You are an absolute genius. I just told my husband, “Honey! I found a ‘freak’ site for cookies and cupcakes! I can make my own serving, even in the microwave!!” (I have food allergies….he does not..)

Well when we got out and I can’t eat pizza or pasta..mashed potatoes…or any of that gooey, cheesy, buttery, chocolatey stuff I got tired of explaining my allergies to people. So, we say “oh, she’s a freak, she can’t eat it.” Lol!

So I was trying to make your Fudge Babies and I sent my friend to the store for the ingredients. She came back with prunes instead of dates! Do you have any recipes I could use to make the prunes into something delicious?

Hmmm.. I don’t! I’ve only eaten them plain before… but maybe you could try them in one of the fudge baby flavor recipes? If you do, let me know how it turns out! I know a few other commenters have subbed raisins for the dates, but I’ve never tried it with anything other than dates!

So I tried the fudge baby recipe and they turned out well! Compared to the date recipe, they definitely have a more fruity flavor rather than chocolate flavor of the fudge babies, but I bet that could be changed by tweaking the recipe. The consistency is also about the same. My magic bullet didn’t really enjoy the workout I put it through though…

Thanks for all the recipes :) They make eating healthy not get in the way of a college kid’s chocolate cravings.

I know a lot of my readers count calories, and so I do try to include calorie information in many of my recipes. Especially with my newer recipes, there will often be a link at the end of the actual recipe that leads to the nutrition info. :)

I saw a pic of a dessert on a friends fb page that looked amazing…she credited you so I had to find you!! These recipes look amazing…can’t wait to try them!! Been big into pancakes lately and my kids have LOVED them…switching slowly but surely to all-clean!! I was worried they wouldn’t like things…they love it, and I know they will love your pancake recipes!!! Also, concerning nutrition info…people can actually do that on their own too. :) I use myfitnesspal for a food journal, and they have a section where you can “plug in” recipes and it will tell you the nutrition info and even keep it logged in your personal journal for future reference… And it’s free so anyone could just figure the nutrition info out on their own. Like I said…I CAN’T wait o dive in here!! You have an exceptional talent!!

Hi Katie
Just found your blog a few days ago and LOVE it. Tried the Vegan Cool Whip and it is amazing. can you believe I made it on Wednesday and there is still some in the fridge? Craziness. I did put some on my oatmeal this morning – so delish.

Just wondering if you’ve ever used almonds for Fudge Babies – my kids are allergic to nuts, but I have safe almonds that they can have. I may just give it a whirl tonight! So sad that my Magic Bullet bit the bullet yesterday – actually it still works, I just CANNOT remove the cup from the base (with smoothie from breakfast yesterday still in it – yuck). Good for me, they’re sending me a new one. Good for me that I have another blender to try making the Fudge Babies (you can make them in a blender, right? No food processor here).

Sorry to ramble on….

Yes yes you can use almonds! I reeeeaally like almonds in the Cookie Dough Baby variation. I might even like them better than the cashews called for in that variation :) .
Also, the Samoas Babies are nut free!

And lol about the bullet! Mine keep breaking the little side tabs, so I have to use a knife to press down to get it to blend!

I do try to keep it updated! But I’ll only update the page like once a week. So at the moment there might be just a *few* things missing. (Actually, at the moment, I think the macaroons are the only things missing.) It is very overwhelming trying to keep it up-to-date, and I wish I could think of an easier way. But yes, they’re all here :) .

One of my best friends found your site and shared it on pinterest with me and I have been telling every person I know about your wonderful recipes! I happen to be a vegan, but my friend that found you isn’t. She tries to limit her sugar (although has a serious sweet tooth). Other friends are trying to lose weight and your single servings are a great means of portion control. Desserts made from beans…brilliant! Your recipes have a wide appeal because everyone likes to enjoy a delicious treat they can feel good about. I love your pumpkin cereal and your one minute cake…I will never again feel the need to go buy a $2 chocolate vegan cupcake from the restaurant in town when I can make them at home in a minute using spelt! Thank you for sharing your yummy recipes. If you ever put a cookbook together I will be the first to purchase it!

Hey Crystal!

I have a tester recipe, and if you’d like to try it, I would LOVE some feedback!! Negative or positive feedback :) . I was a cheesecake LOVER before going vegan, and so I’m working on trying to get a healthier version *just right*.

Vegan Cheesecake

1/4 package mori-nu firm (or lite firm) tofu, drained
1 tsp pure vanilla extract
1 nunaturals stevia packet, or 2 T sugar
1/4 tsp salt
1/2 tablespoon lemon juice (or 1 T for a lemon-flavored cheesecake)
8 oz (1 cup) nondairy cream cheese (such as Tofutti non-hydrogenated)
3 tablespoons agave
3/4 tablespoon arrowroot (or cornstarch)
2 tablespoons milk of choice (I used almond breeze)

Blend all ingredients very well, and pour into a prepared graham cracker crust. Bake at 350 for 45 minutes, then DO NOT EAT YET! Put the cheesecake–uncovered–in the fridge for at least 8 hours before eating.

UPDATE! There were goods and bads to the turn-out of this recipe. I have a confession though-I had to use neufchatel cheese as I could not find the vegan cream cheese anywhere locally ( I live in a very small South Texas town where you can’t even get coconut/almond milk in the local grocery stores). So the cheesecake ended up having a cracked appearance on top, kind of like the Sahara desert if you will, and I was a bit worried it would be dry. I ended up throwing a cup or so of blueberries, a packet of stevia, some lemon juice, and a few teaspoons of agave nectar together on the stove and simmered it for a few minutes. I let that cool a bit, and put on top of the cheesecake (it didn’t really rise much so there was plenty of room for toppings). My husband and I tested it out last night after the 8 hours in the fridge, and it really did taste like a regular lemon cheesecake with blueberries! It was creamy, not too sweet but sweet enough, and delicious! I will be making it again…hopefully I can find the vegan cream cheese in the ‘city’, lol. I think the next time I will try it turtle style, with chocolate, nuts, and caramel on top. Or maybe add your vegan cool whip recipe on top to cover the cracks after baking?

I am doing Weight Watchers…so how do you think I might count all these goodies? I got on your web-site and found the nutritional count for the Blondies and used that for the Deep Dish Cookie Pie. I did figure those points, but you didnt have the fiber count…Anyway just want to thank you, I am making the Deep Dish Cookie Pie right now and it tasted delicious as I was licking the bowl and right now it smell wonderful..Sure hope this will be an alternative to all those “Weight Watchers” deserts. Am so looking forward to these recipes.

You are such a sweetie…thank you for answering me so quickly…and I did make that “Deep Dish Cookie Pie” and I loved it. I ate it for breakfast this morning, put it in the toaster oven on toast and it made it crunchy on the outside and to me it was delish…thanks so much.
