Single-Serving Peanut Butter Cookies

Many of you had the same query about the Dark Chocolate Brownie Batter Dip.

What am I supposed to dip in it?” Really, you can dip anything: bananas, strawberries, graham crackers, pancakes, your fingers… you can even mix it into oatmeal or ice cream! Or you can get really, really naughty and spread it on cookies…

If you are not a single lady, you can easily double or triple the following recipe to make multiple soft and chewy peanut butter cookies. I wouldn’t do that, though. Nope, what I’d advise is to wait until no one else is home and then make this recipe and keep it all to yourself. Muahahahahahahaha!

Single Lady Peanut Butter Cookie

(Makes 1 or 2 cookies)

  • 2 tbsp flour (I used ww pastry)
  • 1.5 tbsp peanut butter
  • 1/16 tsp baking soda
  • very scant 1/16 tsp salt
  • 1/4 tsp pure vanilla extract
  • 1.5 tbsp agave or maple syrup (Or use 3/4 tbsp each sugar and brown sugar, or 1.5 tbsp xylitol)
  • 1 tsp applesauce (or more, if using dry sweetener)
  • optional: add some chocolate chips if you wish!

Mix dry ingredients. Add pb and wet ingredients. Mix well and form into one or two cookies. Flatten into cookie shapes and bake in a preheated oven at 350F for 8-10 minutes. (I used my toaster oven. Readers have reported success in a microwave as well.) Note: if you use liquid sweetener, it’ll be more cake-y. If you use the sugar, it’ll be more chewy.

Or do you cook for your kids? Or for a significant other? I actually don’t often cook for one. There is a hungry man in my life, and his name is Mr. Freezer. Because I’m super-busy and also don’t like to spend hours preparing meals, I often cook in bulk, doubling a recipe. Leftovers are fed to the insatiable freezer man. I also like quadrupling pancake recipes and storing leftovers in the freezer. It makes breakfast much faster, and I only have to clean once. Less cleaning is always a good thing!     Right now I only cook for 1, and that’s enough for me to handle! When I do cook with friends or for others I easily get overwhelmed with timing and quantities. I’m sure its something that gets easier the more you do it though. But leftovers are amazing too! Sometimes I cook a bunch of sweet potatoes and keep them cold in the fridge, I love snacking on cold sweet potatoes!

    We’ve done cookies with cookie dough dip… so I imagine that some of your fudge daddy brownies would also pair nicely with brownie dip, no? 😉 I agree with Julene: love how you’re one of the few bloggers that provides recipes for single servings!

    I usually cook for myself, but I, too, will either keep a recipe for four the way it is and store leftovers. It’s great to have healthy dinners already prepared after a long day’s work, when – sadly – the last thing one wants to do is cook!

    my boyfriend will get angry if i make single serving cookies – especially these peanut butter ones! I will definately have to quadruple the recipe in order to have a single serving for myself.

    i also like to bake/cook in bulk and freeze. i actually just made about 30 blueberry pancakes last night and froze them for quick and easy breakfasts. (with freshly picked blueberries!! 🙂 )

      Hmmm… I try to use very basic ingredients (i.e. not so many hard-to-find flours or obscure ingredients). For baking you definitely should have the following on hand:
      1. baking soda
      2. baking powder
      3. salt
      4. nondairy milk
      5. cocoa powder
      6. oats
      And a lot (but not all) of my recipes also call for: chocolate, ww pastry flour or spelt flour, bananas, nut butter, unrefined coconut oil, Artisana coconut butter, and the fudge babies call for dates.

      Oh, and as far as what to dip into the brownie batter dip….I can attest to the fact that a spoon works really, really well for the blondie batter. Not that I have ever eaten it with a spoon out of the blender. 🙂

    As for cooking solo, I only cook for me! I live my with boyfriend of 7 years, but he’s not vegan. And we have different work schedules. So we fend for ourselves….plus, I kind of hate sharing.

