Holy Coconuts! (Artisana Nut Butter)

It’s Artisana Coconut Butter time!

Considering my love of Cacao Bliss, and homemade Artisana Cacao Bliss, it’s hard to believe I’ve fallen even more in love with their plain coconut butter.

Seriously, this stuff is like eating shortbread!! But unlike shortbread, Artisana Coconut Butter is 100% raw and organic, with healthy fats and no added sugar. The only ingredient is coconut. Buttery, melty, and oh-so versatile. My numero uno favorite way to indulge is straight up, with nothing standing between me and my coconut-butter goodness. However, if I have to invite other guests to the party, here are some good ones:

First up, we have the easiest-ever Raw Macaroons. I have a friend who said she’d give me her first-born child in exchange for a batch of these every now and then. Sadly for her, I declined. What would I do with a whiney, crying baby anyway? I’d much rather have my raw macaroons.

Artisana coconut butter is amazing icing. Use it on Raw Carrot Cake (above).
I adore slathering it on carrot cake pancakes and cupcakes!

And then there are always the Mounds Bar Pancakes.
Chocolate and coconut were meant to be together.

Simpler idea: the incredibly-creamy Coconut Banana Butter.
Coconut + bananas = heaven in a spoonful.

Other uses for Artisana Coconut Butter:

Turn into a melty frosting for healthy 24-Carrot Cake Cupcakes
.
Or…

  • Drizzle on butternut fries or spaghetti squash
  • Use in place of peanut butter in peanut-sauce recipes! (Thai coconut-sauce pasta, anyone?)
  • Mix into oatmeal (or blended grains)
  • Make coconut-butter cookies (recipe coming soon!!)
  • Blend in a smoothie, or spread on a banana or toast (Can I interest you in a coconut butter sammie?)
  • Use as a healthy “syrup” for Carrot Cake Pancakes.

Question of the Day:
Have you tried coconut butter? If so, what’s your favorite way to eat it? Are you as obsessed as I am, or do you not understand what the big deal is?

Like I said above, my favorite way to eat it is straight-up… like coconut fudge! But I don’t think I’ve yet found a single way of eating coconut butter that I don’t absolutely love.

I have tried making my own coconut butter in a food processor before and it was good as a melter into oatmeal because it gave it a nice and nutty taste. I honestly have never tried a bottle brand of it though, probably more tastier than mine would ever be! Haha! Mine was hard as a rock and I always had to pre-warm it just to get it out of the jar so I could use it! Worth it though :)

Wow I’d love to win this giveaway! Honestly, I have never tried cashew butter, coconut butter, pecan butter, peach butter (woahh sounds exotic =p), and actually NONE of these butters, except for peanut butter (gotta have my Dark Chocolate Dreams) and almond butter (love). But I love trying new things and these would be awesome to try out!

Thanks to you Katie I am hooked on Coconut butter! I didnt know of its existence until I stumbled upon your blog a few months ago. Ive always loved coconut and was so excited when I saw it that I went out to buy it right away. I eat it almost everyday!! I would love to win the coconut butter…plus all of the other products! I just recently bought a packet of the coconut butter and pecan butter. So delicious and had no idea that coconut butter would taste so yummy even though I love coconut flavors don’t know why it took me so long to try. And i think the carrot cake looks delic. Ive been eying it and hopefully with get the chance to make it when i visit home from college.

OH MY GOD. I just scored a jar of this stuff. PERFECTION! The best treat in the world is a spoonful of this straight up! I was searching for recipes and found this page… and then I just thought to myself, why mess with perfection??? I will however, perhaps try the coconut butter instead of peanut butter next time I see it in a recipe. I have a nice peanut butter chocolate chip cookie recipe that would be awesome! That is, if I have any left…
