Key ingredients
You need the following: almond flour, sweetener, salt, baking soda, pure vanilla extract, water, coconut oil or butter, and regular or mini sugar free chocolate chips.
The cookies are naturally egg free and gluten free. They can also be dairy free.
Low carb almond flour (or flourless almond meal) gives these cookies a delicious chewy texture. For the best results, I do not recommend swapping it for any other flour, such as coconut flour or whole wheat flour.
The recipe uses melted butter or coconut oil. For sugar free vegan cookies, use the oil option or buy a plant based butter.
What is the best sugar free sweetener for cookies?
To achieve soft, fluffy cookies, this recipe calls for powdered erythritol, not granulated. Powdered xylitol, allulose, or a monk fruit blend work as well.
If you like the taste of stevia, feel free to substitute it here. Stevia is much sweeter than other sweeteners, so you will need less. Most packages will have a sweetness equivalent chart that tells you how much stevia to use in place of erythritol or sugar.
I have not tried Splenda or any other artificial sweeteners in the baked goods. If you experiment with alternative sweeteners, be sure to report back with results.
And for those who will ask, yes you can use real powdered sugar. Of course they will no longer be sugar free.
Note: Many sugar free sweeteners or sugar alcohols are not suitable for four legged friends. Chocolate is also not pet friendly. In general, it is a good idea to consult with a vet before feeding human food to your dog, cat, or another pet.
Sugar free chocolate chips
If you want true cookies with no sugar added, either buy no sugar chocolate chips at the store or make your own Sugar Free Chocolate Chips.
Brands that offer chocolate chips without sugar include Hershey’s, Russell Stover, Safeway, Lakanto, and Lily’s stevia sweetened dark chocolate chips. I like the last two options best because they are also dairy free and vegan.
You can substitute sugar free peanut butter chips for some or all of the chocolate. Either make your own keto Peanut Butter Chips or look for a sugar free brand, such as ChocZero peanut butter chips, which are vegan and sweetened with monk fruit.

Can diabetics eat these cookies?
Erythritol and xylitol are two sweeteners many diabetics often use instead of sugar, because these sugar alcohols do not spike blood sugar as much as regular sugar does.
They are generally considered to be safe, and diabetic readers often leave comments telling me they enjoy my recipes. (This makes me so happy. Thank you!!)
However, everyone has different nutritional needs. So it is always a good idea to check with a medical professional.

How to make cookies without sugar
- Preheat the oven to 325 degrees Fahrenheit.
- In a large mixing bowl, stir all dry ingredients very well. Add the remaining ingredients and stir to form a sugar free cookie dough.
- Shape the dough into cookies. I like to use a cookie scoop or my hands to make cookie dough balls and then flatten each ball with a spoon.
- Place the unbaked cookies on a baking tray.
- Bake on the oven’s center rack for twelve minutes. The cookies will look underdone when you remove them from the oven. This is what you want, because they continue to firm up as they cool.
- Let cool completely before handling, then serve and enjoy hot or cold.
Cookie storage tips
If you do not wish to make cookies right away, roll the sugar free cookie dough into balls and freeze in an airtight container for up to two months. When ready to bake, simply add an additional three minutes to the baking time.
For soft cookies, store leftovers in an airtight plastic container. If you have any sliced bread on hand, adding a piece of bread helps keep cookies soft.
For crispier cookies, store in a covered glass dish or Pyrex container.
Once baked, the sugar free cookies will stay fresh for up to four days.

Ingredients
- 2 cups almond flour (240g) (or make nut free Healthy Chocolate Chip Cookies)
- 1/3 cup sugar free chocolate chips (55g) (see above for brand options)
- 1/3 cup powdered erythritol or powdered xylitol (35g) (or stevia to taste)
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1/4 cup butter or coconut oil, melted (48g)
- 1 tsp pure vanilla extract (5g)
- 2 tbsp water (30g)
Instructions
- 1. Preheat the oven to 325° F.
- 2. In a mixing bowl, stir dry ingredients well. Then add wet and stir to achieve a cookie dough texture.
- 3. Form balls or cookie shapes. (They do not flatten on their own during baking.)
- 4. Place on a nonstick or greased cookie tray.
- 5. Bake 12 minutes on the oven's center rack, then let fully cool before handling.