    I just made peanut butter cookies last night! I definitely dont just cook for myself. My husband appreciates everything I make…… unless there’s dates in it, he’s weird and doesnt like them. I also love freezing baked goods. It means easy access to yummy goodness anytime I want!

    I make a very similar pb cookie in the microwave! I have not yet had a problem with it. I do use liquid egg whites, rather than applesauce, so not sure if that would change the texture. Love desserts for one since my husband doesn’t like sweets (what up with that?!)

    I made this recipe this afternoon following your sugar free version. I guess I must be used to Stevia now because it tasted pretty good! I had to sub sunflower seed butter for the PB and I used leftover peach puree from pancakes instead of apple sauce…but it was still pretty yummy! Love the single serving idea…keeps me from eating a dozen cookies.

    I cook for myself most of the time, but I also cook dinners for my fiance when I’m feeling housewifey. As for desserts, I almost always bake for other people, and rarely for myself. The last batch of cookies I made, every single one got eaten by someone other than me. I love presenting people with freshly baked goods!     I love single serve recipes! But sometimes when I’m cooking for myself I kind wish it were easier to make regular recipes single serve. Cause leftovers get kind of boring to me and I really don’t like eating the same things two days in a row.

    I just made these! 🙂 I’ve been really jealous of all the peanut butter recipes popping up lately as my husband hates peanut butter & I can’t trust myself not to eat a whole batch in less than a day, so this is perfect!

    Took less than a minute to make, 10 minutes to cook & now I’m waiting for them to cool…the hardest bit!! A bit did “accidentally” break off one of them though…delicious!! 😀 thanks Katie, yet again a great recipe!

    I was just in a PB cookie mood too. I usually only cook for myself (have been for years) since I’m vegan and my family are carnivores. Baking wise I love to bake for others and often bake things for friends and family. I even do charity bakes and bake for my church =)

    I’m slowly but surely filling up my freezer, it’s always nice to defrost something wholesome when you’re low on time! I like to buy veggies on super-sale at the market because they’re starting to wilt, toss em in the steamer and then freeze – Last time I was able to steam and freeze 4 pounds of green beans for $1, and since I cooked them right as they were at the “use-em-or-lose-em” stage, I saved em from getting wasted!

    Although I generally only cook for myself, I still make full batch recipes – especially with baking! I can always give them away or freeze them, or sometimes my family will eat the things I cook as well.

    Have you tried adding tahini to your peanut butter cookies? The tahini to peanut butter ratio can’t be the same of course there should be less tahini imo (otherwise they won’t be peanut butter cookies) but the mix is really good!
    I’ve read your reply to Averie’s comment, and I really hope you can succeed in making non-crumbly flourless cookies because mine are always crumbly– I as well don’t have a problem eating those crumbs though!

    I like to always prepare new meals, and i dont have anything in my freezer, besides frozen berries. When I make meals that leavs me with leftovers, I try to use them in the first few days, so I just keep them in my fridge!

    Saw this recipe in my email today at work and could not wait to get home and make them. I love all the single serving recipes. I sprinkled cocoa nibs on top and serving them warm from the oven with banana soft serve. It was like the peanut butter version of a warm brownie sundae. I made the recipe as written and the cookies were a little sweet for me so next time I will decrease the maple syrup or might try the stevia version.

    I cook for both my husband and myself though he is a carnivore and I make a lot of seperate meals for us. Despite being thin my husband has high cholesterol and blood pressure and is trying to make dietary changes to lower them. He agreed to eat more of my vegan creations which is perfect for me. I’ve been making his salads with marinated tempeh, tofu scrambles for breakfast and homemade veggie burgers and he’s really enjoyed the meals and his cholesterol dropped 50 points over the last month. Go figure! Now, if I could just get him to eat more beans… He hates banana and doesn’t love dessert so the single serving dessert recipes are great for me.

    Last week I posted about flourless PB cookies. I made them with 1 egg but you could use a flax/chia egg, no worries.

