Hi Katie: I’m planning to make your sweet potato salad for Christmas, and would like to serve the salad warm. If I prepped it in advance, do you think it would work to heat the salad in the microwave or would the salad get too mushy that way?

I’ve heated leftovers in the microwave and never had a problem! I haven’t served it to guests that way but I like it so don’t see why they wouldn’t 😉
