The one really annoying feature is that you have to hold down the button when it’s going, you can’t just turn it on and walk away (like you would with a blender) and that drives me crazy sometimes! Sorry Katie– I hope you don’t mind me posting a response to her comment!! :)

I think your sight is great, the recipes are fantastic! I was just wondering and I’m sure others have wondered too but do you suffer from an eating disorder? Don’t hate on me just hear me out, i think your beautiful so i just wonder about all your self control. I know what an eating disorder looks like, you have the knobby fingers, the almost grossly sinewy arms is that why you never post full body images? I do love the website, your gorgeous and a great inspiration.

Katie, I recently discovered your blog and I must say…I think I’m on your website more than facebook and my schools website and pretty much everything but pinterest..but when I’m on pinterest of course I’m browsing your recipes again haha. It’s addictive!! I really appreciate all these healthy options for desserts and non desserts that are low calorie but still freakin delicious!
Ive already made cookie dough dip, healthy chocolate chip cookies, deep dish cookie pie, brownie batter dip, and the brownie batter pancakes, which for some reason didnt turn out but was still tasty haha. Today I plan on making the fudge daddies if I have time :)
Dont stop doing what you do!!

Also, I know it might be a hassle, but I do appreciate the nutritional information, especially when I’m cooking for other people who have important nutritional guidelines, so if you could try to keep doing that I would love it :)

keeping adding the desserts, but I also love the non dessert recipes!!

Katie, I saw you on News 8 this evening and was blown away that all the people that tried your recipe, loved it and couldn’t believe it was healthy! I can’t wait to try some of your recipes as well. I read a few of comments that people left and was shocked that anyone could or would leave a message like that! Katie, just try to ignore them and pray for them. They evidently have a problem and that makes them feel better, by saying hurtful things about others. I saw you on TV (your WHOLE body) and you looked really cute and I’d love to have your shape! I just had to speak up and say something (positive). Keep up your good work and thanks for all you do!!

I found your website on Pinterest. I love it! I have not always been a “health nut” but I am definitely trying to make healthier choices. I have tried several of your recipes, I especially love the baked oatmeals. I make several at a time and keep them in the fridge and just pop them in the microwave when I am ready to eat! I am very excited that i have found your website…. a friend had a link to one of your recipes posted on her facebook page. I have a 5 month old that is allergic to milk and eggs, and as long as i want to continue to breastfeed i need to cut those foods out of my diet. This was a huge challege to me, for i lived on cheese and milk. I have to say, not only have i lost weight by eliminating these foods from my diet, but i feel better. I am enjoying your recipes, for i was truly getting tired of eating potatoes, rice and chicken all the time. I am not sure what inspired you to share all of your recipes and ideas, but you have made me excited about food again. I absolutly love the single serving too!!!! Keep up the great work and some of these recipes will be making it into my husband diet too! :)

ps.. you have inspired me to start baking again. My current quest is to find a cake recipe so i can make my little guy a birthday cake for his first birthday! :)

I love your blog!!!! I wish I could make everything in one day! I really like how all your desserts are healthy and easy to make. I also have tried to gain weight by trying to eat a lot of fattening sugary desserts. It just makes me feel awful and gross, so I love that I can eat these desserts and know that they are nutritional. I recently made the nutella, and it was amazing! Oh, I’m so excited about finding this site! Thank you so much for putting together this! I am lactose intolerant and a lot of your desserts… I CAN EAT! :o ) Sometimes I give up being “lactose-free” and majorly regret it later w/ a stomach ache. BUUUUT, now I have a newborn that we’ve figured out is lactose-intolerant, also, and he screams if I eat anything w/ lactose in it… so I haven’t had milk product in 5 months. You know how hard that is? Lol! But this blog I can have sweets… YUMMY SWEETS… without hurting either him or me!! Thank you, thank you, thank you!! :o ) I think you’ve just brought me back from the brink of insanity! Bahaha!! (I’m a chocoholic) Lol! ;) Thank you!!