    They didn’t make “tons”, but they made about 15 small cookies or probably like 10-13 bigger ones.

    I freeze everything I make. People always ask, well what do you do with it all? I freeze it! That way I have a stash of everything from casseroles to cookies to raw vegan dessert balls waiting for me and I can grab out one or two, or a single serve portion and let it come up to room temp (the desserts are like 15 mins for 1 cookie to warm up) and entrees, just nuke.

    I make planned leftovers b/c I dont have time to be cooking, doing dishes, and turning on my oven for 1. I need to make extra so when I’m working and the family is fending for themselves, there are leftovers. 🙂 Or for when I want “leftover” desserts 🙂

    I usually only cook for myself, and I’ve only juuuuust recently begun to *entertain* the idea of cooking in bulk, say on the weekend, and using that throughout the week. I don’t have a super-active outside-of-work social life, so spending my evenings preparing dinner or lunch for the next day is usually not an issue, but recently I’ve had times when I wished my food was partially or already made.

    Also my freezer’s…..not so large. And mostly occupied by my hulking ice cream maker bucket and frozen bananas. So I’d probably only be able to cook enough ahead of time that I could keep it in the fridge and it wouldn’t go bad.

    I do cook for others when they come over though ^_^ I try to be a good hostess.

    I made these today and they were amazing! The batter is pretty fantastic, maybe if it morphed into a chickpea based dip peanut butter cookie dough dip I’d be able to justify it as a full meal!

    I made these last night (twice actually!) I used almond butter and maple syrup and they were AWESOME… so awesome that I made a second cookie. The second cookie though I used only 1 TBS of maple syrup because I didn’t think it needed anymore.

    I love the single serving recipes, although I typically try to stay away from flour so I may retry this another day using oat flour.

    Unfortunately, I typically just cook for myself. My sister and my parents aren’t vegans, and it’s single-lady baking for me at the moment, if you know what I mean.

    But I love making single-lady cupcakes on a Friday night curled up watching a movie. It also makes me feel better that get to eat a good single-lady cookie, with my single-lady status, so it’s all good. 🙂

    Has anyone tried gluten free versions of the single lady recipes??? I generally tend to bake with coconut flour… do you think this would work??

      Coconut flour is crumbly, and it won’t work well for baking on its own. Maybe try a gf mix? Or maybe even oat flour? If you do try something that works, I’d love to know! (I do know that other commenters have ahd success with pre-packaged gf mixes with these cupcakes.)

    Katie I know you’re not a huge fan of non-fat recipes but I cut out the nut butter in this (I don’t like peanut butter – I know I’m sorry!) and added extra apple sauce and a bit of mashed banana and they turned out yummy, kind of like a pancake – cookie hybrid!

    I’ve been looking for a single serving cookie recipe, I hate when I make up a batch and most go to waste 🙁

    These are my new favorite cookies. (Maybe even more than the chocolate chip oat flour cookies… gasp!) Made them again today and once again marveled at how the peanut butter-maple syrup combination works so well together (especially when I licked them both off the tablespoon at the end!) and how ridiculously soft and chewy these cookies are. Made this with whole wheat flour and it turned out wonderful 🙂 I think maybe next time I’ll try spreading some chocolate-coconut butter on top… but till then, off to just eat some of that out of the jar. 😀

    1. I’m not vegan but my family’s vegetarian, and some family members also don’t eat eggs.
    2. I don’t bake with eggs too often anyway, so I never happen to have them in my fridge.

    Loved these! My husband discovered them when my daughter and I were away on a trip (though he says he was a little embarrassed to tell me they were called “Single-Lady Cookies”).     I have a super simple and minimal ingredient PB Cookie recipe. Makes a small batch. It’s not vegan but I want you to have it to see if you could make it Vegan. 🙂

    1 cup peanut butter
    1 cup sugar
    1 egg
    1 tsp vanilla

    THATS IT!!! 🙂

    325 oven.

