One chocolatey spoonful, and even hardcore night owls will actually want to get out of bed in the morning for breakfast.
Baked oatmeal cakes are all over social media right now. If you have spent more than 30 seconds on instagram or tiktok in the past few months, you have probably seen them at least once or twice.

Single serving chocolate baked oatmeal
Today’s recipe is a single chocolate version of my Baked Oatmeal Recipe.
You can choose to blend the oats before baking so the results turn into an oatmeal mug cake. Or skip the blending step if you are in a rush or would prefer some texture to your baked oats.
I baked mine in a one cup ramekin, because I wanted to ensure the middle would stay undercooked and gooey.
If you want the oat cake to be cooked evenly instead, use a wide and shallow baking dish, such as a 7×5 pan, instead of a ramekin.

Recipe variations
Chocolate Lava Baked Oats: You have two options for the lava filling.
Either add up to three tablespoons of your favorite seed or nut butter (such as chocolate almond butter), or add a few squares of your favorite chocolate bar.
Protein Baked Oats: Feel free to substitute some or all of the cocoa powder in the recipe with chocolate protein powder.
Including the optional peanut butter or almond butter also ups the protein.
Chocolate Coffee Baked Oatmeal: Stir half a teaspoon of instant coffee into the batter before baking.
Or replace two tablespoons of the milk of choice with brewed espresso.
More Flavor Ideas: Add a fourth teaspoon of cinnamon or pure vanilla extract, a handful of shredded coconut or some mini chocolate chips, or stir in a few drops of pure peppermint or coconut or almond extract.

Chocolate Baked Oats
Ingredients
- 1/2 cup rolled oats
- 1 tbsp cocoa powder
- 1/4 tsp baking powder
- 1/8 tsp salt
- 1/2 cup milk of choice
- 1/4 cup yogurt or mashed banana or sweet potato puree
- 2 tbsp sweetener of choice
- optional lava filling (see above)
Instructions
- *I like the gooey center, but if you want it cooked evenly instead, use a wide and shallow baking dish (such as a 7×5) instead of a ramekin.If using an oven, preheat to 350 F. Stir all ingredients, blend if you wish, and pour 2/3 of the mixture into an oven-safe dish. Add the filling if using, then top with remaining mixture. (Watch the step-by-step recipe video above.) I did not blend, but I did weigh my old fashioned oats and used 1/2 cup oat milk and 1/4 cup plain Greek yogurt. I did microwave for over two minutes but all it did was boil over.
I just ended up with oatmeal soup lol. Flavor was good and once it cooled a bit it was almost like a reg bowl of oatmeal.
Next time I’ll try baking it and maybe blend a little.

Hmm, not bad…but when you could have your warm brownie, & bowl of (cinnamon-raisin-cream-pecan-coconut 😉 oatmeal separately, I would prefer eating my chocolate & oats that way.

Very tasty and will definitely make again, but nutrition facts are way off. It says 192 calories, but that isn’t possible. There are 155-165 calories in the oats alone, before adding cocoa (12-20 calories), banana/yogurt (40-60 calories), milk (40-60 calories), and sweetener (0-90 calories).

Hi Sarah, the numbers will vary depending on the specific ingredients you use, but the brands we used gave the numbers listed. For instance, Silk cashewmilk has just 25 calories for an entire cup. Hope that helps clarify!

I double batched this, thinking as the fool I am that I would split it in a half and have some for breakfast two days in a row. Well lemme tell you, that did not happen!