Hiya Katie – I had seen some of your recipes on Pinterest before and today I headed over to this, your lovely blog. I just wanted to say a HUGE thank you for your recipes because I can’t eat wheat (and don’t eat meat) and from what I can see your recipes seem to be wheat free. I have chronic tum problems and have been on the FODMAPS diet for a while now. It is really hard to find tasty, sweet and healthy treats to fit in with this diet but yours seem just right, and if not (dried fruit) you suggest alternatives like nuts or chocolate which I can eat (triple yay!) along with spelt and oats. A lot of other similar recipes I found have been loaded with sugar (not good). A HUGE thank you! xxxx

Unfortunately, it’s not nearly the first instance of someone blatantly copying my recipe without credit… I find instances like that (or even worse!) every single day. I just can’t figure out why so many people didn’t learn not to plaigarize in kindergarten!

Woah, I was just about to tell you the same thing and then I saw someone else noticed it too! I, too, left a comment for the blogger telling her I think it’s sad she went and posted your recipe and pretended it was hers. It said my comment was “awaiting moderation” but of course it never got posted :( .
Isn’t there a way to get this blogger’s site shut down? If she stole your recipe, I wonder how many other bloggers she’s stolen from. Plaigarism is NOT right, and she shouldn’t be allowed to make a living off stealing other peoples’ content.

Ghirardelli (gold bag) are really good! I also like Whole Foods mini dark chocolate chunks, Whole Foods vegan (green bag) or Enjoy Life brand.

The only problem I am having is getting just the recipes to print. There is no print key available on your web site and I have to use a lot of (expensive) ink to print the complete recipe pages. Cut and paste into a word document? That’s what I always do with recipes… and that way I can make the font really small so I can fit more recipes on one page and save trees :)

Katie, I am so impressed with your blog and your creative talent to make these awesome desserts! I am having of day of “making Katie desserts” so far I have loved them ALL. I just finished the fudge brownie Lara Bar and decided to roll them into 1″ balls for little snack bites, turned out great! So fudgey and chewy. You are one talented gal!

Where did you learn to cool/bake? You seem to have mastered the art of “food chemistry” to a tee! I’m a kitchen warrior, in the sense that when I go into the kitchen I feel like I’m going into a war zone–and I usually lose the battle! No matter how many Food Channel shows I watch (particularly those that have to do with baking and sweet treats), I feel I can never quite “get it.” Thank God I found your blog, because now all I have to do is just go there and make those scrumptious things and be happy! THANK YOU, THANK YOU, THANK YOU!!!

Oh girl, I wish you could spend just one day in the kitchen with me… it would make you feel so much better about your baking skills! ;)
I haven’t mastered it at all! I can’t tell you how many mess ups I usually have before a recipe will be good! My cinnamon rolls (still a work in progress) have gone through at least 8 trials. Really, I’m sick of making cinnamon rolls ;) .
Through trial and error, I’ve been able to teach myself a lot (for example, I am now good at knowing how much baking soda, salt, etc. to put in a recipe based on the other ingredients). But I still have a lot of failures! I lose the battle quite often. You’re not alone!

Can I just say how fantastic you are?? Not only is your blog full of yummy delicious and EASY recipes but you are also this sweet, humble and gracious girl who is an awesome role model for young women. I do a lot of work with groups that address health issues and body image for young women and I LOVE that you emphasize health and nutrition via a well rounded diet and active lifestyle not counting calories. I also think its fantastic that you politely engage with people who throw dangerous claims about you around so as to make perfectly clear the difference between healthy n fit and obsessed. One request – Please please please can you do more tiramisu recipes!

I have a friend who is addicted to a particular Peanut Butter Rice Krispie treat recipe he’s been using for years. The problem with the recipe is that it uses Corn Syrup as a binder. What would you suggest as an alternative?