    They are soft, and delicious!

    These are delish – my husband just picked one up off the cookie sheet and said, “Mmmm…good cookies.” I didn’t tell him they’re vegan. Just like he didn’t know about the beans in the deep dish cookie pie!

      I missed the whole “flatten into cookie shapes” part and put them in as a dough ball. They were still pretty raw in the middle after the 10 mins, so i had to keep them in longer. Overall very good though. Thanks for the recipe! 🙂

    Hi! I just tried your cookies, and they turned out amazing! I only used nonfat yogurt instead of applesauce, because I didn´t have any, and it worked just fine. I also tried to make one cookie in microwave – cookie was done after about 40 seconds, it works perfect 🙂
    Btw, I love your blog, I´m not vegan, not even vegetarian, but your recipes are just awesome and are big inspiration for me.Thanks for not keeping them only for your self!! :))))

    These…. are….the…..BEST!!!!!!! They literally melted in my mouth, and they were light and buttery, even without the butter!!!! I actually added in a little bit of coconut oil and used smashed bananas instead of applesauce. I think my real mistake was using baking powder instead of b-so. I scooped out the baking powder and added the baking soda, but of course some of the baking powder was left behind and gave the cookie THE most amazing texture. I microwaved them on a plate for about 40 seconds and scooped them right from the microwave to my mouth- sooooooooooooooooooo dreamy!!!!! They were more like tiny cakes then cookies, though, but hey- I like cake too!!!

    SOO delicious!! To make them lower calorie I used PB2 (powdered peanut butter) instead of normal peanut butter. I also didn’t have any applesauce so I used a tablespoon of mashed up banana instead and they turned out great! Personally I think they’re better with out chocolate chips because that way you get more of the peanut butter flavor. yum!

    I love this recipe! I watch my husband’s 5 year old sister during the day, and she needs a lot of hands on activities to keep her from getting too rowdy. I wanted to bake with her, but she doesn’t have the attention span for a full recipe. She loved making these cookies with me! I used xylitol because she’s sensitive to sugar, oil because she’ allergic to apples (although I’d like to try mashed banana subbed for applesauce). I eat gluten free, so I used some quinoa flour instead of wheat. Oh, and I used SunButter instead of PB.

    I really love how versatile your recipes are, and how readers comment with their alterations. Commenting here makes me feel like I just joined a giant baking think tank! Keep doing what you do; I love browsing your recipes.

    These are so wonderful! I just made these as I was having a craving for some yummy peanut butter cookies. I didn’t have any apple sauce so I subbed in some egg re-placer (about 1/16 tsp). This did make the cookies more dry which is OK because you can always add some more agave!

    Just made this in the microwave! Followed the recipe as is but used a packet of Truvia instead of Agave and added a bit more applesauce. Microwaved on a plate for about 60 seconds….delicious! It did come out a bit dry, next time I will microwave only about 45 seconds. Soooo yummy!

    I just made these today and they were delicious! I tripled the recipe and it made 11 small cookies – just enough to share with 2 friends who were over! I changed the recipe up a little because i didn’t have any apple sauce, and i also added some dark chocolate. I love that most of your recipes allow for, or even provide suggestions for, substitue ingredients, Thank you for sharing your recipes with us 🙂

    I always cook for me, my hubby, and our daughter. I love your blog. My daughter has a severe egg allergy, and it’s awesome that every single recipe on here is safe for her! 🙂 I made her your chocolate cake with tofu chocolate pie for frosting for her birthday last month – I think she liked the tofu chocolate pie more than the cake, lol, but since there was extra left over after frosting, and it was pretty healthy, I had no problem giving her that for dessert every night that week. 🙂
    Today I just got home from a two day business trip, and my hubby and daughter were both exhausted and off to bed already, so it’s just me. So I made cookies…for me… unheard of! And it was awesome! =) Thanks for the recipe!

