How to make the best homemade strawberry pie recipe for dessert, with flaky pie crust and sweet strawberries packed into each delicious bite!

Everyone should have at least one easy summer dessert recipe in their repertoire, and this no bake strawberry pie is sure to quickly become a family favorite.
It is absolutely one of the easiest pies you will ever prepare!
The fancy berry pie is perfect for summer barbecues, Sunday brunch parties, the Fourth of July, or any time you find yourself with an abundance of fresh strawberries.
Just whisk your filling ingredients together, heat on the stove until thick, spread it into a crust, and wait as it magically firms up.

Do you use fresh or frozen strawberries?
Especially during strawberry season or if strawberries are on sale and appear vibrant red in color, I almost always go with fresh berries.
One and a half pounds of fresh strawberries equals a little under two pints.
You can often save money by purchasing frozen strawberries, which also work well in this recipe. Because you will be heating the berries, it is fine to skip a thawing step and measure them straight out of the bag.
Run out of strawberries? Change up the flavor to produce a delicious mixed berry pie by substituting blackberries, raspberries, cherries, peaches, or blueberries for some or all of the strawberries.

Ingredients for the dessert
To make strawberry pie from scratch, you need just four ingredients plus half a cup of water and a pinch of salt.
The ingredients include sliced strawberries, sugar or a sugar free sweetener, cornstarch or chia seeds, and a nine inch pie crust.
Unlike many other strawberry pie recipes, this one is made without Jell-O or red gelatin and calls for no Cool Whip, cream cheese, or heavy cream.
There are also no eggs, butter, or dairy in the recipe. Simply choose a plant based crust option to create a vegan strawberry pie or a store bought or homemade gluten free crust for a gluten free strawberry pie.
To make a low carb and keto strawberry pie with no sugar added, prepare an almond flour crust, like the one I use for this Keto Cheesecake. Go with your favorite sugar substitute, such as xylitol, allulose, or erythritol.
Three tablespoons of chia seeds may be swapped for the cornstarch. I have not experimented with arrowroot powder here.
How to make strawberry pie
First, prepare your pie crust of choice.
To save time if baking the crust, you can prepare the berry filling while the crust is in the oven.
Add the sliced strawberries, sugar, salt, cornstarch, and water to a medium saucepan. Stir very well, and bring the contents of the pot to a boil.
Once boiling, turn the heat to a simmer. Stir frequently until the mixture reaches a similar consistency and texture to that of canned strawberry pie filling.
Remove the saucepan from the heat. Transfer the filling to the prepared crust, and use a spatula to spread it evenly into the pastry shell.
Let the pie cool, then carefully move it to the refrigerator. Chill uncovered for at least six hours or overnight, during which time the pie will firm up considerably.
Baking tips and serving suggestions
This recipe is wonderful served hot or cold.
When you are ready to enjoy the dessert, cut the pie into slices with a sharp knife. Use a cake or pie server to transfer each slice onto a small plate.
Top with whipped cream or Coconut Whipped Cream.
Or serve slices of strawberry pie plain or topped with a scoop of coconut milk ice cream, vanilla Greek yogurt, or Homemade Frozen Yogurt.
Strawberries are highly perishable, so it is best to refrigerate leftovers in a covered container for up to four days.
If you wish to transport the pie in a car to a party or event, it should stay fine in a well insulated cooler for a few hours.
Although you can technically freeze fruit pies, it changes the texture of both the crust and filling once thawed. So I do not recommend freezing.
Strawberry pie crust recipes
Feel free to use almost any single pie crust that fits a round nine inch pan.
For an easy and fast dessert, buy a premade frozen shortbread crust or pastry dough. Or pick up a shelf stable graham cracker pie crust at the grocery store.
If you are up to the task, prepare your own homemade pastry crust, chocolate cookie crust, or even a pretzel crust to create a strawberry pretzel pie.
I was in a rush so bought a frozen pie crust for this recipe. I let it thaw before poking holes in the bottom and prebaking.
When I have more time, below is my go-to favorite pie crust from scratch.
Combine 1 1/2 cups all purpose flour with 1/4 teaspoon salt and 2 teaspoons sugar. Stir in 1/4 cup of canola or vegetable oil to form small crumbs.
Add 2 tablespoons cold water and form the dough into a ball. Slowly add more water if the dough is too dry. Refrigerate to cool.
Sprinkle flour over a clean surface or a sheet of wax or parchment paper. Press a second sheet of parchment on top of the ball. Use a rolling pin to roll the dough out, then remove and discard the parchment. Press the crust into a pie pan.
Preheat the oven to 400 degrees Fahrenheit. Poke holes in the bottom of the crust, or use pie weights or dry beans. Bake the crust for fourteen minutes or until golden.
*For a crustless option, skip the crust entirely. Instead, use the homemade strawberry filling to top a Vegan Cheesecake, Chocolate Mug Cake, or Applesauce Cake.
Measuring in grams
If you prefer to use a food scale to ensure accurate measurements and consistent results, here are the amounts in grams.
Measure out 690 grams of sliced strawberries, 120 grams of water, 70 grams of sugar, and 32 grams of cornstarch. Also remember to include the salt.

Strawberry Pie
Ingredients
- 5 cups sliced strawberries (1 1/2 lb or 690g after slicing)
- 1/2 cup water
- 1/3 cup sugar or granulated sweetener of choice
- 1/4 tsp salt
- 4 tbsp cornstarch or 3 tbsp chia seeds
- 9 inch pie crust (see options above, including keto and vegan)
- optional additional strawberries for decoration
Instructions
- To make an easy strawberry pie, first prepare your crust, then set it aside. Wash and slice the berries, discarding the stems. Combine all filling ingredients in a medium pot. Stir very well, and bring to a boil. Once boiling, turn the heat down to low. Stir frequently until thick. Spread the strawberry filling into the prepared crust. Chill in the refrigerator a few hours or overnight to set. Decorate by arranging additional sliced strawberries on top if you wish. Slice, and enjoy. I was short on strawberries so should have used less flour. Next time more berries or less flour. Otherwise this is delicious in a short bread crust with homemade whipped cream! 😋