Hi just found out I need to eat gluten free and vegan due to health reasons and I have such a sweet tooth, chcolate cravings, i need sugar sugar sugar…Its so nice to see all these awsome vegan and gluten free recipes. I have made many of them and they are sooooo good! Even the savory ones…I’m so glad I came across your blog :) especially when I have a desert craving..also I like how simple your recipes are and that they don’t usually have many ingrediants which is great. I have Ulceritve Colitis/Crohn’s and Splenda and Stevia seem to bother my system. Agave is okay sometimes but sometimes it changes the flavor just a bit. My solution is Coconut Crystals. I stumbled on them at Whole Foods and did a little more digging and found their site. They also offer Coconut Flour and Coconut Oil and such. I’ve been using lite coconut milk along with my unsweetened Vanilla almond milk for shakes and such. But I’m wondering if you have any experience baking with any of these products? Coconut has all sorts of health benefits and I’ve definitely noticed a positive difference. Here’s the site:

Yes, I’ve definitely worked with them before. I think you can use coconut sugar interchangeably for regular (white) sugar in recipes.

And I’m a huge fan of coconut oil ;) .

I am new to cooking (which I started doing when I decided to start eating more healthy), and every single recipe of yours that I have tried has been amazing! I am not a vegan or vegetarian, but I do have a huge sweet tooth, so I definitely have to watch to make sure I am not eating too much junk-and this website solves those problems for me! Hi Katie ! I am new to your site and I love it! I adore coconut and chocolate and have been striving to make the best healthier desserts for a while. You gave me some great ideas. My husband loved the choc chip cookie boat meal ( added coconut flakes) and the ice cream sandwhich. I kept the volume ice cream w added vegan choc chips for myself and made him the coconut whip cream for a topping.
Today I tried the oatmeal raisin larabars but w golden raisins. Came out great! I topped one half w mini choc chips and the other half w coconut shreds. Yum
Thanks for all the inspiration. I tried the blondies bc I stumbled upon your site looking for socca recipes. They did not come out great but I ate it in the cookie dough form before baking and was in heaven! The. I realized that this is already one of your top reccomendations!
Question- have you ever use soy lecithin or sunflower lechitin in your shakes or smoothies to thicken?

Ok, so I stumbled upon your website while trying to find pumpkin brownies (Dr. Oz) and so I saw you had a pinterest. When I went to check it out, I was like HEY I recognize that desert I wanted to try! So I went to my sweets board and it looks like I already had 3 of yours pinned! SMALL world lol!! I just made the Healthy Blondie and it was AMAZING! (I added a little cinnamon applesauce to it and it added SO MUCH to it). Thanks for all your creative creations :)

That is so hard to believe! You look sooo young! I have a question about vegan butter, what is it made of and it is less “fatty” than regular butter? Thanks! … it’s hard to list everything, though, since recipes are so different. Today I was trying to make a lemon bar and was all frustrated I didn’t have lemon extract on hand, so I completely know the annoyance of being in the middle of a recipe and not having ONE ingredient lol.

Your website is amazing and you’ve inspired me to start making more desserts! I am not a vegan or even a vegetarian (I am a teenager and don’t want to make it hard for my parents to cook for me) but I eat very little meat and I try to keep my diet balanced and healthy. About a half a year ago, I was underweight and unhealthy and had to put on some pounds, but now I’m at a healthy weight and a lot more athletic, and so happy about that :) . Also, as a result I am a lot more motivated to STAY healthy and active and the recipes on your site are perfect for me. I’ve already tried the chocolate chip cookie dough (yum!) and the ice cream (which even my brother loved – and he hates anything “healthy” tasting!). I don’t do well with either too much sugar or artificial sugar so that’s a plus, too ;) Anyway, thanks so much, and I can’t wait to see what else you cook up!