    Just made these in the microwave… good…very crumbly. I ended up using them to top yogurt rather than eat as a cookie. I’ll have to not be lazy and use the oven next time because anything peanut butter and healthy is a win-win

    I just made these and the dough was delicious!! However, they tasted a little too unsweet/dry once I baked them – any suggestions? I used syrup instead of sugar – I only had light syrup on hand so maybe it needs to be pure maple?

    Wonderful! I microwaved it in the bowl that I mixed it in for about 25 seconds on high. It was super soft and crumbly, almost as good as the peanut butter cookies I usually make 🙂

    Just made myself one of these. I didn’t have applesauce or a banana so I did 2 tbs peanut butter and also put in some chocolate chips. I put it in a mug and microwaved for 40 seconds. Its a slightly crumbly consistency but I think that’s due to not having the applesauce. Still tastes great though!

    I have myself, my hubby and 3 little girls. Luckily my husband will eat just about anything I make. My little girls are more of a challenge. But over the last 4 months I’ve made a huge transition to more healthy eating/cooking, etc. We’re not vegan or vegetarian but we recognize the health benefits in meat/animal free cooking. Plus, it’s all about taste and sometimes those recipes do just taste better!

    This morning I made your apple pie pancakes, x4 for the 5 of us. I used half spelt and half AP flour. I cut the sweetener in half, used almond/coconut unsweetened milk, and added egg whites for extra protein. They were awesome! My hubby had already eaten breakfast but he still ate three of them! And I can’t wait to have one heated with a little vanilla ice cream on it later! I really enjoy your site, because I have a TOTAL sweet tooth and I’m constantly looking for new ways to incorporate my sweet tooth with my love of healthy eating.

    🙂 YUM! I tweaked the recipe a bit by using 3/4T flour, 1T of pb, and a flax egg. Then, the cookie dough was nuked for 20 seconds. The result: a REALLY good cookie! XD Kinda crumbly, but after letting it sit for 2 min (or so!) it toughened out a lil. 🙂

I am the type of person who would devour an entire batch of cookies in a weekend because I have no will-power. I also love that all your recipes are vegan. I subbed the applesauce for egg replacer. I love that all your recipes include simple ingredients that you can find in the typical pantry.

    I tried this recipe (twice) this week — the cookies came out great!

    But I have a couple of additional thoughts you might want to consider adding:
    – I added an extra tablespoon of PB & it worked great
    – if you don’t use agave and the like, and use sugar instead (per your suggestion), the recipe might need a little water to wet the batter
    – For brown sugar, you can just double the amount of sugar and add a 1/2tsp of molasses
    – I had no apple sauce, so instead I mashed some banana. Worked great!

    Yum! I made these tonight, subbing almond butter (fresh ground from Whole Foods). They were delicious! For sweetener I used 3/4 T turbinado and 3/4 T brown sugar and, as suggested, about 2 t applesauce. I’m sure I speak for many of us when I say “thank you” for all the work that goes into creating and sharing your recipes. Particularly the single-lady ones……. much safer than the old 2-dozen recipes – LOL.

    I have been craving a peanut butter cookie since the day I went sweetener free and I just made this recipe as an experiment. I subbed 1.5 Tbsp homemade date paste for the sweeteners and used 1 tsp water instead of applesauce. It was a total success! The perfect peanut butter cookie, completely sweetener free!

    Could you use self-rising flour and skip measuring out the salt and baking soda? I’ve used it for beer bread and it works great. (Not as healthy as ww, but I hate measuring and I’ll take every shortcut I can find).

    Hello, I tried the PB cookies for one. I did mine in a small dessert bowl in the microwave. It was moist, like a cake rather than crispy like a cookie. I also used almond flour and barley malt. I would suggest another sweetener that resembles brown sugar as the flavor is better. Barley Malt didn’t do it. Thank you!