Hi Katie, You have the most amazing recipes. I have been reading an awesome book… Eat To Live and it promotes a vegan diet. The author, a doctor, doesn’t say be vegan or do nothing he offers ways to cut back on animal so you can live a healthy life. I am slowly working my way into it. I don’t miss meat. However, I wanted to mention to you something Dr. Fuhrman reiterates in his book. If you follow his diet as he does it he says you will become thin… thinner than you may think is healthy and thinner than people who care about think is healthy. Don’t worry about that, he states your body will stop losing weight when it gets to your healthy weight. Unless you are very athletic you don’t need to worry. Increase nuts and other fats if you are worried. His book is very informative and has opened my eyes to a new way of looking at food. Anyway, I just wanted to share that with you, and thank you for the yummy recipes and thank you for being willing to share with the whole world. Chocolate OOOOO to you Anita

Dear dear Katie! I have been working my way through your phenomenal recipes, and–being more of a “silent” web user–I have left nary a comment. SO, I wanted to take a moment to say THANK YOU so much for these wonderful recipes… of my favorites so far are the secret PB cookies (I added some oatmeal, cinnamon, and chocolate chips and they were to DIE for), the chickpea blondies and snickerdoodles (my favorite party trick now is to feed people chickpea dessert!) and the 3 ingredient peanut butter balls (I freeze them with your hot chocolate butter on top). Tonight I made the good girl fudge, plain and gingerbread flavors, and I am happily munching away! Again…many many thanks you talented chef-i-nista, and keep it coming!

Hey Katie Honey – still loving your work! I noticed when I looked at today’s post “Here is what happened on Saturday…” down the bottom of the page it has a “something else you may like” bit there is a picture of something delicious in a bowl with the words “my vegan photo shoot” but when I click on it I get a 440 error or something…. Hey Katie!

So I started reading your blog on like August 10, so I literally JUST missed your blog bake sale. I’m so bummed, I would have loved to bake something! Over the last month or so, you’ve totally changed the way I cook/bake– not only in that I literally make at least one thing from your blog almost every day, but also because I’ve totally started “vegan-izing,” all the recipes I see, based on your ideas! We’ve been not eating meat for a while, but we were using eggs and dairy at least some of the time, until we realized how easy it was to omit them, through all of your suggestions.

Anyway- I wanted to donate to Red Cross, in your name, since I didn’t participate in the bake sale. Two questions- 1) Would it be easier for you if I sent the money to you, or did you already send in your donation, in which case I’ll send it to the red cross. 2) If the latter, should I (did you, I guess) specify you wanted it to go to efforts in Japan, or just donate it to the Red Cross, to use at their discretion?

Katie- Your blog is amazing!!! I monitor what I eat with weight watchers, and my downfall is always desserts! Late at night I would always make a chocolate chip cookie batter concoction however seeing your healthy dips, I no longer have to succumb to my unhealthy addiction! Your substitutions look amazing. I’ve been following your blog for a while and thought I should just stop in to say thanks. I love the recipes, creativity and perspective you give. Like most people, I struggle with weight. I’m not overweight technically, though I go through periods where I feel like I could or should be thinner. I love your blog because it reminds me that balance is whats most important. When I was thinner, I wasn’t eating well, surely wasn’t eating chocolate and was miserable. Now, I’m still a healthy weight- but I love to enjoy your healthy recipes of food that is just delicious and I enjoy making. To me love, food and passion are all one and the same and you have done a beautiful job at expressing that here. Thanks again :)

Yes! By far totally the best hing to come across now. Newly vegan, two months, loving the results of health, but the carnivores I know will not let it go. I’m starting to see some ideas that will make them think twice, especially since i’m now covert vegan (claiming to quit) who just happens to love taste of nonfat soy milk. I have a feeling they will come around when there’s amazing food in these four walls again.

can I cover you in chocolate? NO? Ok…anyway, to address the vegan issue; Vegan does not always translate to “healthy”. In fact most OTC Vegan foods are very high in saturated fats. Why you ask? Because fat is flavor, and most vegan food is very shy on flavor. Vegan food tend to substitute whole veggy based fats fro the less saturated animal fats, like butter.

Ray foodies, as opposed to vegans, who sub a bit of hig quality, organic, minimally processed animal protien are far healthier, with fewer holes in their nutrient profile.