    Just made these- so good! I didn’t have apple sauce so I used greek yoghurt and used 1 tbsp of oats with 1 tbsp of whole wheat flour 🙂 They were a bit too sweet for my test with the maple syrup so next time I’ll use less of that and more of the yoghurt, but other than that they were amazing. Hard to believe with that with those healthy ingredients I’d get a cookie which didn’t taste healthy at all! They tasted just like the peanut butter cookies I had made from a cake mix years ago

    Just made these tonight to have with The Perfect Hot Chocolate. Love them! I may add extra peanut butter next time or maybe use a different kind for more pb flavor. I used Earth Balance creamy peanut butter with flaxseed. Made them with agave so they were cakey but that’s good as it made the 2 good size cookies very filling. So happy I found your blog!

    THIS RECIPE SERIOUSLY HIT THE SPOT! I used whole wheat flour, greek yogurt (instead of applesauce), and used my toaster oven. It was DELISH. Super soft (but maybe that’s because I left it in for too short a time) and peanut buttery, although I might add more next time. Definitely will make again and add in those chocolate chips!

    I tried the peanut butter cookies both ways. The microwave I used the senor setting and I found that the cookies was dry in the centre. the oven cookie was much nicer.

I am a single woman with a huge sweet tooth, so the only way I can really handle desserts is to make them in single servings.     I made these cookies tonight, and let me tell you, they were amazing! They were super light and in my opinion, tasted waaay better than the heavy store bought kind. The recipe made two fairly large cookies and they were so good I had to eat both of them!

    I love the idea of a single serving cookie. They turned out great. 3 things though.
    1. I had to bake for 18 minutes. They were not done at 10.
    2. I used egg white instead of applesauce, because I didn’t have apple sauce.
    3. I didn’t like the flavor of maple syrup in a peanut butter cookie. Next time I will use just brown sugar.

    I didn’t see any posts that addressed the possibility of zapping the cookies in the microwave so I thought I would add that I tried it and it worked great for me. It took 45 seconds in mine (not sure how many watts- sorry) for one big cookie, so you may need to adjust the time if you make multiple smaller cookies.

    I stumbled upon your blog when I was googling healthy desserts for 1:) I decided to make Pb cookies but lo behold,I didn’t have Apple sauce.instead I made with ww flour & subbed yogurt & to my surprise it turned out exactly the same way shown in your pics & tasted good too

    Just tried this recipe this morning. I had Smart Balance Crunchy peanut butter in the house and thought it would be great with the peanut bits in there. I also used regular sugar and brown sugar combo. I like a cookie on the chewy side.
    Tried one just now still slightly warm-O M G!!! Absolutely delicious! I was skeptical but the dough tasted really good! I doubled the single lady recipe just in case they turned out really good, and now I am so glad. Will always try to have peanut butter and unsweetened applesauce in the house now! I am going to try the maple sugar version next to compare. SO GOOD!!!! Thanks Katie!

    So I doubled the recipe and made them along with dinner as a surprise for my family! However… they accidentally came out looking a little… toasted instead of the beautiful all over 1 color yours did. We’ve made the regular not-so-healthy PB cookies before and I just wanted to do something nice :/ I ended up scrapping the first batch and made another while the fam was finishing up eating dinner. I do recommend making them closer to eating time so they are nice, warm, oh-so soft… *drools*

    Omg freaking amazing!! I don’t know what or how it happened but I doubled the recipe and ended up with 20 Cookies!!! ??? But they were amazing!!! I subbed the egg for 2 teaspoons of Flaxseed Eggs and they came out amazing. Still don’t know how I ended up with 20 Cookies but I’m not complaining here. They got eaten up quickly too….. don’t judge me! ?

    I just made these and it was perfect to satisfy my sweets craving since my husband is crazy and doesn’t care for sweets. I used oil instead of applesauce because I had all the other ingredients and didn’t want to make a trip to the store just for applesauce. I loved it without the applesauce but will have to try again when I buy applesauce so I can compare. Thank so much for sharing this recipe!
